VEGETABLE CORNISH PASTIES
A meatless version of a traditional favorite.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Divide pastry dough into four equal portions and roll each one out in a square shape. Set pastry aside to rest.
- Place a large skillet over medium heat. Add butter or margarine and allow to melt. Add onion and saute for 5 minutes, until translucent and beginning to brown. Add carrot, turnip, potato, mushrooms, and water. Lower heat and cover skillet. Allow mixture to cook for 10 minutes, stirring occasionally.
- In a small bowl, dissolve yeast extract in milk. Whisk in 1 egg. Stir this mixture into cooked vegetables. Continue to stir until mixture thickens. Add cheese, and salt and pepper to taste. Set aside to cool.
- Place 1/4 of filling on one half of each pastry square. Fold pastry diagonally and seal edges. Brush tops of pastry with beaten egg.
- Place pasties on a baking sheet and bake in preheated oven for 30 minutes, until pastry is golden brown.

- In a large bowl, mix flour, salt and baking powder; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Cover and refrigerate for 30 minutes., Preheat oven to 375°. In another large bowl, combine beef, onion, potatoes, turnips, salt and pepper. Divide dough into 4 equal portions. On a lightly floured surface, roll 1 portion into a 9-in. circle. Mound 1-1/2 cups filling on half of circle; dot with 1 tablespoon butter. Moisten edges with water; fold dough over filling and press edges with a fork to seal. Place on a parchment-lined rimmed 15x10x1-in. baking pan. Repeat with remaining dough, filling and butter. Cut slits in tops of pasties. Bake 50-60 minutes or until golden brown. (If desired, pour milk into slits halfway through baking time.) Serve with ketchup., Freeze option: Freeze cooled pasties in a freezer container. To use, reheat pasties on a parchment-lined baking sheet in a preheated 375° oven until heated through.

VEGETARIAN CORNISH PASTIES
Making vegetarian Cornish pasties is a fun and easy task. Even a non-baker can prepare this recipe. Traditionally, Cornish pasties are made with a filling of beef, potatoes, onions and swede. These vegetarian Cornish pasties have a filling made with lentils, butternut, garlic, spinach, white wine vinegar and more.

Steps:
- Fry the onion and garlic gently with the oil, in a large saucepan, until softened.
- Add the butternut, vinegar to the pan and increase the heat until the vinegar sizzles away.
- Lower the heat, add the stock, tomato puree and sugar then give it a stir. Let the mixture gently bubble at a low heat until the butternut is cooked. Add a splash of water if needed if it gets too dry.
- When the butternut is cooked, add the lentils and spinach and stir until the greens have wilted. Remove the pan from the heat and let it cool.
- Preheat the oven 200°C/fan 180°C/gas 6.
- Roll out the pastry on a floured surface. Using a saucer, cut out 6 shapes.
- Divide the filling evenly between the rounds, leaving a margin around the edges.
- Brush the pastry all the way round the edge with beaten egg, carefully draw up both sides so that they meet at the top, then pinch them together to seal. Lift onto a non-stick baking tray and brush with the remaining egg to glaze.
- Bake the pasties in the oven for 15 minutes or until golden and crisp.

- Mix together the flour, salt and baking powder in a large bowl. Add the shortening, cutting it in with a pastry blender. Add the ice water, a little at a time, adding more if necessary until the dough is easily handled. Divide the dough into six pieces, wrap in wax paper, and refrigerate for 30 minutes.
- For each pasty, roll out a piece of dough into an 8-inch circle. On one half of the circle layer about 2 heaping tablespoons each of the potatoes, beef and onions, and about 1/4 cup each of rutabaga and carrots, adding salt and pepper to taste. Dot each batch of filling with 1 teaspoon butter, and fold the dough over, forming a half-moon. Moisten the edges with water, and seal the edges, crimping them with a fork. Place on a greased baking sheet. In the top of each pasty, cut several small slashes with a sharp knife.
- Bake in a 425-degree oven for a half-hour. Reduce the heat to 350 degrees, and bake for another half-hour or until the pasties are nicely browned. Serve hot or cold.

- Preheat the oven to 220°C (200°C fan oven) Gas Mark 7. Mix together the onion, potato, parsnip, parsley and grated cheese with ½ tsp salt and plenty of black pepper – at least 1 tsp.
- Cut the pastry into quarters then, one by one, roll each quarter to a 20cm round (you can use a plate or cake tin bottom to measure and trim). Firmly pack a quarter of the filling mixture along the centre of each round, leaving a border at each end. Brush the pastry all the way around the edge with some egg, then carefully lift up both sides so they meet at the top. Pinch together to seal, then gently lift onto a lightly floured baking tray and brush with the last of the egg to glaze.
- Bake the pasties for 10 minutes, then reduce the oven to 180°C (160°C fan oven) Gas Mark 4 and cook for 45 minutes more until golden. Delicious served hot or cold.
