MOROCCAN SPICED VEGETABLE COUSCOUS



Moroccan Spiced Vegetable Couscous image

Throw together a deliciously spiced and super healthy dish in no time flat. This recipe is great as a side dish or vegetarian meal.

2 tablespoons olive oil
1 medium red onion (chopped)
1 yellow bell pepper (chopped)
1 carrot (chopped into cubes)
2 cloves garlic (minced)
salt & pepper (to taste)
½ teaspoon paprika
½ teaspoon ground coriander
¼ teaspoon turmeric
½ teaspoon celery salt
½ teaspoon ground cumin
⅛ teaspoon ground cinnamon
cayenne pepper (optional, to taste)
1 cup frozen peas
14 oz chickpeas (garbanzo beans) (one can, drained)
6 Peppadew Piquante peppers (chopped, mild or hot)
1½ cups chicken stock (or vegetable stock)
A good handful fresh parsley (chopped)
1 cup instant couscous

Steps:

  • In a medium-size skillet heat the oil over medium heat.
  • Add red onion, yellow pepper, and carrot sauté 10-15 minutes or until brown and all the vegetables are your desired tenderness
  • Add the garlic, sauté another minute.
  • Mix in the salt & pepper, paprika, ground coriander, turmeric, celery salt, cumin ground cinnamon, and cayenne pepper (if using). Stir-fry until fragrant (about a minute).
  • Add the frozen peas and cook briefly. Stir in the piquante peppers and chickpeas. Followed by the stock, scraping any brown bits from the bottom of the pan.
  • Add the chopped parsley and stir in the couscous. Remove from heat and let stand 5 minutes or until liquid is absorbed. Fluff and serve.

1 Red bell pepper
1/2 Cup Onion (Chopped)
1/2 cup carrots (sliced)
1 Tbsp Olive Oil
1.25 Cup broth
1 cup peas (frozen)
2 Tbsp raisins
1/8 tsp cinnamon
1/4 Tsp Tumeric
3/4 cup couscous
Salt and pepper to taste
1/4 cup parsley (chopped fresh)
1/2 tsp Salt and Pepper to taste (crushed)

Steps:

  • Preheat the oil in a pan and stir fry the onions, bell peppers, and carrots in the oil for about 5 minutes
  • Stir in the crushed peppers, peas, raisins and cinnamon and season with salt, black pepper Tumeric and cinnamon
  • Add the broth and bring to a boil
  • Stir in the couscous cover immediately, turn off the heat off and let it stand for 5 minutes
  • Fluff with a fork and sprinkle the parsley over it.

1 cup fresh cilantro (leaves and some stems)
1/2 cup fresh parsley (stems reserved for couscous)
2 tablespoons whole almonds
1/2 clove garlic
1/4 cup extra-virgin olive oil
Kosher salt
4 tablespoons unsalted butter
Kosher salt
1 onion, cut into 8 wedges
1 cinnamon stick
1 14 -ounce can peeled tomatoes, halved
2 small carrots, cut into chunks
1 zucchini and/or 1 bunch Swiss chard, chopped
1/3 cup raisins
Freshly ground pepper
1 1/2 cups whole-wheat couscous

Steps:

  • Make the pesto:
  • Combine the cilantro, parsley leaves, almonds and garlic in a food processor; pulse until coarsely chopped. Add the olive oil and 1/2 teaspoon salt; process until smooth.
  • Prepare the vegetables for the couscous: Heat a wide heavy-bottomed pot over medium heat. Add 3 tablespoons butter and 1 teaspoon salt; cook until the butter begins to brown. Add the onion. Tie the reserved parsley stems and cinnamon stick together with twine; add to the pot. Cook, stirring occasionally, until the onion is lightly browned, about 5 minutes. Add the tomatoes, 1 cup water, carrots, zucchini and/or Swiss chard, raisins, 1 1/2 teaspoons salt, and pepper to taste. Cook, stirring occasionally, until the vegetables are crisp-tender, about 15 minutes. Remove the parsley and cinnamon.
  • Meanwhile, cook the couscous as the label directs. Add the remaining 1 tablespoon butter, season with salt and pepper and fluff with a fork. Top the couscous with the vegetables and pesto.

