Learn to make delicious, homemade baked crispy taco shells in less than 10 minutes! Fill with all your favorite taco fillings and toppings. So much better (and healthier!) than store-bought.

8 corn tortilla
2 tsp. lime juice (optional)
Salt to taste
Cooking spray

Steps:

  • Preheat the oven to 425 degrees. Spread out the tortillas and microwave until extremely soft and pliable. Depending on your microwave this can take between 1-3 minutes. They should be hot and really pliable when you take them out.
  • You can wrap them in a moist paper towel to make them even softer. Immediately wrap in a towel or place in a ziploc bag to keep them warm. Keeping them soft is the key to not having them break in the oven.
  • Then carefully spray each tortilla with cooking spray on both sides. Sprinkle with lime juice and seasoning if using. Gently drape over the oven grates, pressing down ever so lightly. I press mine over two grates so that the taco shells stand up nicely and have lots of room to press things in.
  • Repeat with remaining shells and then bake for 8-10 minutes until brown and crispy. These can go from perfect to burnt quickly so be sure to keep an eye on them.

You'll never eat a regular taco shell again! So simple to make, and the taste and texture is out of this world!! Since the ingredients are minimal, it really is all about the technique. I prefer to use tongs that have the heat resistant silicone tips (not metal, they tend to break the shells). Shells come out crispy on the outside and chewy on the insdie. Fill with your favorite meat and toppings. I prefer plain old ground beef with taco seaoning, but have also made chicken. 6-8 shells works with about 1 lb. of meat (give or take, depending on how full you like your taco).

6 -8 reser's soft taco-size flour tortillas
1 tablespoon vegetable oil (for frying)

Steps:

  • Heat about 1 tablespoon of oil over high heat in a 12 inch skillet.
  • Once the oil is rippling, drop in the tortilla and flip immediately to ensure even coating of the oil on both sides.
  • After about 30 seconds, bubbles will begin to form on the top. ( I usually break these with my tongs).
  • Check the underside for desired crispiness, flip.
  • Once the other side begins to brown/crisp, fold the tortilla into a taco shape, and contiue to cook for about 30 seconds longer.
  • Drain on paper towels.

  • Fill a small skillet with vegetable oil until it is 1/2 inch up the sides. Heat the oil over medium-high heat until hot, about 7-10 minutes. Test the oil by putting the tip of a corn tortilla in the oil, if it bubbles a lot, it's ready.
  • When the oil is hot, carefully place 1 corn tortilla in the hot oil for a second. Using tongs, take half of the tortilla out of the oil while keeping half in the oil. Bend the tortilla in half while it is cooking to make a taco shape. Let half of the tortilla cook in the oil until crisp and bubbly, about 30 seconds.
  • Pull the tortilla out of the oil, and place the uncooked half back in the oil to cook while holding the cooked side out. Keep the tortilla open about an inch with the tongs while it continues cooking so that you can fill it later.
