Steps:
- Mix well. Grind again. This mixture will be too fine to form into patties. Force mixture into casings and tie in 4-5 inch lengths. Bake or saute.
- BANGER SEASONING.
- 5 tsp Ground white pepper.
- 2 1/2 tsp Mace.
- 2 1/4 tsp Salt.
- 2 tsp Ground ginger.
- 2 tsp Rubbed sage.
- 1/2 tsp Nutmeg.

VENISON TENDERLOIN BITES
My husband loves venison, and I'm always trying to come up with creative things to do with it. This is by far one of his favorite dishes.

- Preheat the oven's broiler and set the oven rack at about 6 inches from the heat source. Line a baking sheet with aluminum foil.
- Warm the olive oil and garlic in a small saucepan over low heat for 5 minutes to infuse the flavor of the garlic into the olive oil. Place the bread crumbs into a mixing bowl, and pour the oil mixture overtop. Stir the parsley, and Parmesan cheese into the bread crumb mixture until evenly blended. Press the venison cubes into the bread crumb mixture to coat, and place onto the prepared baking sheet. Make sure the venison pieces are not touching.
- Broil in the oven until the bread crumbs are golden, and the venison has turned from red to pink in the center, or to your desired degree of doneness, about 6 minutes. Turn the cubes occasionally as they cook.
- Divide the arugula onto 4 dinner plates, and top with the broiled venison. Squeeze a quarter of a lemon over each plate to serve.

- If you’re cooking your burgers on a grill, go ahead and preheat the grill to medium-high (450-500F). If you’re cooking on a stovetop, get out a large pan (preferably cast-iron) and set it on the appropriate burner. You’re going to want to heat the pan for 3-5 minutes before cooking, so keep that in mind.
- Mix together the venison, balsamic, Worchestershire, garlic powder, onion powder, salt, and pepper. I like to use a fork and my hands. It’s good to use a fork to “fluff” and break up the meat, you don’t want it too packed.
- Right before you form the patties, grate in about 2 tablespoons of freezing cold butter (I use a regular, old cheese grater). Mix again quickly just to distribute, but not so much that the butter melts.

- Freeze all your grinder parts for at least 20 minutes before you begin (grinding plates, blades, tray and the bowl that will receive the ground meat). Prepare your hog casings by soaking in some cold water to remove the salt. *see package instructions. I replaced the water three times. Be careful not to pour your hog casings out with the salty water, they are very slippery.
- Make sure your meat is very cold. You can freeze this for about 20 minutes before starting as well. Cut chilled meat into large cubes (about 1-2 inches/2.5-5cm) making sure they will fit through the feeding tube on the meat grinder.
- Grind both venison and pork fat together using the course grind plate. You may want to chill it again for 20 minutes, then grind again on finer grind plate. If needed, chill again for 20-30 minutes before next step.
- Mix the prepared meat with all of the remaining ingredients except the hog casings. I use my hands just like when I make meatloaf. And yes, you may need to chill it again. Everything needs to be kept cold. Not frozen, but cold.
