This is a nice alternative to hot chocolate. To make this more healthy, substitute the 2% milk and sugar for skim milk and a no calorie sweetener.

1 cup 2% milk
2 teaspoons white sugar
2 teaspoons vanilla extract
1 teaspoon ground cinnamon

Steps:

  • Pour the milk into a microwave-safe mug. Stir together the cinnamon and sugar, then stir into the milk. Mixing the cinnamon into the sugar first will help to keep it from floating on top. Stir in the vanilla. Place mug in the microwave and heat for 1 minute and 40 seconds, or longer for a warmer drink. Stir before drinking.

1 1/2 cups whole milk or 1 1/2 cups half-and-half
1/2 cup vanilla-flavored syrup
1/8 teaspoon kosher salt
1 vanilla bean
6 ounces white chocolate, chopped
2 ounces white chocolate liqueur
2 ounces triple sec
marshmallows, for garnish
cocoa powder, for garnish

Steps:

  • Add milk, vanilla syrup, and salt to a medium saucepan; set over medium heat and cook, stirring, until the mixture is hot; do not boil.
  • Split the vanilla bean lengthwise and scrape out the seeds; add seeds to the saucepan.
  • Add in the white chocolate and stir until the chocolate has melted and the mixture is smooth; don't rush this step by turning up the heat, or the white chocolate may seize.
  • Stir in the liqueurs.
  • Pour the hot chocolate into 4 mugs and serve immediately, topped with marshmallows and a sprinkle of cocoa powder.

1/2 cup vanilla-flavored syrup
1/8 teaspoon kosher salt
1 vanilla bean
6 ounces white chocolate, chopped
marshmallows, for garnish
grated bittersweet chocolate, for garnish

Steps:

  • Add milk, vanilla syrup, and salt to a saucepan; place over medium heat; cook/stir until mixture is hot (do not let boil).
  • Split vanilla bean lengthwise with a small sharp knife and scrape the seeds into the saucepan.
  • Stir in the white chocolate until it has melted and the mixture is smooth (don't rush this step by turning up the heat; white chocolate has a tendency to seize when heated at too high a temperature).
  • Ladle the hot chocolate into 4 mugs; top with marshmallow and a sprinkling of grated chocolate.
