Steps:
- Cook and stir the chicken in a non-stick skillet on medium-high heat for 5 minutes or until chicken is cooked through.
- Stir in broth. Bring to a boil.
- Add rice, Velveeta cheese and broccoli; cover.
- Remove from heat. Let stand for 10 minutes.
- Stir until Velveeta cheese is completely melted and mixture is well blended.
VELVEETA CHEESY BROCCOLI AND CHICKEN CASSEROLE WITH RICE
Steps:
- Preheat your oven to 400 degrees.
- In a saucepan over medium heat, saute onions, mushrooms and garlic in olive oil and cook about five minutes.
- Add the chicken broth, cayenne pepper and salt and pepper and stir.
- Remove from heat and mix in rice, broccoli and chicken, and half of the cubed 2% Milk Velveeta.
- Pour into a 9x13 inch baking dish and top with remaining 2% Milk Velveeta.
- Bake at 400 degrees for 20 minutes.

Steps:
- Saute' onion and garlic in Pam or butter till wilted.
- Add chicken, cook and stir on medium high heat for about 2 minutes or until no longer pink.
- Stir in broth.
- Bring to boil.
- Stir in macaroni, reduce heat to medium low.
- Cover and simmer for about 10 minutes or until macaroni is tender.
- Add VELVETTA cheese and broccoli: stir until Velvetta is melted.
- Macaroni is likely to stick.
- It is recommended that during cooking time, stir and unstick pasta.
- If liquid is absorbed and macaroni is not tender, add a lil more water, stir, cover and cook for a few more minutes.
- Corn makes a good side for this dish.
BROCCOLI, RICE, CHEESE, AND CHICKEN CASSEROLE
This is a delicious twist to broccoli, rice, and cheese casserole, and is VERY easy to make. You can also cut this in half. I use the 1 can cream of mushroom soup when I make half. You can also leave out the onion. It just gives it a little added flavor, but is still very good without it.
