VEGGIE " FISH" BALLS

I needed to use some fresh leftover bread crumbs so I threw these ingredients together and the result is quite tasty! Fee free to improvise to your tastes!

1 1/2-2 cups breadcrumbs
1 medium zucchini, shredded
1/4 cup shredded onion
2 whole eggs
2 small cooked fish fillets, shredded
1/4 cup of fresh mint
1 tablespoon dried basil
salt
pepper
balsamic vinegar
soy sauce
texas pete hot sauce

Steps:

  • In a medium mixing bowl combine the breadcrumbs, eggs, fish, zucchini, onion, and spices and form palm-size balls from the mixture.
  • In a covered pan over medium heat, brown the balls in a small amount of olive oil. This should take 5-10 minutes depending on size.
  • For the dipping sauce, combine the three ingredients to taste.

1/4 cup chopped walnuts
1 cup cornmeal, cooked with water into a mush
1 cup mashed potatoes
1 egg
1 1/2 teaspoons salt
tartar sauce
2 tablespoons ketchup
1 tablespoon lemon juice
salt
paprika
1 tablespoon parsley
1 tablespoon olive
1 tablespoon green pepper
1 tablespoon green onion

Steps:

  • Form into balls and dip in 1 egg, beaten.
  • Roll in 1 cup dry bread crumbs.
  • Fry in 1/2 cup vegetable oil.
  • Serve with tartar sauce.

Terrifying! Really for educational purposes only. While it will turn out perfectly, it will give you the heebie jeebies that it works. It has eggs, and tastes like fish, making it a poor choice for many vegetarians.

Number Of Ingredients 7

2 cups watermelon, pureed
3 egg yolks
3 egg whites
1 teaspoon salt
1/2 teaspoon cream of tartar
2 tablespoons sugar
1 sheet sushi nori (optional)

Steps:

  • Beat egg yolks, then add 1/2 tsp salt and the pureed watermelon.
  • Put egg whites, sugar, cream of tartar, 1/2 tsp salt in a blender and blend until foamy and starting to get stiff.
  • Combine the two mixes, and pour into an oiled 8 inch square pan.
  • If you want you can add a sheet of sushi nori to the top, which helps keep it together.
  • Bake in a pre-heated 375 F oven until it is baked on top and starting to souffle, about 20 minutes.
  • Let it fall and cool and cut into quarters.
  • Serve with tartar sauce and a side of lemon.
  • If you are used to processed fish sticks you will marvel how it tastes just like fish.
