Steps:
- In a medium mixing bowl, add chickpeas and mash with potato masher until a chunky texture is reached.
- Add the red onion, red pepper, vegan mayo, Dijon mustard, garlic powder, onion powder, salt, pepper, and dill, and stir until well combined.
- Store chickpea salad in refrigerator for up to five days. To assemble sandwich, spread mixture onto bread and top with leafy greens of choice.
- Wrap in parchment paper and secure with rubber band.
- Enjoy!

- Pour chickpeas into a medium size mixing
- bowl and mash with a fork.
- Mix in celery, onion, mayonnaise (to taste), lemon juice, dill, salt and pepper to taste.

- Pat the chickpeas dry using kitchen paper. Combine the mayo, chutney, curry powder and lemon juice in a bowl. Season well.
- Tip in the raisins, onion and chickpeas and mix to combine. Spoon the filler into rolls or sandwich between bread slices with a few lettuce leaves. Will keep chilled for three days.

- In a medium bowl, mash all of the chickpeas with a potato masher until almost all of the beans are broken down. A few whole chickpeas left is ok.
- Add the rest of the ingredients, mix well. Taste and adjust the seasoning. If you'd like the chickpea salad to taste more like tuna salad, add kelp powder and/or Old Bay seasoning to taste.
- Toast bread slices (2 per sandwich). Spread as much chickpea salad as you'd like on the bottom slices. Spread avocado (if using) on the top slices. Add lettuce or spinach leaves on top of chickpea salad. Put both slices together to close the sandwich. Enjoy!
