"I substituted turkey for pork in this classic Chinese recipe," reports Leigh Lundy of York, Nebraska. "It was a hit at our church potluck. My husband and two children love it, too."

1 pound lean ground turkey
2 medium carrots, thinly sliced
1 medium onion, chopped
1/2 teaspoon garlic powder
2 packages (3 ounces each) chicken ramen noodles
1-1/2 cups water
6 cups shredded cabbage
1 cup frozen peas, thawed
1/4 cup reduced-sodium soy sauce

Steps:

  • In a large skillet, cook and crumble turkey with carrots, onion and garlic powder over medium-high heat meat is until no longer pink, 5-7 minutes., Break up noodles and add to skillet; stir in contents of seasoning packets and water. Bring to a boil. Reduce heat; simmer, covered, 3-5 minutes. Add remaining ingredients; cook and stir until cabbage is crisp-tender, 1-3 minutes.

Vegetable Lo Mein image

This vegetable lo mein is a really simple, versatile and healthy noodle dish. Vegetable lo mein can be a staple vegetarian meal or a meatless Monday dinner!

Number Of Ingredients 15

1 pound fresh white noodles or lo mein egg noodles ((450g))
1 tablespoon dark soy sauce
2 tablespoons light soy sauce
1 teaspoon sesame oil
1 teaspoon sugar ((plus 1 teaspoon hot water to dissolve the sugar in))
Pinch of five spice powder ((optional))
1 tablespoon oil
1 clove garlic ((minced))
1 cup sliced mushrooms ((shiitakes, button mushrooms, or anything you like))
1 scallion ((split at the thick parts and cut into 2-inch lengths))
1 bell pepper ((red, orange, or yellow; julienned))
1 small carrot ((julienned))
1 tablespoon Shaoxing wine
1 cup snow peas ((trimmed))
1 cup leafy greens ((bok choy, choy sum, etc.))

Steps:

  • Boil water in a large pot for the noodles. If using the lo mein egg noodles, you can skip this step, as those noodles do not require any pre-cooking. But if using fresh white noodles, you will have to boil them. Just cook until al dente, drain, and rinse in cold water. Set aside.
  • In a small bowl, combine the soy sauces, sesame oil, dissolved sugar, and five spice powder, if using.
  • Heat 1 tablespoon oil in a wok over high heat and add the garlic, mushrooms, and the white parts of the scallions. Stir-fry for 30 seconds and add the peppers and carrots. Make sure your wok is searing hot, and then add the Shaoxing wine. Stir-fry for another minute.
  • Next, add the snow peas and leafy greens to the wok and cook until the greens are just wilted. Then add your noodles. Make sure that before you add them, they're somewhat loose and not all clumped together (you can rinse them in warm water to loosen them up before adding them to the wok).
  • Pour your sauce mixture over the noodles and stir-fry until the color of the noodles are uniform. A folding or scoop-and-lift motion works well for that. Once everything is well-combined, dish out the noodles and serve.

For the Vegetables:
2 cups fresh mushrooms (cleaned, and cut in half)
1 to 2 stalks celery (cut into 1-inch pieces)
1 red bell pepper (cut into bite-sized pieces)
1/2 red onion (peeled and chopped)
1 cup mung bean sprouts (rinsed and drained)
Optional: 1 clove garlic (chopped)
For the Sauce:
1/2 cup low-sodium chicken broth
1 tablespoon oyster sauce
1 tablespoon dark soy sauce
1 tablespoon cornstarch
For the Noodles:
2 cups noodles
3 to 4 tablespoons cooking oil (for stir-frying, as needed) divided
3 cups cooked turkey meat
Salt to taste
pepper (to taste)

Steps:

  • Gather the ingredients.
  • Mix together sauce ingredients, whisking in cornstarch last.
  • Cook noodles according to package directions.
  • Heat a wok or frying pan over medium-high to high heat.
  • Add 1 tablespoon of oil. When oil is hot, add mushrooms and stir-fry for a minute.
  • Remove from pan, add more oil, and stir fry celery and red bell pepper.
  • Remove from pan, add more oil, and stir fry onion and garlic.
  • Add turkey to pan. Cook for a minute, then add other vegetables back into pan.
  • Stir in bean sprouts.
  • Add sauce.
  • Bring to a boil, add noodles, and mix everything together.

1 cup chopped onion
1 cup shredded carrots
1/2 cup chopped celery
1 tablespoon canola oil
1-1/2 cups crushed saltines (about 45 crackers)
3/4 cup ketchup, divided
1/4 cup minced fresh parsley
1 egg, lightly beaten
4 teaspoons ground mustard, divided
2 teaspoons salt
2 teaspoons minced garlic
1 teaspoon pepper
2-1/2 pounds lean ground turkey
2 tablespoons brown sugar

Steps:

  • In a large skillet, saute the onion, carrots and celery in oil until tender. In a large bowl, combine the onion mixture, cracker crumbs, 1/2 cup ketchup, parsley, egg, 2 teaspoons mustard, salt, garlic and pepper. Crumble turkey over mixture and mix well. , Shape into a loaf. Place in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 1 hour. , In a small bowl, combine the brown sugar and remaining ketchup and mustard until smooth. Spoon over meat loaf. Bake 10-20 minutes longer or until meat is no longer pink and a thermometer reads 160°; drain. Let stand for 10 minutes before slicing.

  • If using dry lo mein noodles or fresh, raw noodles, be sure to follow the directions on the package. For either of these noodle options, you will need to boil and drain them before adding them to a stir-fry. If you’re lucky enough to find them, get the cooked, oiled lo mein noodles that are now readily available from Asian grocery stores. These don’t require pre-cooking, and can be added directly to the wok for stir-frying.
  • In a wok over high heat, add a couple tablespoons of oil to the wok, and add the garlic. After 10 seconds, add the cabbage and carrots. Stir-fry on high heat for a minute and add the wine in a circle around the perimeter of the wok.
  • Add the cooked noodles and the leftover turkey to the wok and mix well from the bottom up for about 30 seconds. If the noodles aren't coming apart, add about ¼ cup water to loosen them up a bit.
  • Add the soy sauce, dark soy sauce, sesame oil, and sugar. Stir-fry for 30 seconds, and add the scallions. Stir-fry for one more minute and serve.
