HOMEMADE VANILLA PUDDING



Homemade Vanilla Pudding image

Forget boxed mixes or pre-packaged pudding cups. Making Homemade Vanilla Pudding is as easy as can be and the results are beyond delicious!

Number Of Ingredients 7

3 cups whole milk, divided
3 tablespoons cornstarch
Pinch of salt
¾ cup sugar
3 egg yolks
1 tablespoon butter
1 teaspoon pure vanilla extract

Steps:

  • In a small bowl, whisk together ¼ cup of the milk with the cornstarch. Set aside.
  • In a medium saucepan, whisk together the remaining milk, salt, and sugar. Allow the mixture to heat over medium heat until it is steaming; do not let it boil.
  • While the milk heats, whisk the egg yolks in a separate small bowl. Once the milk is steaming, slowly stream ½ cup of the hot milk mixture into the egg yolks, whisking constantly. Slowly add the egg yolk mixture back to the pot, followed by the cornstarch mixture. Continue to cook over medium heat, whisking constantly, until the mixture starts to simmer and has thickened.
  • Remove from the heat and whisk in the butter and vanilla.
  • Pour into individual serving dishes. Top each with a layer of plastic wrap touching the top of the pudding to prevent a skin from forming and serve warm or allow to chill for several hours before serving.

Steps:

  • Combine 1/2 cup sugar, 2 tablespoons cornstarch and teaspoon salt in a medium bowl; slowly whisk in 1 cup milk, then whisk in 1 large egg. Meanwhile, bring another 1 cup milk to a boil in a medium saucepan over medium heat. Remove from the heat and whisk in the sugar mixture. Return to medium-low heat and simmer, whisking, until thick and creamy, 5 to 7 minutes. Remove from the heat and whisk in 1 tablespoon each vanilla and unsalted butter until smooth. Add stir-ins (see below). Divide among ramekins. Cover with plastic wrap and refrigerate until set, about 2 hours.
  • Mix-In Ideas:
  • Gingerbread cookie:Stir in 1/4 cup cookie butter and layer with crumbled gingersnaps
  • Double chocolate chip:Stir in 1/2 cup milk chocolate chips and layer with crumbled chocolate chip cookies
  • Chocolate-Mint: Stir in 1/2 cup mint baking chips and layer with crumbled chocolate sandwich cookies
  • Caramel crunch: Stir in 1/2 cup dulce de leche and layer with broken pretzels
  • Pumpkin pie: Stir in 1/2 cup pumpkin puree and layer with crushed graham crackers
  • Chocolate peanut butter: Stir in 1/2 cup semisweet chocolate chips and layer with crumbled peanut butter cookies

1/2 cup granulated sugar
3 tablespoons cornstarch
1/8 teaspoon fine salt
1 1/2 cups whole milk
1/2 cup heavy cream
2 large egg yolks
2 tablespoons unsalted butter
1 teaspoon pure vanilla extract

Steps:

  • Place a fine-mesh sieve over a medium heatproof bowl and set aside. In a medium saucepan, combine sugar, cornstarch, and salt. In a medium bowl, whisk together milk, cream, and egg yolks; add to saucepan.
  • Whisking constantly, cook over medium-high until mixture thickens and is bubbling, 8 to 12 minutes. Reduce heat to medium-low and cook, whisking, 1 minute.
  • Remove pan from heat and pour mixture through sieve into bowl. Stir in butter and vanilla until combined.
  • Press plastic wrap directly against surface of pudding to prevent skin from forming and refrigerate 3 hours (or up to 3 days). To serve, whisk until smooth and divide among four small bowls.

Steps:

  • In 2-quart saucepan, mix sugar, cornstarch and salt. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.
  • Gradually stir at least half of the hot mixture into egg yolks, then stir back into hot mixture in saucepan. Boil and stir 1 minute; remove from heat. Stir in butter and vanilla.
  • Pour pudding into dessert dishes. Cover and refrigerate about 1 hour or until chilled. Store covered in refrigerator.

1/3 cup sugar

  • Cut the Milky Way bars into small pieces and set aside.

Milky way candy bars are one of my favorite candy bars, when I came across the recipe ,I thought this is great, and I'm thinking it should work for Snickers too. the recipe calls for the little mini bars, good way to finish up any Halloween candy you might have left. The recipe is from ALL YOU MAGAZINE.

1/3 c sugar
3 Tbsp corn starch
1 Tbsp unsweetened coco powder ( such as hersheys )
1/8 tsp salt
2 c whole milk ( if you don't use whole milk you can sub 1 can of evaporated milk and 1 can of water, should give you 2 cups )
3 large egg yolks
2 Tbsp unsalted butter ( cut into small pieces )
2 tsp vanilla extract
2 c milky way midnight bars ( chopped into little cubes ) about 10 oz.

Steps:

  • 1. In a sauce pan, combine Sugar, Cornstarch,Cocoa powder and salt, stirring this to mix well - Then SLOWLY mix in the milk, Place Pan over Medium High Heat and Bring to a boil, whisking all the time, Boil for 1 Minute Take Off Heat and Set Aside - In A Bowl Whisk the Egg Yolks to Combine, and then While Whisking Constantly - pour 1/2 of the hot milk mixture into the Eggs ( be careful or you will have scrambled eggs ) SLOWLY , - Then take the Egg Yolk Mixture ( Whisking Vigorously ) and pour into the hot milk mixture in the pan, - Bring back to a boil over Medium High Heat , Whisking Constantly, untill thickened ( should be about a Minute ) Remove from heat and stir in butter and vanilla, Then Stir in 1 1/2 cups of milky way - ( You'll have 1/2 cup left to scatter on top of pudding before serving ) You can pour into 6 custard cups or a serving bowl, - Cover the top with plastic wrap, Pressing directly on the surfaceof the pudding, Put in Frig. and Chill till Set at least 2 hours or overnight - Just before serving Sprinkle the remaing 1/2 cup candy on top - This would also be good with a dollop of whipped cream . Eat and Enjoy !!!
