Tofu Turkey I image

A vegan alternative especially good for Thanksgiving dinner! Serve with a vegetarian gravy and all the fixings. Enjoy!

5 (16 ounce) packages extra-firm tofu
2 tablespoons sesame oil
1 red onion, finely diced
1 ⅓ cups diced celery
1 cup chopped mushrooms
2 cloves garlic, minced
⅛ cup dried sage
2 teaspoons dried thyme
salt and pepper to taste
1 ½ teaspoons dried rosemary
¼ cup tamari
3 cups prepared herb stuffing
½ cup sesame oil
¼ cup tamari
2 tablespoons miso paste
5 tablespoons orange juice
1 teaspoon honey mustard
½ teaspoon orange zest
3 sprigs fresh rosemary

Steps:

  • Line a medium sized, round colander with a cheese cloth or a clean dish towel. Place the crumbled tofu in the colander. Place another cheese cloth over the top of the tofu. Place the colander over the top of a bowl to catch the liquid. Place a heavy weight on top of tofu. Refrigerate the colander, tofu and weight for 2 to 3 hours.
  • Make the stuffing: In a large frying pan saute onion, celery and mushrooms in 2 tablespoons of the sesame oil until tender. Add the garlic, sage, thyme, salt and pepper, rosemary and 1/4 cup of the tamari. Stir well; cook for 5 minutes. Add prepared herb stuffing and mix well. Remove from heat.
  • Preheat the oven to 400 degrees F (200 degrees C). Grease a cookie sheet.
  • Combine 1/2 cup sesame oil, 1/4 cup tamari, miso, orange juice, mustard and orange zest in a small bowl; mix well.
  • Remove the weight from the tofu. Hollow out the tofu so that there is one inch of tofu still lining the colander. Place the scooped out tofu in a separate bowl. Brush the tofu lining with a small amount of the miso seasoning. Scoop the stuffing into the center of the tofu shell. Place the leftover tofu on top of the stuffing and press down firmly. Turn the stuffed tofu onto the prepared cookie sheet. Putting the leftover tofu side of the "turkey" (the flat side) down. Gently press on the sides of the "turkey" to form a more oval shape. Brush the tofu turkey with 1/2 of the oil-tamari mixture. Place the sprigs of rosemary on top of the tofu. Cover the "turkey" with foil.
  • Bake for one hour. After one hour, remove "turkey" from the oven and remove the foil. Baste the "turkey" with the remaining tamari-oil sauce (reserving 4 tablespoons of sauce). Return "turkey" to oven and bake another hour or until the tofu turkey is golden brown. Place the tofu turkey on a serving platter, brush with the remaining tamari-oil mixture and serve hot.

16 ounces lean ground turkey (99% Lean)
12 ounces tofu
6 garlic cloves
1 carrot
1 cup celery
1 cup pea pods
1 red pepper
1 yellow pepper
3 cups red cabbage
1 cup spinach
1 (8 ounce) package mushrooms
1/2 cup fat-free chicken broth
1/2 cup white wine
3 cups nonfat yogurt (plain)
1 (8 ounce) package egg noodles
1 1/2 teaspoons salt (lemon pepper)
1 teaspoon sodium-free seasoning
1/2 teaspoon curry powder (hot)
1/4 teaspoon paprika

Steps:

  • Slice garlic very thin, shred carrot, celery against the grain of the stalk and cook turkey meat on medium heat in large skillet for 5 minutes. Cut pea pods in half, chop cabbage and slice peppers. Add to turkey along with chicken broth, seasonings and white wine. Simmer for 5 minutes more. Slice and chop tofu and spinach and slice mushrooms. Add to the skillet and simmer 2 minutes longer. Just prior to serving add three cups of plain, fat-free yogurt heating through. Serve over egg noodles. Enjoy!

1 (12 ounce) package egg noodles
¼ cup salted butter
½ (8 ounce) package fresh mushrooms, thinly sliced
½ cup minced onion
3 cloves garlic, minced
1 pound ground turkey
2 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
2 tablespoons Worcestershire sauce
1 (10.75 ounce) can condensed cream of mushroom soup with roasted garlic
⅓ cup milk
⅓ cup water
½ cup sour cream

Steps:

  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain and keep warm.
  • Meanwhile, heat butter in a large saucepan or deep skillet over medium heat. Saute mushrooms, onion, and garlic until soft, 5 to 7 minutes. Stir in ground turkey and cook until browned and no longer pink, 5 to 7 minutes more. Stir in flour, salt, and pepper; cook for 5 minutes. Mix in Worcestershire sauce.
  • Stir in soup, milk, and water. Bring to a simmer and cook, uncovered, for 10 minutes. Add sour cream and stir until heated through. Serve over egg noodles.

