East meets West in this spin on my basic burger recipe. It's all about the soy ketchup!

3/4 cup tomato ketchup
3 tablespoons low-sodium soy sauce
1 1/2 tablespoons hoisin sauce
Juice of 1 lime
3/4 cup rice wine vinegar
1 tablespoon superfine sugar
1 red onion, 1/2 minced, 1/2 sliced into rings
1 pound 85 percent lean ground beef chuck
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
3/4 cup grated sharp cheddar
1 tablespoon canola oil
4 sesame hamburger buns
1 cup spinach leaves

Steps:

  • In a small bowl, combine all ketchup ingredients together. Cover and refrigerate.
  • In a separate small bowl, mix vinegar and sugar until sugar is dissolved. Add sliced onion and set aside to pickle.
  • In a large bowl, combine the beef, salt, pepper, cheddar, and minced onion, using your hands.
  • Mix well. Mold 4 patties using your hands; do not press patties too tightly together, as you want moist, juicy burgers.
  • Add the tablespoon of canola oil to a nonstick skillet over medium-high heat. Cook 4 patties 3 to 4 minutes each side. While burgers are cooking, toast the burger buns in a toaster or under the broiler about 30 seconds to 1 minute, until golden.
  • STOP! WHILE BURGERS COOK, CLEAN BOWLS.
  • Divide spinach among 4 bun bottoms, top each with a burger patty, pickled onion and 1 tablespoon of soy ketchup and the bun top.

1 teaspoon seasoned salt
1 teaspoon black pepper
6 slices of cheese
6 hamburger buns, toasted
1 pound button mushrooms, sauteed
Condiments of your choice

Steps:

  • In a bowl, combine ground beef, Soy Sauce, sugar, seasoned salt and black pepper. Form into 6 patties, cook on skillet or grill to desired doneness. Add cheese to the cooked burger and serve with desired condiments.

Korean Cheeseburgers With Sesame-Cucumber Pickles image

These double-stacked cheeseburgers bring all the savory-sweet flavors of grilled Korean barbecue. A garlicky scallion marinade helps build flavor three different ways: stirred into burger mix, brushed on the patties to form a glaze, and combined with mayonnaise to create a special sauce. The burgers are formed into thin patties, set on a baking sheet and broiled for maximum caramelization and weeknight ease. Roasted sesame oil rounds out tangy pickles and bolsters the burger with extra umami.

2 teaspoons distilled white vinegar
Kosher salt and black pepper
2 tablespoons plus 1 teaspoon turbinado sugar
2 large Persian cucumbers, sliced 1/8-inch-thick
1/4 cup low-sodium soy sauce
2 tablespoons chopped scallions
2 teaspoons minced garlic
1/2 cup mayonnaise
2 1/2 teaspoons roasted sesame oil
1 1/2 pounds ground beef (preferably chuck or sirloin)
4 slices American cheese
4 hamburger buns
Butter lettuce, sliced onions and sliced tomatoes, for serving

Steps:

  • In a medium bowl, combine vinegar, 1 teaspoon salt and 1 teaspoon sugar, stirring to dissolve the sugar. Add cucumbers and toss to coat, then let stand at room temperature.
  • Heat broiler to high and set oven rack set 6 inches from heat. In a small bowl, combine soy sauce, scallions, garlic, 1/2 teaspoon pepper and remaining 2 tablespoons sugar. Mix well, stirring until the sugar is dissolved. Transfer 1 tablespoon of the marinade to a small bowl and stir in mayonnaise and ½ teaspoon sesame oil. Set aside.
  • In a medium bowl, combine beef and 3 tablespoons of the scallion marinade. Gently mix to incorporate. Form into 8 thin patties (each about 4 ½ inches wide) and arrange in a single layer on a rimmed baking sheet. Brush tops with half of the remaining marinade. Flip and brush with the remaining marinade. Broil until golden and caramelized on top, about 4 minutes.
  • Arrange cheese on 4 patties, top with the remaining patties and let stand until cheese melts, about 1 minute.
  • Pour off all the liquid from the cucumbers and stir in the remaining 2 teaspoons sesame oil.
  • Smear the cut side of the buns with some of the seasoned mayonnaise. Arrange bottom buns on plates. Layer with lettuce, onion, tomato, double-stack burgers, pickles and top bun. Serve with extra pickles on the side.

  • For the pickled shiitake mushrooms, soak the shiitake mushrooms in boiling water until softened for 3-5 hours. Lift the mushrooms from the steeping liquid (reserve the liquid), discard the stalks and cut the caps into 3mm slices. Strain and reserve 50ml of the steeping liquid, then pour into a small pan. Add the mushroom caps, caster sugar, soy sauce, cider vinegar and root ginger. Bring to a simmer and cook for 30 minutes, stirring occasionally, then remove from the heat and leave to cool. Strain into a sterilised jar (discarding the ginger). Seal and leave in the fridge to pickle for at least an hour (although they’re better after 1 week).
  • For the Gentleman’s relish butter, put the anchovy fillets, butter, cayenne pepper, nutmeg, black pepper and ground cinnamon with the lemon juice, Worcestershire sauce and water into a blender or food processor and whizz until smooth. Put a sheet of cling film onto the work surface and spoon the butter along the edge nearest you, then use the cling film to roll it into a tight log, twisting the ends to seal. Chill in the fridge for an hour, or until firm, before using.
  • Heat the oven to 110°C/90°C fan/gas ¼. Put the tomato slices on a baking tray and cook for 4 hours to dry out, turning halfway. Set aside.
  • Next, make the parmesan tuiles: turn the oven up to 180°C/160°C fan/gas 4 and line 2 trays with non-stick baking paper. Grate the parmesan (see tips) into 4 equal round piles. Bake for 5-7 minutes until melted and golden. Remove and leave to cool on the trays.
