The very best crustless quiche (Impossible Quiche!) image

This is the VERY BEST crustless quiche! It's known as Impossible Quiche in Australia! Added flour sinks to the bottom during cooking, creating a thin pancake-y crust. You can either add caramelized onions and mushrooms, ham and cheese, like I've stated in the recipe below, or you can keep things super simple and add raw finely chopped veggies like onions, peppers and tomatoes.

1 onion (sliced thinly)
1 tablespoon butter (for cooking)
5 ounces mushrooms ((around 4 medium mushrooms))
3½ ounces ham (chopped)
1 cup grated cheese ((strong cheddar cheeses or similar work well))
½ cup self-raising flour
1½ cups milk
4 eggs (lightly whisked)
2 teaspoons mustard ((I usually use wholegrain, but any mustard works))
salt & pepper (to taste)

Steps:

  • Preheat the oven to 390F / 200C.
  • Melt the butter in a large frying pan or saucepan, then cook the onions slowly for about 10 minutes or until soft and beginning to caramelize.
  • Add the mushrooms to the onions in the pan and cook for a further couple of minutes.
  • Grease a standard quiche dish (or other round pan) with a little butter, then spread the onions and mushrooms evenly over the bottom. Scatter over the chopped ham and cheese.
  • Slowly add the milk to the flour in a large jug. Whisk continuously so that there are no lumps, then whisk in the eggs, mustard, and salt and pepper.
  • Pour the egg mixture over the fillings in the dish/pan, then bake for 30 (to 40) minutes or until the mixture is just cooked in the centre. Slice and serve!

I don't use recipes, I just cook what sounds good & this worked well. Adjust according to your tastes & you will love it! I make it in my "ready, set, go" cooker for individual servings for work. :)

1/2 cup(s) milk
3 - eggs
1 teaspoon(s) garlic powder
1/2 can(s) spinach
1/2 can(s) mushroom pieces
1/2 can(s) black olives (slices or chopped)
1/8 cup(s) choice of cheese
3 slice(s) bacon bits
1/8 cup(s) anything else you might like
1 can(s) refrigerated crescent rolls

Steps:

  • Mix eggs, milk, garlic powder. Add spinach, mushroom, black olives, & bacon & blend thoroughly. Add remaining and additional items. Spray baking dish with Pam & pour mixture into dish. Lay 1 layer of crescent roll dough on top & bake. You can sprinkle shredded cheese on top before/after baking.
  • If cooking in traditional oven, allow at least 25 minutes for cooking (make sure eggs are done). If using "ready, set, go" takes about 15 min if using full area.
  • Can pre-prepare basic & add items according to individual tastes in a large family or party situation.

Whatever your perception of fruit cake is, turn it upside down and inside out, because this is not the rock-hard loaf that's been passed around since times eternal. This version includes all the best of the classic ingredients-brandy, dried fruit, nuts, molasses and warming spices-just rejiggered into a cake that's soft, tender-crumbed and completely irresistible, if we do say so ourselves. It begins by combining dried cherries, apricots and pecans with melted butter and brown sugar. These ingredients go into the pan first and get topped with batter, because this fruit cake is also an upside-down cake. When it's turned out of its pan, the fruits and nuts are glossy, gooey and caramelized, which makes this cake so pretty that it really only needs a dollop of whipped cream to be complete. If you're ready to turn tradition on its head, give this modern take on fruit cake a try!

1/3 cup butter, melted
1/3 cup packed brown sugar
1 tablespoon water
1/3 cup chopped dried apricots
1/3 cup chopped dried cherries
1/3 cup chopped pecans
1 cup Gold Medal™ all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon salt
1/3 cup butter, softened
1/2 cup packed brown sugar
1 tablespoon molasses
2 eggs
1/2 cup milk
1 tablespoon brandy

Steps:

  • Heat oven to 350°F. Spray 9-inch round cake pan with cooking spray; line bottom with cooking parchment paper.
  • In medium bowl, stir 1/3 cup melted butter, 1/3 cup brown sugar and the water until well blended. Stir in dried fruit and pecans to coat evenly. Pour into pan, and spread in an even layer; set aside.
  • In small bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt; set aside. In large bowl, beat 1/3 cup softened butter and 1/2 cup brown sugar with electric mixer on medium speed, scraping bowl occasionally, about 1 minute or until fluffy. Beat in molasses. Beat in eggs, one at a time, until smooth. In small bowl, mix milk and brandy. On low speed, beat in one-third of the flour mixture, then half of milk mixture, beating well after each addition, just until smooth. Repeat with flour mixture and milk, ending with flour mixture. Scrape side of bowl occasionally. Pour and spread batter over dried fruit mixture in pan. Tap cake pan on counter 2 to 3 times to eliminate air bubbles from batter.
  • Bake 29 to 33 minutes or until toothpick inserted in center comes out clean. Run knife around side of pan to loosen cake. Cool pan on cooling rack 5 minutes. Place heatproof serving plate upside down over pan; turn plate and pan over. Remove pan. Cool 30 minutes before serving.
  • Cut into wedges. Store loosely covered in refrigerator.