This delicious vegetarian version of stroganoff comes from one of my favorite cookbooks: The Vegetarian Meat and Potatoes Cookbook. It was also suggested that cooked green beans can be added to this at the end with the tofu to add some additional color, flavor and texture. Hope you enjoy this dish as much as I do!

2 tablespoons olive oil
1 lb extra firm tofu, cut into 1/2 inch cubes
1 large yellow onion, chopped
8 ounces white button mushrooms, sliced
1 tablespoon sweet paprika
2 tablespoons flour
1 tablespoon tomato paste
1/4 cup dry white wine
1 1/2 cups vegetable stock (or water) or 1 1/2 cups broth (or water)
1/2 cup sour cream (or tofu sour cream if vegan)
salt and pepper
1 lb cooked noodles (I like no-yolk egg noodles)

Steps:

  • Heat 1 tbsp oil in a large nonstick skillet over medium heat.
  • Add tofu and cook until golden brown on all sides, stirring occasionally, about 7 minutes.
  • Remove tofu from skillet with slotted spoon and set aside.
  • Add remaining 1 tbsp oil to skillet and cook onion until softened, about 5 minutes.
  • Next, add sliced mushrooms and cook until they begin to release their juices, about 1-2 minutes.
  • Stir in paprika and flour and coat onions and mushroom.
  • Be sure to cook for about 1 minute, stirring constantly, in order to remove the raw taste from the flour.
  • Add tomato paste and wine and stir until paprika and flour are well blended into the liquid.
  • Add vegetable stock (or water depending on your choice) and bring entire mixture to a boil.
  • Reduce heat to low, add salt and pepper to taste, and simmer for about 20 minutes.
  • Remove from the heat and whisk in sour cream.
  • Be sure its blended well.
  • Add tofu back to skillet and simmer for about 5 more minutes over low heat until heated through.
  • Serve over hot noodles, and top with additional sour cream if desired.

3 ounces butter
1 garlic clove, Finely Chopped
1 (10 1/2 ounce) can condensed cream of mushroom soup
1/2 teaspoon salt
1 cup sour cream

Steps:

  • Caramelize onion in butter.
  • Boil water. When a rolling boil, cook noodles al dente and set aside.
  • Add and Cook beef with garlic in skillet over medium heat for 8-10 minutes. Stir occasionally, until meat is brown (cooked), drain.
  • Stir in soup and salt. Simmer uncovered 10 minutes.
  • Stir in sour cream; cook until hot. Serve over noodles.

4 tablespoons butter
1 1/2 cups finely chopped onions
4 garlic cloves, minced
1 teaspoon dill
2 teaspoons basil
1 1/2 lbs tofu, cut into 1-inch cubes
2 teaspoons soy sauce
4 cups sliced mushrooms
1/2 teaspoon salt
1/4 teaspoon cayenne
3 quarts water
1 lb dry fettuccine (try the spinach kind)
1 cup sour cream (or plain yogurt)
1/2 cup finely chopped fresh parsley
2 teaspoons poppy seeds

Steps:

  • Melt 2 tbls butter in large frying pan. Sauté the onions, garlic, dill and basil.
  • After 5 minutes add the tofu and continue to cook until tofu is nicely browned.
  • Add soy sauce and stir. Add mushrooms salt and cayenne.
  • Lower heat and cook another 5 minutes.
  • Add sour cream and parsley to mushrooms. Mix well.
  • Melt remaining 2 tbls butter in saucepan and add the poppy seeds.
  • Cook 5-10 minutes. Pour onto noodles and toss.

2 cups frozen cut broccoli
1 tablespoon butter
1/4 cup chopped onion
3 tablespoons all-purpose flour
1 can (10-3/4 ounces) condensed chicken broth, undiluted
2 cups cubed cooked turkey
1 cup sour cream
1 can (4 ounces) sliced mushrooms, drained
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
Hot cooked noodles

Steps:

  • Cook broccoli according to package directions. Drain and set aside. In a 2-qt. microwave-safe dish, melt butter. Add onion; cover and cook on high until tender. Add flour and blend well. Whisk in broth; cook on high for 2-4 minutes or until thickened and bubbly, stirring every minute. , Add remaining ingredients except noodles. 2 cups green beans (steamed and chopped)
1 large red onion (sliced thin)
1 cup chopped mushroom
12 ounces sour cream
3 tablespoons soy sauce

  • Cut tofu into cubes and put in bow with 1 T sol sauce. Stir and let set so tofu absorbs sauce.
