VAIL HOUSE PASTA
A delicious linguini pasta infused a creamy alfredo sauce, cherry tomatoes, yellow bell peppers and artichokes.

Steps:
- Cook and chop chicken breast. Set aside.
- Wash and cut cherry tomatoes and yellow bell peppers. Set aside.
- And a large frying pan add chicken, one jar of artichokes, cherry tomatoes, yellow bell peppers, and 1/4 Celsius olive oil. 2-4 tablespoons parsley (if your using fresh herbs less is better). Cook on low until the tomatoes have cooked down and the bell peppers are tender but still a little crisp.
- In a large sauce pan combine heavy whipping cream and half a cup of butter. When they start to lightly boil add flour until the desired thickness is achieved. (Make sure you sift the flour in so to not created large globs of flour in the mixture). When desired thickness is achieved add 1-2 cups of freshly grated parmesan cheese to preferred taste.
- Pour both the mixtures from the frying pan and sauce pan over freshly cooked linguini and mix well. I serve this with a little parmesan cheese on the top and a crusty bread.

Steps:
- In a saucepan whisk together the broth with flour, garlic powder and a pinch cayenne pepper until smooth.
- Mix in cream cheese spread, 4 tablespoons Parmesan cheese and pinch nutmeg until smooth, bring to a simmer and cook about 3 minutes whisking/mixing continuously until combined, thickened and heated through.
- Mix in remaining 2 tablespoons parmesan cheese.
- Season with black pepper to taste.
- Serve over cooked pasta.

ITALIAN SAUSAGE, PEPPERS AND PASTA
Although the sauce used is a jarred sauce the outcome is a Chunky, robust flavored pasta sauce, that is slow cooked for that unique homemade taste. My husband got this recipe from an Italian co-worker.

Steps:
- Slice Italian Sausage to 1/2 inch slices.
- Heat pan with 1 tbl olive oil on medium heat and saute sausage until cooked and brown. Place sausage onto paper towel to drain.
- In same pan heat 1 tbl of olive oil on medium heat and saute peppers, garlic and mushrooms for 2 - 4 minutes.
- In large sauce pan combine pasta sauce, sausage, peppers, mushrooms, garlic, red pepper, oregano,.
- cook on med-low heat for 1 1/2 hour stirring occasionally.
- Use your favorite pasta and cook according to instructions.
- Drain pasta, serve on plate and top with sauce. YUMMY!

EASY MICROWAVE CREAMY ALFREDO SAUCE
This is a rich sauce made very simply in the microwave. Dinner can be on the table in just a few minutes if using fresh pasta. I acquired this recipe many years ago from our local newspaper.

Steps:
- In a 1 quart dish, micro-cook cream and butter at high for 2-3 minutes or until very hot. Stir in parmesan cheese and pepper and toss with hot cooked pasta.
- I usually top with fresh parsley to dress it up.
- Variations: Mushrooms, tomatoes, broccoli, shrimp and/or chicken can all be added but must be cooked before hand.

- Heat skillet on low, melt the cream cheese and the butter together, with garlic.
- Stir in milk slowly until thickened. Add the parm and stir it until cheese is melted and no longer stringy. Serve over Fettucine noodles.
