VEGAN JAPCHAE KOREAN NOODLES



Vegan Japchae Korean Noodles image

This is a delicious vegan Korean noodle dish that is typically served cold, but is also very good hot! Korean meets vegan in this quick and easy japchae recipe: a chewy and crunchy medley of glass noodles, spinach, mushrooms, green onions, and carrots.

1 (12 ounce) package Korean sweet potato noodles (dangmyun)
5 teaspoons sesame oil, divided
¼ cup soy sauce
4 teaspoons white sugar
1 tablespoon vegetable oil
3 carrots, cut into matchsticks
1 onion, thinly sliced
1 cup shiitake mushrooms, sliced
6 green onions, chopped
4 cloves garlic, minced
1 (16 ounce) bag fresh spinach
1 tablespoon sesame seeds

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in noodles and return to a boil. Cook noodles uncovered, stirring occasionally, until tender yet firm to the bite, about 5 minutes. Drain and rinse with cold water.
  • Toss noodles with 2 teaspoons sesame oil. Cut into shorter pieces using kitchen shears.
  • Combine soy sauce and sugar in a bowl.
  • Heat vegetable oil in a skillet over medium-high heat. Saute carrots and onion until soft, about 1 minute. Add mushrooms, green onions, and garlic. Saute until fragrant, about 30 seconds. Add the noodles, soy sauce mixture, and spinach. Cook and stir until noodles are heated through, 2 to 3 minutes more. Remove from heat. Toss in remaining 1 tablespoon sesame oil and sesame seeds.

  • Bring a large pot of water to a boil and cook sweet potato noodles following the directions on the package. Once cooked, drain and rinse with cold water to stop the cooking process. Add 1 tsp of sesame oil to coat the noodles, and then use scissors to cut the noodles (around 3-4 times). In the same pot, add in the spinach and blanch for 30 seconds. Rinse with cold water and squeeze the excess liquid out using a towel. Chop the bundled up spinach in half.
  • Slice all the vegetables into match stick sized pieces. They should all be relatively the same size. Cut the tofu into thin rectangles.
  • In a large wok, over medium high heat fry the smoked tofu with a little bit of sesame oil just until lightly browned on each side. Transfer into another bowl and set aside.

  • Put dried shiitake in a bowl then add water to soak. Put a tiny plate over to completely submerge them in the water (they will float!) Soak for 8-12 hours.
  • After soaking, rinse and clean plumped shiitake under running water to remove unwanted particles trapped in the gill. Don’t waste the soaking water!! Save it as shiitake broth for later use---Place a paper towel on a fine mesh strainer over a bowl. Pour the soaking water slowly to strain and to catch the dirt. Store in the fridge or freeze.
  • Boil water in a medium pot. Open the package and discard the water using a colander. Rinse under running water then transfer the noodles into the boiling water and cook for 2-3 minutes. Use the same colander to drain. Shake off the excess water and set aside.
