VEGAN VANILLA CASHEW SMOOTHIE

Let's try an original smoothie recipe, super tasty and easy to make, which is also fully vegan (i.e. no dairy product or honey).

Number Of Ingredients 7

2/3 cup (100g) cashew nuts*
1/4 -1/3 cup (60-80 cl) water*
1 pinch of salt
1/2 cup (50g) rolled oats
1 vanilla bean
1 large banana, sliced and frozen
A handful of dates

Steps:

  • Make the cashew milk in advance: soak cashews in a bowl (at least 2-6 hours before or the day before). Rinse them under tap water with a colander and drain well. Add salt, water and mix until perfectly homogeneous liquid.
  • Soak the oats in a bowl at least one hour in advance with the vanilla seeds extracted from the vanilla bean itself.
  • In a blender, mix the frozen banana slices, rolled oats, pitted dates, seeds from the vanilla bean and cashew milk (adjust amount to desired consistency, possibly adding a little water) for a few minutes. It's ready!

Here's what you need: raw unsalted cashew, water, water, medjool dates, vanilla extract, himalayan sea salt

1 cup raw unsalted cashew
water, for soaking
4 cups water, filtered
3 medjool dates, pitted
1 teaspoon vanilla extract
¼ teaspoon himalayan sea salt

Steps:

  • Add the cashews to a medium bowl with enough water to cover by 1 inch (2 ½ cm). Soak for 3-4 hours. Drain the cashews and discard the soaking water.
  • Add the soaked cashews and filtered water to a high-powered blender. Blend, starting on low speed and gradually increasing the speed to high, for 1-2 minutes, until smooth and creamy.
  • Add the dates, vanilla, and salt. Blend on low speed to combine.
  • Transfer the cashew milk to an airtight container and chill before serving. The cashew milk will keep in the refrigerator for up to 6 days. If the milk separates, shake well before using.
