CREAMY HASH BROWN CASSEROLE



Creamy Hash Brown Casserole image

This versatile side dish is so good with grilled steak, and is delicious with other meats as well. A creamy cheese sauce and crunchy topping make this potato casserole popular for family dinners and potlucks. -Teresa Stutzman, Adair, Oklahoma

Number Of Ingredients 9

1 package (32 oz.) frozen cubed hash brown potatoes, thawed
1 lb. Velveeta, cubed
2 cups sour cream
1 can (10 3/4 oz.) condensed cream of chicken soup, undiluted
3/4 cup butter, melted, divided
3 tablespoons chopped onion
1/4 teaspoon paprika
2 cups cornflakes, lightly crushed
Fresh savory, optional

Steps:

  • In a large bowl, combine the hash browns, cheese, sour cream, soup, 1/2 cup butter and onion. Spread into a greased 13x9-in. baking dish. Sprinkle with paprika. Combine cornflakes and remaining butter; sprinkle on top. Bake, covered, at 350° until heated through, 40-50 minutes. Uncover, bake until top is golden brown, 10 minutes longer. If desired, garnish with savory. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

1 lb velveeta cheese, cubed
2 c mayonnaise
2 lb frozen hash browns, defrosted about 15 minutes
1/2 lb bacon, cooked and crumbled

Steps:

  • 1. Preheat oven to 350º.
  • 2. Melt cheese in heavy pan over low heat, stirring.
  • 3. Add mayonnaise and potatoes to cheese and mix well.
  • 4. Put into a 9x13-inch baking pan and top with bacon.
  • 5. Bake, uncovered for 35-40 minutes until bubbly and golden brown.

8 slices OSCAR MAYER Bacon, chopped
2 cups ORE-IDA Shredded Hash Brown Potatoes, thawed
1/2 lb. fresh mushrooms, sliced
1 each green and red pepper, chopped
1 small onion, chopped
3 (4 oz. each) VELVEETA Fresh Packs, cut into 1/2-inch cubes
12 eggs
1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Heat oven to 350ºF.
  • Cook bacon in large skillet on medium heat 10 min. or until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 2 Tbsp. drippings from skillet.
  • Add potatoes, mushrooms, peppers and onions to reserved drippings in skillet; cook 10 min. or until peppers and onions are crisp-tender, stirring occasionally. Stir in VELVEETA. Spoon into 13x9-inch baking dish sprayed with cooking spray.
  • Whisk eggs and sour cream in medium bowl until blended; stir in bacon. Pour over vegetable mixture.
  • Bake 40 min. or until center is set and casserole is heated through.
