CARIBBEAN CHICKEN PICADILLO IN TORTILLAS



Caribbean Chicken Picadillo in Tortillas image

This colorful & veggie loaded version of picadillo was inspired by the colors of the fresh vegetables sitting on my counter. There are as many versions of picadillo as there are chefs cooking in their homes. This one pleased my family with it's slight sweetness and the spicy complement of the topping. I hope it works for your family too. This recipe was created for RSC #8.

1 lb boneless skinless chicken breast, diced
olive oil, divided, as needed
1 cup onion, diced
1/2 cup bell pepper, diced
2 jalapenos, seeded and minced
1/2 cup butternut squash, diced
2 garlic cloves, minced
1 tablespoon cider vinegar
1 tablespoon cornstarch
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/2 cup raisins
1/4 cup dried coconut
1 cup diced tomatoes with juice, canned
1/2 teaspoon salt
1/2 cup water
8 (6 inch) flour tortillas
3 eggs
2 tablespoons water
1/4 teaspoon cayenne pepper
1/8 teaspoon nutmeg
1/2 cup sour cream
1/2 teaspoon curry powder, sweet or mild
1/8 teaspoon cayenne pepper
2 tablespoons fresh cilantro, minced

Steps:

  • Dice all vegetables and divide as follows; In one bowl place onions, garlic, bell peppers, jalapenos, & butternut squash. In second bowl place raisins, coconut, and tomatoes. Note; all vegetables and chicken should be similar in size to help the dish cook evenly.
  • In a small bowl stir together vinegar, cornstarch, cinnamon, & nutmeg.
  • Make Spicy Curry Dip. Mix all ingredients together and chill until ready to serve.
  • In large skillet place 1 T olive oil and heat pan. Add chicken pieces and stir until done.
  • Add bowl of vegetables containing onions, garlic, jalapenos, & butternut squash. Stir in & cook until vegetables are tender.
  • Add the vinegar/ cornstarch/ spice mixture & stir until all ingredients are well coated.
  • Add bowl of ingredients containing raisins, coconut, & tomatoes.
  • Add water & salt. Cook until thickened. Remove from heat.
  • In bowl beat together eggs, 2 T water, cayenne & a generous grating of nutmeg. Pour into a shallow bowl that will accommodate the flour tortillas for soaking. Add 2 of the flour tortillas and turn to coat with egg mixture. Let them rest in bowl. As you use one replace it with a new tortilla in the egg mixture.
  • Heat large skillet and add 1T oil. (Note; I used an electric skillet so I could do 2 at a time.) Place egg coated tortilla in pan and cook on one side until lightly browned. Turn over and add ½ cup of the meat & vegetable mixture to center of tortilla in a lengthwise pattern. Fold two sides in and press down with spatula. Cook until bottom is golden brown, then turn to do the other side. Remove to rectangular pan & place in warm oven while you complete the rest of the tortillas. Replace the 1 T oil as needed. I found I needed very little using a nonstick pan.
  • Serve with a dollop of the curry dip on top. Garnish with a sprinkling of cilantro leaves on top of the dip for presentation.

PICADILLO GROUND BEEF QUESADILLAS

Picadillo is popular Latin comfort food, and it's typically served with rice. But it's equally delicious served as a quesadilla, and it's a great way to use leftover picadillo. Feel free to garnish with some pico de gallo, pickled hot peppers, cilantro, more cheese, or with your favorite toppings.

1 medium potato, peeled and diced
1 teaspoon vegetable oil
1 pound lean ground beef
½ cup diced red bell pepper
½ cup diced onion
2 cloves garlic, minced
1 (8 ounce) can tomato sauce
¼ cup water
2 tablespoons olive brine
1 teaspoon ground cumin
1 teaspoon dried oregano
salt and ground black pepper to taste
½ cup sliced pimento-stuffed green olives
3 tablespoons raisins
cooking spray
12 (8 inch) flour tortillas
1 cup shredded Mexican cheese blend

Steps:

  • Place diced potato in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 8 to 10 minutes. Drain.
  • Heat oil in a large skillet over medium heat. Add cooked potato and brown on all sides for about 3 minutes. Remove from the skillet and set aside.
  • Add ground beef to the skillet; cook and stir until browned, crumbly, and no longer pink in the center, 4 to 5 minutes. Stir in bell pepper, onion, and garlic; cook until softened, 3 to 4 minutes. Drain as much fat from the pan as possible.
  • Stir in tomato sauce, water, olive brine, oregano, salt, and pepper until well combined. Add olives, raisins, and reserved potatoes; stir well. Reduce heat to low and simmer picadillo for 8 minutes, stirring occasionally.
  • Heat a nonstick skillet over medium heat and spray with cooking spray. Place a tortilla in the hot skillet and cook until browned, 1 to 2 minutes per side.
  • Spread about 1/4 cup hot picadillo on one half of the hot tortilla. Top with Mexican cheese, then fold tortilla in half, pressing down with a spatula. Cook until cheese is melted, about 1 more minute. Repeat to cook remaining quesadillas.
  • Cut each quesadilla into 3 triangles to serve.

