STRAWBERRY YOGURT PANCAKES
These were delicious this morning. I had some yogurt that I needed to use so whipped these up. Very light and tasty.

Steps:
- In a mixing bowl, mix flour, baking powder, baking soda, salt and sugar.
- Add in the eggs, buttermilk, melted butter, yogurt and vanilla and mix until smooth.
- Spray griddle with Pam or use a slab of butter for each pancake and heat over medium heat.
- Pour approximately ½ cup of batter onto a preheated griddle.
- Cook for 8-10 minutes or the top is nice and bubbly.
- Turn and brown the other side.
- Serve with warm maple syrup.

VANILLA YOGURT PANCAKES

Steps:
- In medium bowl, beat yogurt, milk, vanilla and eggs with whisk until well combined. In large bowl, place Bisquick mix. Add yogurt mixture. Mix to combine.
- Heat skillet or griddle over medium-high heat (grease if necessary). Scoop slightly less than 1/4 cups batter onto heated skillet; cook until bubbles start to form on surface of pancakes, edges become dry, and bottom becomes golden brown. Turn, and cook on other side until golden brown. Repeat with remaining batter.
- Serve warm with butter and maple syrup.

Steps:
- Spray griddle with cooking spray and heat over medium heat or to 375.
- In a large bowl, mix flour, sugar, baking powder, baking soda, and salt; set aside.
- In another bowl, beat eggs, yogurt, and water with wire whisk; beat in butter.
- Pour egg mixture all at once into flour mixture; stir just until moistened.
- For each pancake, pour by 1/4 cupfuls onto hot griddle.
- Cook pancakes 1-2 minutes or until bubbly on top. Turn and cook other sides for an additional 1-2 minutes.
- Top each serving with 1/4 cup sliced strawberries and syrup.

- follow directions on the back of the pancake mix box and add the diced strawberries to the mix.
- cook the pancakes.
- Syrup:.
- poor the water and strawberries in a deep big pan and bring to a boil.
- Cover the pot and simmer the strawberries for 10 minutes.
- Poor hot into the blender. Blend.
- strain the sauce back into the pot and bring to a boil once again. (throw pulp away of course).
- Slowly add the 1 cup of sugar to sauce and stir. Skim off the foam.
- ENJOY.

- Whisk flour, 2 tablespoons sugar, baking powder, baking soda and salt together in bowl. In second bowl, whisk buttermilk, eggs, sour cream and melted butter together. Make well in center of flour mixture and pour in buttermilk mixture; gently stir until just combined (batter should remain lumpy, with few streaks of flour). Do not overmix. Let batter sit for 10 minutes (don't skip this step). .
- Combine strawberries, vanilla and remaining 1 tablespoon sugar in small bowl; set aside.
- Heat 1 teaspoon oil in 12-inch nonstick skillet over medium heat until shimmering. Using paper towels, carefully wipe out oil, leaving thin film on bottom and sides of pan.
- Using 1/4-cup dry measuring cup, portion 4 pancakes into pan. Cook until edges are set, first side is golden brown and bubbles on surface are just beginning to break, 2 to 3 minutes. Sprinkle 1 tablespoon strawberry mixture over each pancake.
- Using wide spatula, flip pancakes and continue to cook until second side is golden brown, 1 to 2 minutes longer. Serve pancakes immediately or transfer to prepared rack in oven. Repeat with remaining batter and strawberry mixture, adding remaining 1 teaspoon oil, as needed.
