VALENTINE'S DAY STRAWBERRY MUFFINS



Valentine's Day Strawberry Muffins image

These muffins get their name from the sliced strawberry on top that resembles a heart. Perfect for Valentine's Day or when you have too many strawberries.

1 tablespoon lemon juice
1 cup milk
½ cup butter, at room temperature
1 ½ cups white sugar
4 large eggs
2 teaspoons lemon extract
½ teaspoon lemon zest
1 ½ cups chopped fresh strawberries
3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup miniature semisweet chocolate chips
12 slices fresh strawberry
1 tablespoon white sugar

Steps:

  • Mix lemon juice with as much milk as needed to measure 1 cup; let the soured milk stand for 5 minutes before using.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Line 24 muffin tins with paper liners.
  • Cream together the butter and 1 1/2 cups sugar in a large bowl.
  • Beat in the eggs, one at a time; add the lemon extract.
  • Gradually stir in the lemon zest and soured milk.
  • Gently fold in the chopped strawberries.
  • Mix the flour, baking powder, baking soda, and salt together in another bowl.
  • Stir the butter mixture into the flour mixture until dry ingredients are just moistened.
  • Fold in the chocolate chips.
  • Spoon batter into prepared muffin cups to about 2/3 full.
  • Place a strawberry slice atop each muffin and sprinkle with some of the 1 tablespoon white sugar.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 25 to 30 minutes. Cool in the pans for 5 minutes before serving warm.

This is a no-bake recipe that anyone can make for their loved ones, especially with the St. Valentine Day just around the corner.

1/2 lb vanilla wafer
1/2 lb shortbread cookie
3 tablespoons sour cream
1 baked beet, juiced
1/2 cup sugar
1/2 cup dry poppy seed (optional)
1 tablespoon rum (for adult version) or 1 tablespoon liquor (for adult version)

Steps:

  • Break wafers and cookies into the medium size pieces to fit into the blender. Pulse a few times till the crumbs are uniform. Transfer mixture to the bowl and add the sour cream. Add rum or your favorite liquor for an adult version.
  • Take 1 table spoon of mixture, warm it up in your hands like you would a play-dough and shape it into a strawberry or just make a ball.
  • Arrange 3 bowls: one with the beet juice, one with the sugar and last with the poppy seeds. Then dip into the beet juice to get that nice bright color and drench into sugar and poppy seeds mixtures.
  • Place on a flat surface or a cooling rack the dry. Refrigerate for an hour before serving. Decorate with mint leaves.

8 ounces pink candy melts
8 ounces white candy melts
8 ounces bright pink candy melts
24 large fresh strawberries
sprinkles as needed (optional)

Steps:

  • Line a baking sheet with parchment or wax paper.
  • Microwave candy melts in separate bowls, 1 bowl at a time, stirring every 30 seconds, until melted.
  • Dip strawberries into desired color of candy melts. Let excess candy drip off, then set on the prepared baking sheet. Drizzle with another color of candy melts. Top with sprinkles. Chill strawberries until set, at least 15 minutes and up to 2 days.