(Corn Tortillas with Sweet-and-Savory Ground Pork)

Yield Makes about 12 tostadas, serving 6 to 8

1 large onion, chopped fine
2 garlic cloves, minced
2 tablespoon vegetable oil
2 pounds ground pork
1/3 cups raisins
1 1/2 cups tomato sauce
1/2 cup sliced pimiento-stuffed green olives
3/4 teaspoon cinnamon
1/4 teaspoon ground cloves
vegetable oil for frying the tortillas
twelve 7-inch corn tortillas
3 cups shredded romaine or iceberg lettuce
1 1/2 cups thinly sliced red onion or coarsely grated radishes

Steps:

  • In a large heavy skillet cook the onion and the garlic in the oil over moderately low heat, stirring, until the onion is softened, add the pork, and cook the mixture over moderate heat, stirring and breaking up any lumps, until the pork is no longer pink. Pour off any excess fat, add the raisins, the tomato sauce, the olives, the cinnamon, the cloves, and salt and pepper to taste, and simmer the mixture, stirring occasionally, for 10 to 15 minutes, or until it is thickened. The picadillo may be made 1 day in advance, kept covered and chilled, and reheated before proceeding.
  • In a skillet heat 1/4 inch of the oil over moderately high heat until it is hot but not smoking, in it fry the tortillas, 1 at a time, for 30 seconds to 1 minute, or until they are crisp and golden, and transfer them with tongs as they are fried to paper towels to drain. Arrange the tostada shells in one layer on platters, divide the picadillo among them, and top it with the lettuce and the onion.

1 large onion,diced

1large red bell pepper,diced
1 large carrot,halved lengthwise and sliced thin
1 1/4 tsp chili powder
1 tsp unsweetened cocoa powder
1 tsp cumin
1tsp oregano
1 can(16 oz) small red beans,rinsed and drained
1 can (14 1/2oz) no salt-added stewed tomatoes, chopped with their juice
1 can (8 oz) tomato sauce
1/2 cup raisins
Eight 8" tortillas
3 ounces soft goat cheese, crumbled

Steps:

  • In large nonstick skillet, heat oil over medium heat.Add onion and garlic,and cook, stirring occasionally,until onion has softened, about 5 minutes. Stir in bell pepper and carrot, and cook, stirring frequently, until vegetables have softened, about 10 minutes. Stir in chili powder, cocoa, cumin and oregano, and cook, stirring, until fragrant, about 1 minute. Add beans, stewed tomatoes, tomato sauce and raisins, and cook until sauce is thickened and flavors are blended, about 10 minutes. dicide mixture among tortillas, crumble cheese over, roll up and serve

  • Heat 1 Tbsp. oil in a large skillet over high. Cook beef, breaking up with a wooden spoon, until browned but not completely cooked through, 5–7 minutes. Transfer to a medium bowl with a slotted spoon.
  • Reduce heat to medium and add remaining 1 Tbsp. oil to skillet. Cook onion, tomatoes, chile, garlic, cumin, pepper, and 1 Tbsp. Diamond Crystal or 1¾ tsp. Morton kosher salt, stirring, until tender but not browned, about 5 minutes. Return beef along with any juices to pan and add potato and stock. Bring to a simmer and cook, stirring and scraping up browned bits, until potato is tender and beef is cooked through, 20–25 minutes. Season with more salt if needed.
  • Do Ahead: Picadillo (without cilantro) can be made 3 months ahead. Transfer to an airtight container and freeze.

  • Add 2 tablespoons of oil to a skillet and preheat at medium for a few minutes. Add the potatoes. Spread them out evenly and season lightly with salt and pepper. Cover the skillet and cook for 15 minutes, stirring now and then. Remove from heat and reserve.
  • At the same time, preheat a large pot at medium heat for a few minutes. Add 1 pound of ground chuck or sirloin. If needed add a drizzle of oil. Season with 1 tsp. salt, 1 tsp. pepper, 1 tsp garlic powder and 1/2 tsp. cumin. Using a wooden, flat edge spoon, break up the beef and mix with spices. Cook for 7-10 minutes.
  • To the beef, add the onion and garlic. Stir to combine and saute for 4 minutes. Mix in the carrots, poblano and squash. Add a pinch of salt. Saute for 3-4 minutes.
  • While vegetables are cooking, transfer the chopped tomatoes, serrano, oregano, 2 cups water and 2 tsps. of bouillon to the blender. Blend until smooth. If you don't want to use bouillon, season with salt, to taste.
