3 Tbsp. olive oil, divided
8 slices French bread
1 small onion, finely chopped
1 carrot, finely chopped
1 stalk celery, finely chopped
2 cans (14.5 oz. each) fat-free reduced-sodium chicken broth
1 cup milk
8 oz. VELVEETA, cut into 1/2-inch cubes
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1/2 tsp. dry mustard
1/8 tsp. ground white pepper
1/2 cup finely shredded CRACKER BARREL Extra Sharp Cheddar Cheese

Steps:

  • Heat oven to 350ºF.
  • Brush 2 Tbsp. oil evenly onto both sides of bread slices; place on baking sheet. Bake 4 to 5 min. on each side or until golden brown on both sides.
  • Meanwhile, heat remaining oil in large saucepan on medium heat. Add vegetables; cook 10 min. or until crisp-tender, stirring occasionally. Stir in broth and milk. Bring to boil. Gradually stir in VELVEETA, cooking on medium-low heat after each addition until melted. Add cream cheese; cook until melted, beating frequently with whisk. Stir in mustard and pepper.
  • Heat broiler. Sprinkle toast slices with cheddar; broil 2 to 3 min. or until bubbly. Serve with soup.

1/4 pound medium raw shrimp, deveined and coarsely chopped
6 cups chicken broth
1/2 cup diced cooked ham
1/4 cup coarsely chopped water chestnuts
1 can (16 ounce) cream style corn
3 tablespoons cornstarch dissolved in 1/3 cup water
2 egg whites, lightly beaten
1 green onion, thinly sliced
2 teaspoons sesame oil
1/8 teaspoon white pepper
Salt to taste

Steps:

  • Place broth in a large pot and bring to a boil. Add shrimp, ham, water, chestnuts, and corn. Reduce heat to medium and simmer, stirring frequently. Add cornstarch solution and cook, stirring, until soup boils and thickens slightly. Turn off heat. Add egg whites, stirring until they form long threads.
  • Stir in green onion, sesame oil, pepper and salt, to taste.

1/4 cup butter
1/4 cup minced onion
1/4 cup all-purpose flour
4 cups milk
salt
1 cup grated cheddar cheese or 1 cup Velveeta cheese
2 cups vegetables, cut up

Steps:

  • Melt the butter in the saucepan over medium high heat.
  • Saute the onion in the butter until the onion is clear.
  • Remove from heat, and add the flour, milk and salt.
  • Return to the heat, and cook until the mixture thickens, stirring constantly.
  • Add cheese and stir until melted.
  • Add the vegetable pieces and simmer approximately 30 minutes.
  • You can use whatever vegetables you or your family likes. They can be fresh or frozen. Broccoli holds up very nicely. Tomatoes taste good as well.
  • The salt is to your taste, use more or less depending on the saltiness of the butter or cheese.

8 slices white bread
6 ounces Velveeta cheese, sliced
8 teaspoons mayonnaise

Steps:

  • Top four of the bread slices with cheese slices. Cover with remaining bread slices.
  • Spread outside of sandwich evenly with mayonnaise.
  • Cook in skillet on medium heat until lightly browned on both sides.
  • Cut each sandwich on diagonal from corner to corner. Serve with dill pickle slices and chips.