1 cup couscous
1 1/2 cups boiling vegetable stock, or water
1/2 teaspoon salt
1/4 cup olive oil
3 garlic cloves, minced
1 large onion, diced
1 (28ounce) can tomatoes, finely chopped and drained (reserve 1/3 cup juice)
1 1/2 tablespoons minced fresh basil, or 1 teaspoon dried
1/3 cup pine nuts
5 cups (about 5 ounces) loosely packed fresh spinach, stems removed and leaves torn into small pieces
Freshly ground black pepper to taste
1 cup grated Fontina cheese

Steps:

  • Combine the couscous, boiling stock or water, and salt in a large bowl; cover with a plate. Let sit 5 minutes, then fluff with a fork.
  • Preheat the oven to 375 degrees. Heat the olive oil in a large skillet over medium heat. Saute the garlic and onion 10 minutes, or until tender. Add the drained tomatoes and cook 10 minutes more, stirring frequently. Stir the tomato mixture into the couscous and mix in the reserved tomato juice, basil, pine nuts, raw spinach, and pepper.
  • Spread half the couscous mixture into a 12 by 7 by 2-inch baking dish or other shallow (2 1/2 quart) baking dish. Sprinkle on the cheese, then top with the remaining couscous. Cover the dish with foil and bake 25 minutes, or until hot and bubbly.

1 large onion, chopped
Coarse grained salt and cracked black pepper
1 teaspoon fresh thyme leaves
3 zucchini, cut into 3/4-inch cubes
3 yellow squash, cut into 3/4-inch cubes
1 pound mushrooms, cut into 3/4-inch cubes
1 clove garlic, minced
4 tomatoes, peeled and diced, or 1 (14-ounce) can diced tomatoes
3 cups chicken or vegetable stock
1 (19-ounce) can garbanzo beans
1/4 cup chopped parsley, plus 1 tablespoon
2 tablespoons red wine vinegar
2 tablespoons fresh basil
2 cups couscous, prepared according to package instructions
1/2 cup raisins, soaked in boiling water for 5 minutes and drained

Steps:

  • In a large saucepan, heat the olive oil over medium heat. Add onions and saute until softened, approximately 5 minutes. Season with salt and pepper. Add thyme, zucchini, squash, and mushrooms. Saute for 5 to 10 minutes. Add garlic and stir. Add tomatoes, stock, and garbanzo beans. Let simmer for 5 to 10 minutes. Add more stock if dry. Add 1/4 cup parsley, red wine vinegar, and basil. Taste and adjust seasonings.
  • Add the raisins and remaining parsley to the prepared couscous, and stir to combine. Plate couscous and spoon stew over the top.

1 bay leaf, fresh or dried
1 medium onion, chopped
1/4 zucchini, diced
1/4 yellow squash, diced
Salt and pepper
1/2 cup canned pumpkin
4 cups chicken or vegetable broth
1 1/2 teaspoons ground cumin, half a palm full
1 teaspoon coriander seeds, 1 /3 palm full
2 1/4 cups couscous
1 vine ripe plum tomato, seeded and finely chopped
2 tablespoons each chopped cilantro and flat-leaf parsley
Mediterranean flat bread, for passing

Steps:

  • Heat a large sauce pot over medium high heat. Add oil, bay leaf, onion, zucchini and yellow squash to the pot and season with salt and pepper. Saute, stirring frequently, 7 or 8 minutes. Add pumpkin and broth to the pan and stir to combine. Add cumin and coriander. Bring broth to a boil. Add couscous to the broth, stir, cover and remove from heat. Let stand 5 minutes. Remove lid from the pot and fluff couscous with a fork. Remove bay from the pan, add finely chopped tomato, cilantro and parsley, toss again with fork to combine and transfer to a serving platter. Serve with warm Mediterranean flat breads.
