If you are watching your carbs and craving pancakes, here is a breakfast you will like. To obtain almond meal, put some almonds in your food processor and pulse them until they are the consistency of cornmeal. Be careful if you over-pulse, you will obtain almond butter :).

1 cup almond meal or 1 cup almond flour
2 eggs
1/4 cup sparkling water (you can use flavored)
2 tablespoons oil
1/4 teaspoon salt
2 (1 g) packets Splenda sugar substitute

Steps:

  • Mix all ingredients together.
  • Cook the batter as you would pancakes, be careful not to burn them as you might not get the regular bubbles.
  • Serve them with sugar-free syrup.

cooking spray

Steps:

  • Combine cream cheese, eggs, sugar, and cinnamon in a blender; blend until smooth. Let rest 2 minutes or lightly tap on counter to remove bubbles.
  • Heat a skillet over medium heat and grease with cooking spray. Pour 1/4 of the batter into the skillet; cook until bubbles start to form, about 2 minutes. Flip and cook until cooked through, about 1 minute. Transfer to a clean plate. Repeat with remaining batter.

Pancakes for the low carb eater. These are perfect for filling the desire for carbs and sweets when you eat them with some butter and No Sugar syrup.

2 tablespoons almond flour
2 tablespoons coconut flour
2 tablespoons protein powder
1/4 teaspoon baking powder
1 dash salt
1 large egg
2 tablespoons heavy cream
2 tablespoons water

Steps:

  • Mix together all the dry ingredients (the first 5).
  • Separately whisk together all the wet ingredients.
  • Mix the two together, add water if needed to get the consistency for the pancakes you prefer (thick or thin).
  • Fry in a skillet. These are a bit different then regular pancakes, and need more time to cook and solidify before flipping. Be careful because they tend to fall apart (no flour and all), so flip carefully.
  • Enjoy with some butter and No Sugar syrup.

Number Of Ingredients 6

1 cup crushed pork rind
2 eggs
1/4 cup cream
3 packages Splenda sugar substitute
1/2 teaspoon cinnamon
1/2 teaspoon vanilla flavoring

Steps:

  • Crush pork rinds (I used my food processor) and set aside.
  • Beat eggs and then fold in cream, Splenda, cinnamon, and vanilla flavoring.
  • Add crushed pork rinds and let the mixture sit for 5 minutes.
  • Meanwhile heat skillet with butter or oil and then fry mixture pancake style.
  • Serve with low carb pancake syrup.
  • Only 6 net carbs for the entire batch!
