TURKEY WALDORF SANDWICH
I like to make this with holiday leftovers which makes it a snap to make. It's good on both raisin bread and croissants.

- In medium bowl, combine turkey, celery, apple, walnuts, mayonnaise,
- yogurt, nutmeg and cinnamon.
- Cover and refrigerate at least 1 hour or overnight to allow flavors to blend. (Turkey mixture will keep in the refrigerator up to 4 days.)
- To serve, arrange a lettuce leaf on a bread slice. Spoon 3/4 cup turkey mixture over lettuce leaf and top with other bread slice. Repeat with remaining ingredients.

TURKEY WALDORF SANDWICH
I like to make this sandwich from leftover Waldorf Salad after Thanksgiving. It's a little different than the standard leftover turkey sandwich and is really good. Feel free to use lower fat versions of mayo and yogurt if desired. This is also good on croissants if you're not watching the calories.

- In a large bowl mix together the cooked turkey, chopped apple, celery, mayonnaise, yogurt, walnuts, raisins, nutmeg, and cinnamon.
- Cover and refrigerate for about 1 hour. Spoon 3/4 cup onto 4 slices of toasted raisin bread.
- Top with a lettuce leaf and then add the other slice of toasted bread on top.
