VENEZUELAN HEN CHUPE SOUP
This is the perfect dish to warm up during cold days and it's also delicious and very easy to make. You probably know the original chupe recipe from Peru, but in Venezuela this dish made with hen is very popular, especially in the Andean region. We have our own family recipe, and I have adapted it and made it a little modern so it can be more practical for busy days. Make it and tell us how it turns out!

Steps:
- In a large pot, add chicken stock, onion and garlic. Bring to a boil, then add potatoes and pieces of fresh corn. Cover and let cook for 15 minutes or until the potatoes are soft.
- Add cans of corn; cover and let cook for another 10 minutes.
- Add hen pieces, cilantro and let cook for 3-5 minutes. Adjust salt seasoning.
- Lower heat to low and add table cream, stirring continuously until it's mixed in well. Turn off the heat. Let rest for 5 minutes.
- Serve warm with pieces of queso fresco and cilantro.

VENEZUELAN BLACK BEAN SOUP
Simple, fast, and wonderful hearty black bean soup. Has great robust flavor and is a meal in itself. I made this for a dinner party and my guests loved it. I had to run to the computer, type it up, and hand out copies! Garnish with sour cream and Cheddar cheese.

Steps:
- Heat oil in a large saucepan over medium-low heat. Cook and stir onion, leek, and garlic in the hot oil until softened, 5 to 7 minutes. Add water, black beans, brown sugar, oregano, cumin, bay leaves, salt, and pepper. Cover and simmer until flavors combine, about 20 minutes.
- Discard bay leaves from the soup. Serve with croutons.

- Add hind shank, 1 small onion halved, bell pepper, 4 whole garlic cloves and stock to a large stockpot. Cook for 45-60 minutes until the meat is fork-tender.
- Add diced onion, 2 minced garlic, mini sweet peppers, sliced leeks (light green part), scallions, yucca and corn; Mix and simmer covered over medium heat for 5- 8 minutes, until the yucca is starting to soften.
- Add yautia, white yam, and butternut squash. Mix to combine. Simmer covered over medium heat for 5 – 6 minutes, until all the root vegetables are tender. NOTE: Do not cook too much or they will fall apart.
