Steps:
- HEAT oven to 350°F.
- BRING water to boil in medium saucepan on medium-high heat. Gradually stir in grits; cook on low heat 5 min., stirring occasionally. Remove from heat. Add butter, garlic and seasoning; stir until butter is completely melted and mixture is well blended.
- BEAT eggs in small bowl until blended. Add small amount of hot grits; mix well. Gradually add to remaining grits in pan, stirring constantly until blended.
- POUR into 8-inch square baking dish sprayed with cooking spray. Top with VELVEETA; press gently into grits with back of spoon until partially covered.
- BAKE 40 minute Let stand 10 minute before serving.
- For a Stronger Spice Flavor:.
- Substitute 1/2 teaspoons ground red pepper (cayenne) for the Cajun seasoning.

BAKED VELVEETA CHEESE GRITS
The complete casserole may be prepared and chilled for up to 8 hours, let stand at room temperature for about 25-30 minutes, then bake as directed.

Steps:
- Set oven to 350 degrees.
- Grease a 2-quart casserole dish.
- Bring water to a boil in a saucepan; add in the grits, cook stirring often for about 5 minutes or until thickened, remove from heat.
- Add in the cubed Velveeta cheese and butter; stir to combine until the cheese and butter has melted.
- Add in eggs; mix until combined.
- Season with salt, pepper and cayenne.
- Sprinkle Parmesan cheese on top (as much as desired).
- Bake for about 40 minutes or until lightly browned.
CREAMY GRITS
Steps:
- Bring the milk and water to a boil in a heavy-bottomed saucepan over medium heat. Stir in the salt. Slowly add the grits, stirring constantly. When the grits begin to thicken, turn the heat down to low and simmer for 30 to 40 minutes, stirring occasionally to prevent the grits from scorching. Add the butter and cream, stirring to incorporate thoroughly, and simmer for 5 minutes. Stir in the pepper. Serve the grits immediately or keep them warm, covered, in a double boiler over simmering water.
- Note: If the grits are too thick, stir in more cream or milk. Remember that grits solidify as they cool; they will get thicker once on the plates.

- Mix the milk, water, salt, garlic powder, cayenne pepper, and paprika in a large 6 quart sauce pot. Set over medium-high heat and bring to a boil.
- Once boiling, whisk in the grits, until there are no clumps. Lower the heat to medium-low. Cover and simmer for 12-20 minutes, (depending on the package instructions) stirring occasionally.
- Once the grits seem soft and thick, stir in the butter and shredded cheese. Taste, then season as needed.
- If the grits are thicker than desired, stir in another ¼ - ¾ cup water. They will continue to thicken as they cool.
