TOFU CHOCOLATE ICE CREAM WITH MIXED BERRY SAUCE AND WHIPPED COCONUT CREAM

Steps:
- For the ice cream: Place a metal loaf pan in the freezer to chill.
- Using a spoon, remove the solidified cream from the top of the coconut milk, leaving the coconut liquid behind in the bottom of the can. Place the cream in a large mixing bowl. Add 1/4 cup agave, then beat with a hand mixer until soft peaks form, 2 to 3 minutes. If the mixture is lumpy, add a little bit of the coconut liquid from the bottom of the can.
- Combine the tofu, cocoa powder, coconut oil, vanilla bean paste, salt and remaining 1/2 cup agave in a blender and blend until smooth, about 2 minutes. Pour the mixture into the bowl with the whipped coconut and fold until combined. Transfer to the chilled loaf pan and place in the freezer until firm, 4 to 6 hours, or up to overnight.
- For the mixed berry sauce: Add the berries, agave and lemon juice to a medium saucepot over medium heat. Bring to a boil, then reduce heat and simmer until it starts to thicken, 5 to 7 minutes. Remove from the heat and add to a clean blender; blend, making sure to remove the center of the blender top, for about 30 seconds. Pour into a heatproof container and let cool slightly before serving, about 15 minutes.
- Scoop the ice cream into bowls and top with the berry sauce.

- Pour cream soda into a bowl and whisk until no longer bubbly; set aside.
- Heat water and sugar in a saucepan over medium high heat, stirring until the sugar is dissolved, about 5 minutes.
- Stir sugar mixture and vanilla extract into the cream soda.
- Pour mixture into small plastic cups or ice pop molds, then insert wooden ice pop sticks. Freeze until firm.

PEAR VANILLA ICE POP
Steps:
- Peel and halve the pears and remove seeds with a spoon or melon baller. Combine 2 3/4 cups water and the sugar in a large saucepan over medium-high heat. Split the vanilla bean and scrape the seeds into the water. Heat until the sugar is dissolved and the syrup comes to a simmer, about 3 minutes. Submerge the pears in the vanilla syrup and cover. Cook over medium heat until the pears are tender in the center when poked with a knife, 15 to 20 minutes. Remove from the heat. Add the lemon juice and salt. Use an immersion blender to puree the mixture. Cool the mixture 10 minutes. Pour the mixture into 16 large ice pop molds (2 1/2 to 3 ounces each) and freeze for 6 hours or overnight. Run the popsicles under warm water briefly to unmold.;

- Dissolve gelatin, soft drink mix and sugar in boiling water. Stir in cold water and pour into popsicle molds or small plastic drinking cups. Add popsicle sticks when firm but not frozen completely; freeze until hard.

VANILLA TOFU ICE POPS
A recipe from the book Ice Pop Joy. This recipe is aimed for children but it sounds good, so I wanted to record it on here. I haven't tried it yet. NOTE: The original recipe contained 4 tablespoons of honey. That's fine to include IF your baby is over the age of one year. Never give honey to a baby under the age of one year, as it's dangerous.

- Place tofu, sugar, and salt in a blender. Scrape in seeds from vanilla bean; reserve pod for another use. Purée until smooth, about 15 seconds. With the motor running on medium speed, slowly stream in oil and purée until thick and creamy, being careful not to overblend or mixture will curdle.
- Immediately process tofu mixture in ice cream maker according to manufacturer’s directions. (Head’s up: this will take longer than a traditional dairy-based custard to reach soft-serve consistency.) Do not chill before processing or oil will harden into tiny bits and texture will be grainy.
- Transfer to an airtight container and press plastic wrap directly onto surface. Freeze until firm, at least 4 hours.
