This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

Number Of Ingredients 9

4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
  • Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
  • Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

4 cups rolled oats
1 cup sliced almonds
1 cup chopped pecans
1 cup raw sunflower seeds
⅓ cup canola oil
½ cup honey
1 teaspoon vanilla extract
1 tablespoon ground cinnamon

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a large bowl, stir oats, nuts and sunflower kernels together. In a separate bowl, mix together oil, honey, vanilla and cinnamon. Add to dry ingredients; mix well. Spread mixture onto two ungreased baking sheets.
  • Bake in preheated oven, for 10 minutes, remove from oven and stir. Return to oven and continue baking until golden, about 10 minutes. Remove from oven and let cool completely before storing.

4 ½ cups rolled oats
2 cups whole wheat flour
1 ¼ cups honey
¾ cup wheat germ
½ cup chopped raw cashews
½ cup chopped raw almonds
⅓ cup vegetable oil
¼ cup flaked coconut
2 tablespoons brown sugar
1 teaspoon vanilla extract
1 teaspoon salt

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Mix oats, flour, honey, wheat germ, cashews, almonds, vegetable oil, coconut, brown sugar, vanilla, and salt together in a large bowl; spread onto a baking sheet.
  • Bake in preheated oven for 15 minutes, stir, and increase heat to 325 degrees F (165 degrees C). Continue cooking until the granola is golden brown, about 10 minutes more. Cool granola completely before storing in an air-tight container.

This is an oat-based breakfast cereal that my wife and I have eaten for years. Easy to make, and taking into account the cost of a box of similar cereal at the store, it is worth the hour and a half to make it.

42 ounces old fashioned oats
1 cup wheat germ
1 cup wheat bran
1 cup ground flax seeds
2 tablespoons cinnamon
1 1/2 cups honey
2/3 cup vegetable oil
1 tablespoon vanilla

Steps:

  • Mix the oats, germ, bran and cinnamon in a large mixing bowl.
  • In a small sauce pan, heat the honey, vegetable oil and vanilla until almost to a boil.
  • Combine all until wet ingredients are completely mixed in with the dry.
  • Pour out into a large and flat greased or vegetable sprayed baking dish. Bake at 300 for 40minutes, removing and stirring half way through.
  • Allow to cool completely, then store in a air-tight container. If you would like to add dried fruit or other nuts, add after the mixture has cooled completely.
  • Note: The granola can be stored at room temperature, but my wife and I like to keep it in the refrigerator. Serving size is 1/2 cup.
