3 tablespoons butter
1/3 cup packed dark brown sugar
2 medium Bosc pears, peeled and thinly sliced
CAKE:
1/2 cup 2% milk
1 tablespoon cider vinegar
1 large egg, room temperature
1/2 cup packed dark brown sugar
1/3 cup molasses
1/4 cup butter, melted
1-1/4 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon ground cloves
Whipped cream, optional

Steps:

  • Preheat oven to 350°. In a small saucepan, melt butter over medium heat; stir in brown sugar. Spread over bottom of a greased 9-in. round baking pan. Arrange pears over top., For cake, mix milk and vinegar; let stand 5 minutes. In a large bowl, beat egg, brown sugar, molasses, melted butter and milk mixture until well blended. In another bowl, whisk flour, cinnamon, baking soda, ginger, salt and cloves; gradually beat into molasses mixture. Spoon carefully over pears., Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool 10 minutes before inverting onto a serving plate. Serve warm or at room temperature with whipped cream, if desired.

1/2 cup butter, melted
1/3 cup packed brown sugar
1 can (8 oz) pineapple slices in juice, drained, 1/4 cup juice reserved
1 1/4 cups all-purpose flour
1/2 cup granulated sugar
1 teaspoon ground ginger
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 cup molasses
1/4 cup milk
2 eggs
1/2 cup whipping cream, whipped
8 maraschino cherries with stems

Steps:

  • Heat oven to 350°F. In 9-inch round pan, mix 2 tablespoons of the melted butter and the brown sugar; spread evenly to cover bottom of pan. Cut pineapple slices in half; arrange 4 halves over brown sugar mixture in center of pan. Cut remaining halves in half again; arrange pieces around edge of pan.
  • In large bowl, mix flour, sugar, ginger, baking soda, cinnamon, nutmeg and salt. With spoon or wire whisk, beat in remaining 6 tablespoons melted butter, 1/4 cup reserved pineapple juice and all remaining gingerbread ingredients until smooth. Spoon batter carefully over pineapple; spread to cover.
  • Bake 30 to 35 minutes or until toothpick inserted in center comes out clean.
  • Run knife around side of pan to loosen. Place heatproof serving plate, upside down, over pan. Turn plate and pan over; remove pan. Cut into wedges. Serve with whipped cream and cherries.

1/2 lb plain flour
2 teaspoons ground ginger
1 teaspoon baking powder
1 teaspoon baking soda
3 1/2 ounces light brown sugar
3 ounces unsalted butter
4 fluid ounces golden syrup or 4 fluid ounces light corn syrup
5 fluid ounces milk
2 eggs, lightly beaten
2 oranges, zest only
2 ounces dried apricots, finely chopped

Steps:

  • Grease and line a deep 7-inch square cake tin.
  • Sift the flour, ginger, baking powder and bicarbonate of soda together.
  • Place sugar, butter, syrup and milk in a pan and warm gently until melted and blended.
  • Do not boil.
  • Add to the flour with the eggs and mix thoroughly.
  • Stir in orange zest and apricots.
  • Turn into the baking tin and bake at 325ºF for 60-65 minutes or until firm to the touch.
  • Turn out and cool.
  • The flavour of this cake improves with age.
  • Store in an airtight container for 2-3 days before serving.

1/3 cup packed brown sugar
1/4 cup dark corn syrup
3 tablespoons butter, melted
2 medium pears, peeled and thinly sliced
1 package (14-1/2 ounces) gingerbread cake mix
2 tablespoons crystallized ginger, finely chopped

Steps:

  • Preheat oven to 350°. In a small bowl, mix pecans, brown sugar, corn syrup and butter. Pour into a greased 8-in. square baking pan. Arrange pear slices over pecan mixture, overlapping slightly., Prepare cake mix according to package directions, folding ginger into batter. Pour over pears. Bake 55-60 minutes or until a toothpick inserted in center comes out with moist crumbs. Cool 10 minutes before inverting onto a serving plate. Serve warm.

1/4 c melted butter
1/2 c packed brown sugar
2 can(s) (14 oz.ea.) sliced peaches, drained - or - 4 cups sliced peeled fresh peaches
CAKE:
2 c all purpose flour
2 tsp baking soda
1/2 tsp salt
1 Tbsp ground ginger
1 tsp ground cinnamon
1/2 c molasses
1/2 c boiling water
1/2 c butter, softened
1 c packed brown sugar
1 egg

Steps:

  • 1. In a small bowl, combine butter and brown sugar. Spread over bottom of a lightly greased slow cooker stoneware. Arrange peaches on top.
  • 2. CAKE: In a bowl, mix together flour, baking soda, salt, ginger and cinnamon. In a separate bowl, combine molasses and boiling water. In a mixing bowl, using an electric mixer if desired, beat butter and brown sugar until smooth and creamy. Beat in egg until incorporated. Add flour mixture alternately with molasses mixture, beating well after each addition. Pour batter over peaches.
  • 3. Place tea towels over top of slow cooker stoneware. Cover and cook on HIGH for 3 hours or until a toothpick inserted in center of cake comes out clean. When ready to serve, slice and invert onto plate. Top with vanilla ice cream.
  • 4. NOTE: To prevent accumulated moisture from dripping on the cake batter, place two clean tea towels, each folded in half (so you will have four layers), across the top of the slow cooker stoneware before covering. The towels will absorb the moisture generated during cooking.
