VALENTINE CINNAMON SHORTBREAD COOKIES

Surprise your Sweetie or your kids with these fun cookies on Valentine's Day!! I am a lover of the tiny red candy cinnamon hearts. You can decorate with those or get the pink and red M&Ms celebrated for this day. You can purchase a Wilton 6-pc heart cookie cutter set which are multiple sizes. I used that set for making these cookies. I did not roll the dough, but placed an amount of dough into each heart. The M&Ms will not melt while baking, but the cinnamon hearts will. After baking for 5 to 7 minutes I removed them from the oven and placed the hearts on at that time to prevent melting. You may want to have the tiny candy hearts on the entire time and have a little more "spread" of the flavor. Enjoy the Fun!

1 cup butter, softened
1 cup confectioners' sugar
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/2 teaspoon salt
2 cups all-purpose flour
red cinnamon candies (hearts)
M&M's plain chocolate candy

Steps:

  • Mix room softened butter with sugar and vanilla.
  • Combine cinnamon with salt and flour. Add to butter mixture and mix until it forms a dough.
  • On waxed paper press a small amount of dough into a heart shaped cookie cutter. If using M&Ms decorate after placing cookie dough on an ungreased cookie sheet.
  • If using red cinnamon heart candies, place undecorated cookies on an ungreased cookie sheet in a 325 degree oven. Remove after 5-7 minutes and decorate with red cinnamon heart candies. Place back in oven and finish baking. This allows candies to not get completely melted.
  • TOTAL time for baking cookies is approximately 15 minutes. Do NOT let cookies get brown edges.
  • Yield depends on size of cookie used. 36 is an approximate amount.

Easy Shortbread Heart-Shaped Cookies are slice-and-bake treats that are loaded with sprinkles, perfect for Valentine's Day...and they don't even require a cookie cutter!

1 cup (2 sticks) unsalted butter (at room temperature)
3/4 cup powdered sugar
1/2 teaspoon salt
1/4 teaspoon pure vanilla extract
1/4 teaspoon pure almond extract
2 1/3 cups all-purpose flour
1/2 cup sprinkles

Steps:

  • Add butter, powdered sugar, salt, vanilla extract, and almond extract to the bowl of a large food processor. Process until smooth (about eight 1-second pulses). Add flour and pulse until mixture looks crumbly and chunky (about six 1-second pulses). Add sprinkles and quickly pulse several more times, until the sprinkles are just evenly incorporated.
  • Turn the dough out onto a large piece of wax paper and form the crumbles into a log that's about 14 inches long. Shape the log so that it has three flat sides, giving the ends a triangular shape (the log should look like a long triangular prism).
  • Wrap the triangular log with the wax paper. Take a wooden ruler (or another long, thin object) and press an indentation into one flat side of the log. Round the edges of that side to form a heart-shaped log. Place the wrapped cookie dough on a baking sheet and freeze for 15 minutes. Fine-tune the shape of the heart (if necessary) and freeze for 2 to 3 more hours or until solid.
  • Place rack in center position of oven. Preheat oven to 350°F. Line two baking sheets with parchment paper. Remove log of dough from the freezer. Allow the cookie dough to come to room temperature for 5 minutes or until just soft enough that it doesn't crack or crumble when sliced. Using a sharp knife, cut the log into slices that are approximately 3/8-inch thick. Arrange cookies an inch apart on the prepared baking sheets. Bake until cookies just barely turn a light golden color around the edges, between 12 and 15 minutes. Allow to cool on the baking sheets.

These picture-perfect sweet treats make a gorgeous gift for someone special. Create dough cylinders then simply slice and bake the number of biscuits you want.

300g plain flour , plus a little extra for dusting
200g salted butter , diced
120g golden caster sugar
2 large egg yolks
2 tsp vanilla extract
½ tsp rosewater , or 25g/1oz freeze-dried raspberries, whizzed to a powder - we used Waitrose (optional)
red or pink food colouring

Steps:

  • Tip the flour and butter into a food processor and whizz to fine crumbs. Add the sugar and yolks then whizz to a smooth dough. Remove one-third of the dough, add vanilla to what's left and pulse to whizz in. Wrap this dough in cling film and leave at room temperature.
  • Put the reserved dough back in the processor with the rosewater or dried raspberries, if using, and a drop of food colouring. Pulse and add more colouring to achieve an intense colour. If the dough has become too soft, pulse in a few spoonfuls more flour until a similar consistency to the vanilla dough. Put the dough in the fridge, remembering to remove it 30 mins before you need to roll it out.
  • Thickly roll out the coloured dough between baking parchment. Use a small 3-4cm heart cutter to stamp out hearts. Keep re-rolling and stamping until all the dough is used. Line up hearts on top of each other and press to form a cylinder, taking care to retain the heart shape. Wrap in cling film and freeze for 3 hrs until solid.
  • When the heart dough is hard, roll the vanilla dough, using your hands, into 3 cylinders the length of the heart stack. Stick one to each 'side' of the hearts, pat together to form a fat cylinder, then gently roll on your work surface until it completely encircles the coloured dough, with the frozen heart dough hidden in the centre. Chill for 2 hrs.
  • Heat oven to 180C/160C fan/gas 4. Use a sharp knife to slice the log into 1cm-thick discs. Place on trays lined with baking parchment, allowing space for spreading, and bake for 20 mins. Cool on wire racks. Will keep for up to 4 days in an airtight container.
