During July, the traditional Norwegian Holiday season, German and Nordic-style cakes and pastries, such as sponge cakes and Danish pastry (known as "wienerbrød", literal translation: "Viennese bread") share the table with a variety of home made cakes, waffles and cookies.

5 eggs
1/4 cup sugar
1 cup flour
1 teaspoon lemon juice, fresh
1/2 teaspoon lemon peel (freshly grated)
1 cup sour cream
1/4 cup butter

Steps:

  • Beat eggs and sugar until thick and fluffy, about 10 minutes.
  • Alternately fold in the flour, which has been sifted with lemon peel, and sour cream.
  • Stir in the butter and lemon juiceand set batter aside to rest 10-15 minutes.
  • Heat heart-shaped waffle iron. It is hot enough when drops of water sprinkled on its surface sputter.
  • Pour approximately 3/4 cup batter into the center of the iron.
  • Lower cover and bake until the steaming stops, 30-60 seconds on each side.
  • Do not peek during baking period.
  • Makes 6 waffles.

Waffles are definitely a weekend breakfast treat - this recipe comes from Christine Cushing. Adding the softly whipped egg whites to the batter will make the waffles nice and fluffy. Serve with pure Canadian maple syrup, fresh berries & whipped cream or pair with blueberry sauce (#78222)...to use Christine's words...wicked! Prep time includes "standing", cook time & # of servings has been estimated - it depends on your waffle iron.

1 3/4 cups all-purpose flour, sifted
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 lemon, zest of, grated
1 3/4 cups 2% low-fat milk, at room temperature
1/4 cup melted butter
3 eggs, separated, at room temperature
2 tablespoons icing sugar

Steps:

  • Sift together the flour, baking powder, baking soda and salt into a bowl.
  • Stir in the lemon zest.
  • In another bowl, whisk together the milk, melted butter and the egg yolks until smooth.
  • Make a well in the dry ingredients and gradually stir in the wet until just combined.
  • Do not continue to stir.
  • Cover with plastic wrap.
  • Let stand covered, about 30 minutes.
  • Preheat waffle iron according to manufacturer's instructions.
  • In a clean, dry bowl whisk the egg whites until fluffy.
  • Gradually add the icing sugar while continuing to beat until whites hold soft peaks.
  • Fold gently into batter.
  • Ladle batter into prepared waffle iron and cook according to manufacturer's instructions.

1/2 teaspoon grated lemon peel
1 cup sour cream
1/4 cup butter, softened
1 teaspoon lemon juice

Steps:

  • Preheat your waffle iron; grease, if necessary.
  • In a mixing bowl, beat the eggs and sugar together well.
  • Mix the flour, lemon peel and sour cream together then gradually mix in to the eggs/sugar.
  • Stir in the butter and lemon juice.
  • Pour about 3/4 cup of the mixture into the preheated waffle iron. Bake according to your waffle iron's directions.
  • Serve w/ butter/syrup/powdered sugar.

I have several recipes for waffles but I always come back to this one. I only use NATRON in my waffles but I have substituted NATRON with baking soda in this recipe. I think both NATRON and SOURED MILK is hard to find in the US. Norwegians always use a 5-heart iron to make waffles but it's no requirement. Serve them warm with any topping your heart desires.

2 eggs
1/4-1/3 cup sugar
1 teaspoon vanilla
1/4 cup melted butter
1 teaspoon baking soda
2 cups soured milk
2 cups flour

Steps:

  • Stir baking soda into 1 cup soured milk.
  • Melt and cool the butter.
  • Whisk together eggs, sugar and vanilla.
  • Whisk in melted, cooled butter.
  • Add in flour and baking soda/soured milk. Stir.
  • Add the rest of the soured milk. You might need to add a bit extra but the batter should be pretty thick.
  • You should make the waffles right away but you can keep the batter in the fridge until the next day.

6 tablespoons granulated sugar
2 teaspoons baking soda
1/2 teaspoon salt
2 eggs
1 cup buttermilk
1 teaspoon pure vanilla extract
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
6 tablespoons unsalted butter, melted
1 cup vanilla yogurt

Steps:

  • Preheat waffle iron.
  • Place flour, sugar, baking soda, and salt in mixing bowl and stir to combine.
  • In a second bowl, whisk eggs, buttermilk, and vanilla until blended. Stir wet mixture into dry ingredients. Stir in lemon juice and zest. Fold in melted butter and then vanilla yogurt with a rubber spatula or wooden spoon. Let batter rest a few minutes before using.
  • Pour batter onto the center of the lower grid. Allow batter to spread toward edges for 5 seconds. Close lid of waffle iron and cook according the waffler instructions. Repeat with remaining batter.
  • For best results, serve immediately.
  • Variations:
  • For lemon ginger waffles, add 1 tablespoon of grated fresh ginger to the batter with the juice and zest. For lemon blueberry waffles add 1 cup of blueberries to the batter as the last ingredient.

BESTEMOR'S NORWEGIAN WAFFLES



Bestemor's Norwegian Waffles image

This recipe is not for the calorie conscience people. My Bestemor used to make these in a waffle maker that she would open with a pickle fork. We wouldn't DARE eat them with syrup (as they're sweet enough) however, we would eat them with home made strawberry jam. The aroma of cardamom is amazing. If I want to get my children out of bed - I simply make a batch of Bestemor's waffles.

From "Cooking the Norwegian Way", the only changes I made was to use plain yogurt instead of sour cream, I left butter the way it was though I use Earth Balance. You can also try subbing half the flour for whole-wheat flour or just use whole-wheat pastry flour to get flakier waffles. Norwegian waffle irons also make heart-shaped waffles! My Powerpuff Girls waffle iron makes cool swirly-shape ones.
