I am a self-taught candy maker through trial and error. These turtles are a favorite of friends and family.-Carole Wiese, New Berlin, Wisconsin

Number Of Ingredients 8

1 pound pecan halves, toasted
1 can (14 ounces) sweetened condensed milk
3/4 cup light corn syrup
1/2 cup sugar
1/3 cup packed brown sugar
1/4 cup butter, cubed
1-1/2 teaspoons vanilla extract
1 pound milk chocolate candy coating, chopped

Steps:

  • On waxed paper-lined baking sheets, arrange pecans in small clusters of four to five pecans each. , For caramel, in a small saucepan, combine the milk, corn syrup and sugars. Cook and stir over medium heat until a candy thermometer reads 238° (soft-ball stage). Remove from the heat. Stir in butter and vanilla. Working quickly, spoon caramel onto pecan clusters. Let stand until set. , In a microwave, melt candy coating; stir until smooth. Spoon over caramel. Chill for 10 minutes or until set. Store in an airtight container.

1 package (11 ounces) ridged potato chips
1 package (14 ounces) caramels
1/3 cup heavy whipping cream
1 package (11-1/2 ounces) milk chocolate chips
2 tablespoons shortening
1 cup finely chopped pecans

Steps:

  • Arrange whole potato chips in a single layer on a large platter. In a large saucepan, combine caramels and cream. Cook and stir over medium-low heat until caramels are melted. Drizzle over chips., In a microwave, melt chocolate and shortening; stir until smooth. Drizzle over caramel mixture; sprinkle with pecans. Serve immediately.

3/4 cup sugar
6 tablespoons butter, softened
2 oz sweet baking chocolate, melted, cooled
1 cup Gold Medal™ all-purpose flour
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 teaspoon vanilla
6 tablespoons buttermilk
3 tablespoons water
2 eggs
1/2 cup butter
1 bag (14 oz) caramels, unwrapped
1 can (5 oz) evaporated milk
1 bag (11.5 to 12 oz) semisweet chocolate chunks (2 cups)
1/2 cup chopped pecans

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 13x9-inch pan with shortening; lightly flour.
  • In large bowl, beat sugar and 6 tablespoons butter with electric mixer on high speed about 3 minutes, scraping bowl occasionally, until fluffy. Beat in melted chocolate, flour, baking soda, salt, vanilla, buttermilk, water and eggs on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
  • Bake 20 minutes or until toothpick inserted in center comes out clean.
  • Meanwhile, in 2-quart saucepan, heat 1/2 cup butter, the caramels and evaporated milk over medium heat, stirring constantly, until smooth. Spread over hot cake. Sprinkle with chocolate chunks and pecans. Bake 20 minutes longer or until chocolate is melted. Cool completely, about 1 hour 30 minutes.

1 package (14-1/4 ounces) Chocolate Chex
1 cup pecan halves, toasted
3/4 cup packed brown sugar
6 tablespoons butter, cubed
3 tablespoons light corn syrup
1/4 teaspoon salt
1/4 teaspoon baking soda
1 cup semisweet chocolate chips
1 cup Kraft caramel bits
1 cup miniature pretzels

Steps:

  • In a large microwave-safe bowl, mix cereal and pecans. In a 2-cup glass measuring cup, combine brown sugar, butter, corn syrup and salt; microwave, uncovered, on high for 1-2 minutes or until smooth, stirring once., Whisk in baking soda. Pour over cereal mixture, toss to coat. Microwave, uncovered, on high 3 minutes, stirring every minute., Spread onto a parchment paper-lined baking sheet; immediately sprinkle with chocolate chips and caramel bits (do not stir). Refrigerate until chocolate is set. Break into pieces. Stir in pretzels. Store in an airtight container.
