HAWAIIAN HAY STACKS
This is such a yummy recipe, something I picked up at college! I loved it then and my husband loves it now!

Steps:
- *Heat up ingredients separately and keep in separate bowls, it's more of a buffet style meal*.
- -Cook rice and set aside.
- -In large sauce pan heat up cream chicken soup. Add sour cream and chicken broth, mix well. Add more chicken broth if soup mix is still to thick. Add chicken to mixture. Set mixture aside once heated.
- -Heat up peas and corn separately in microwave I just use the ones in a can.
- -Place rice on plate, scoop some chicken/soup mixture over rice, layer some peas, layer some corn, layer some olives, layer some pineapple and top with chow mien noodles. Enjoy!

EASY POT ROAST FOR OVEN OR CROCK POT

Steps:
- Preheat oven to 325°F.
- Season roast heavily with salt and pepper. Heat oil in a dutch oven. Sear roast for a couple minutes on each side over medium-high heat. The roast should be nicely browned on all sides. Transfer roast to large plate.
- Add onion and garlic to the pot, stirring over medium heat until onions are soft. Stir in flour and tomato paste followed by broth, water and Worcestershire sauce. Stir and scrape seared bits from bottom of pot. Add roast back to pot, cover tightly and place in oven. (Optional: use a slow cooker instead of the oven. Sear beef in heavy bottom sauté pan, follow instructions above then transfer to slow cooker, low for 6 to 7 hours until tender.).
- Cook for 2 hours, turn roast, add rosemary and cook approximately one more hour, until completely tender.
- Transfer roast to cutting board and tent with foil. Remove rosemary and, using a ladle, skim fat from liquid. Place dutch oven on stovetop and bring to a boil.
- Slice roast against the grain or pull in bite-size pieces. Serve with reduced sauce.

- Melt the margarine and sugar in 8-inch baking dish (I do this in the microwave -- quicker and less mess).
- Add pineapple and cinnamon.
- Top with biscuits.
- Bake at 425* for 20 minutes or until done.
- Pour a big glass of milk and enjoy!

BREAKFAST UPSIDE DOWN CAKE
A mixture of all things good about breakfast. Potatoes, bacon, cheese and eggs are baked into one easy to make dish. It presents beautifully and is excellent for company.

Steps:
- Heat olive oil in a large skillet over medium heat. Add potatoes, red bell pepper, garlic and onion, and cook, stirring occasionally until potatoes are tender. Cover the pan with a lid for faster cooking.
- Preheat the oven to 350 degrees F (175 degrees C). Line the bottom of an 8 or 9 inch cake pan with parchment paper. Set aside.
- Fry bacon in a skillet over medium heat, or cook in the microwave, until crisp. Drain, crumble and set aside. Sprinkle the cheese in the bottom of the prepared pan. Sprinkle bacon crumbles evenly over the cheese. Scoop the potato mixture into the pan so it is evenly distributed. Whisk together eggs and milk with a fork, and season with a little salt and pepper. Pour evenly over the food in the pan.
- Bake for 20 minutes in the preheated oven, just until the egg is set. Remove from the oven and run a knife around the outer edge. Flip onto a serving plate, and remove the parchment paper. Serve and enjoy.
