This is the Ultimate Nacho Recipe! Crispy chips with melted cheese, ground beef, refried beans, and all of your favorite toppings.

16 ounces tortilla chips
1 pound ground beef
2 tablespoons taco seasoning
1/4 cup water
15 ounce can refried beans
4 cups shredded cheddar cheese
1/2 cup sour cream
1/2 cup guacamole
1/3 cup sliced olives
1/2 cup fresh salsa
1/3 cup roughly chopped cilantro
1/4 cup sliced or pickled jalapenos
1/4 cup diced red onion
1/4 cup sliced green onion

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Heat a large skillet over medium-high heat. Add in ground beef. Use a spoon to break up the meat and cook 8 to 10 minutes until beef is fully cooked through. Drain excess grease. Add in taco seasoning, stir, and cook 60-90 seconds.
  • Pour in water and add in refried beans. Stir to combine and cook until heated through. Keep warm.
  • Spread chips out onto a baking sheet (or other desired oven-safe baking dish including a 9x13 pan, cast iron skillet, or even a pie plate).
  • Sprinkle 2 cups of the cheese over the chips. Dot with the beef and bean mixture. Top with remaining 2 cups of cheese.
  • Bake in the 350 degree oven for 5 to 7 minutes, until cheese is fully melted.
  • Remove from heat and add additional toppings as desired. Serve warm.

This makes a huge meal-sized tray of nachos with lots of good stuff! You can adjust ingredient quantities to suit your preference. Serve with extra chips if required. Great for game day.

1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
¾ cup water
1 (18 ounce) package restaurant-style tortilla chips
1 cup shredded sharp Cheddar cheese, or more to taste
1 (15.5 ounce) can refried beans
1 cup salsa
1 cup sour cream, or more to taste
1 (10 ounce) can pitted black olives, drained and chopped
4 green onions, diced
1 (4 ounce) can sliced jalapeno peppers, drained

Steps:

  • Cook and stir ground beef in a skillet over medium heat until meat is crumbly and no longer pink, 5 to 10 minutes. Drain excess grease. Stir in taco seasoning mix and water and simmer until beef mixture has thickened, 8 to 10 minutes.
  • Set the oven rack about 6 inches from the heat source and preheat the broiler. Line a baking sheet with aluminum foil.
  • Spread tortilla chips on the prepared baking sheet; top with Cheddar cheese and dot with refried beans and ground beef mixture.
  • Broil in the preheated oven until cheese is melted, watching carefully to prevent burning, 3 to 5 minutes.
  • Top nachos with salsa, sour cream, black olives, green onions, and jalapeno peppers.

5 ounces corn tortilla chips
2 cups cheddar cheese, shredded
8 ounces sausage, cooked and crumbled
2 jalapenos, finely chopped
2 ounces sour cream
1 tomatoes, finely chopped
1 avocado, finely chopped

Steps:

  • Preheat oven to 400°F
  • Spread chips on an oven proof plate, top with sausage and cheese.
  • Bake until cheese melts, about 10 minutes.
  • Top with remaining ingredients.

80 corn tortilla chips, approximately 8 oz
3 - 4 jalapenos, thinly sliced*
4 ½ oz diced red onion, approximately 1 cup
6 oz finely grated Cheddar, approximately 2 ¼ cups
6 oz finely grated Oaxaca cheese, approximately 2 ¼ cups
2 Tbsp finely chopped fresh oregano leaves
2 cups fresh salsa
2 cups sour cream
2 cups guacamole

Steps:

  • Set 1 of the oven racks on the lowest shelf and preheat oven to 350ºF.
  • Line a baking pan with parchment paper. Make 8 (2-inch) balls out of aluminum foil. Spray 3 wire cooling racks with non-stick cooking spray and place 1 of the aluminum balls in each of the corners of 2 of the racks.
  • Lay 1/3 of the chips on one of the racks. Top each chip with a jalapeno slice and sprinkle the chips with 1/3 of the red onions, and 1/3 of both the Cheddar and Oaxaca cheeses. Repeat with the remaining chips and the other 2 racks. Stack the racks on top of one another and set into the parchment lined baking pan. Bake in the oven on the bottom rack for 7 minutes or until the cheese begins to bubble. Sprinkle with fresh oregano. Serve immediately with the salsa, sour cream, and guacamole.
