EASY WINTER FRESH FRUIT SALAD
Steps:
- Place the fruit in a serving bowl. (If using pears, because they sometimes darken faster than apples, I like to toss them with a light squeeze of lemon juice before adding to the salad.)
- Whisk together the dressing ingredients and pour over the fruit and toss to combine.
- The fruit salad can be made a couple hours ahead of time - keep in mind that depending on what type of fruit is used, the colors may seep into each other as the salad sits.

- In a small saucepan, bring the sugar and water to a boil. Remove from the heat. Stir in the basil, spearmint and cinnamon stick. Cover and refrigerate overnight., Discard the herbs and cinnamon stick from syrup. In a serving bowl, combine the fruit. Drizzle with syrup; gently toss to coat. Cover and refrigerate until chilled. Serve with a slotted spoon.

A great treat for summer desserts. You may use any fruit that is in season, these just happen to be my favorite combination. You can top with a little sweetened whipped cream if you desire.

HONEY-VANILLA FRUIT SALAD

- Trim off all the peel and white pith from the oranges. Halve lengthwise and then slice crosswise into half-moons (remove any seeds). Transfer to a large bowl and add the strawberries and grapes.
- Combine the honey and vanilla bean in a small saucepan and warm, stirring, over low heat until the honey is warm and pourable and speckled with vanilla beans, about 3 minutes. Remove the vanilla bean and scrape out any remaining seeds and stir them back into the honey; discard the bean pod. Pour over the fruit and toss well. Set aside to cool. Serve at room temperature or refrigerate until cold.

This is my favorite healthy dessert recipe. Seems unusual until you try it. I've always gotten rave reviews when I take it to gatherings. Feel free to experiment with other fruits like peaches, blueberries, pears, etc.

A delicious sauce spooned over fresh fruit. Try spooning over fruit topped poundcake as well. I found this recipe on the evaporated milk can.

- Combine sugar, cornstarch, and cinnamon sticks in a medium saucepan.
- Gradually stir in evaporated milk.
- Cookover medium heat, stirring constantly, until mixture comes just to a boil and slightly thickens.
- Remove from heat and remove cinnamon sticks; stir in vanilla.
- Refrigerate for 2 hours until well chilled.
- Arrange fruit in serving dishes.
- Top with sauce and sprinkle with cinnamon if desired.
- Refrigerate leftover sauce up to 4 days.
