Oooh, this peanut butter pie will turn even the most hardcore carnivore into a purring vegan! Yum yum yum!

¾ cup vegan chocolate chips
1 (10.5 ounce) package silken tofu
¾ cup peanut butter
2 tablespoons maple syrup
1 (9 inch) prepared graham cracker pie crust
1 ripe banana, thinly sliced
1 tablespoon vegan chocolate chips, or more to taste

Steps:

  • Place 3/4 cup chocolate chips in a microwave-safe bowl. Microwave on high until just melted, about 1 minute. Stir and allow to cool slightly.
  • Combine tofu, peanut butter, and maple syrup in a blender. Add melted chocolate and blend until smooth.
  • Cover the bottom of the pie crust with banana slices and pour chocolate-tofu mixture over top. Sprinkle with remaining chocolate chips and chill until firm, about 2 hours.

1 (14 ounce) package firm silken tofu
1 cup peanut butter (try to use all natural, all the big brands use hydrogenated oils)
3/4 cup sugar
2 tablespoons soymilk
2 teaspoons vanilla extract
1 pie crust, chilled (you can chill it as long as you want before you make it)

Steps:

  • Combine all of the ingredients in a food processor or blender.
  • Blend/process until desired texture is reached.
  • Spoon into pie crust.
  • Refrigerate before serving (atleast an hour).

  • Preheat the oven to 340°F (170°C) and lightly grease a 10-inch deep tart/pie pan with removable base or springform pan (*see photo and note in the blog post if using another size).
  • Add the firm silken tofu, non-dairy cream cheese, creamy peanut butter, maple syrup, and vanilla extract to a blender (or food processor) and blend until smooth and creamy. Then set aside.
  • Place the chopped dark chocolate in a heatproof bowl. Heat the non-dairy cream in a small saucepan until it just starts to boil. Then pour it over the chopped chocolate and let it sit for 2-3 minutes to allow the chocolate to melt. Then stir with a whisk until the ganache is smooth.

  • Preheat oven to 180°C (350°F). Using a pastry brush, brush some melted coconut oil all over a 9-inch round pie pan with removable bottom (this makes it easier to unmold the crust, especially if you bake it!). Set aside.
  • In a large mixing bowl, add almond flour, unsweetened cocoa powder, melted coconut oil, maple syrup, and vanilla extract.
  • Use your hands to knead the ingredients together for about 90 seconds. Squeeze well all ingredients to bring them in contact and create a sticky pie dough. You don't have to form a ball as it's a press-in crust but make sure the dough is consistent and sticky.
  • Bring the dough into the pan and press in the dough to cover the entire pan. Make sure you don't leave holes, or it will crack in those areas when baked.
