Steps:

  • Combine potatoes, mixed vegetables, onions, celery, parsley and Swanson® Chicken Broth in a large saucepan. Bring to a boil over medium heat; reduce heat, cover, and simmer gently until vegetables are tender, about 10 minutes. Stir in turkey and poultry seasoning.
  • Whisk flour and the half-and-half together until smooth. Stir mixture slowly into the saucepan. Stir until slightly thickened, or until mixture reaches a chowder-like consistency. Add sriracha sauce, salt, and pepper, mixing well.
  • Ladle into soup bowls; garnish with crumbled bacon.

Like most country cooks, I often bake a large ham so that I can use leftovers in tasty dishes like this. Fresh asparagus is wonderful in this soup's creamy broth.

1-1/2 cups cut fresh asparagus (1-inch pieces)
1 medium carrot, julienned
2 tablespoons butter
3 small onions, quartered
2 tablespoons all-purpose flour
1 cup milk
1 cup chicken broth
1 cup cubed fully cooked ham
1 jar (2-1/2 ounces) sliced mushrooms, drained
1 cup half-and-half cream
Salt and pepper to taste
Grated Parmesan cheese, optional
Chopped fresh parsley, optional

Steps:

  • Place asparagus in a large saucepan with enough water to cover; cook until crisp-tender. Drain and set aside. , In a large heavy saucepan, saute carrot in butter for 3-5 minutes; add onions and saute 2 minutes longer or until tender. Stir in flour; gradually add milk. Bring to a boil; boil and stir for 2 minutes. Add broth, ham, mushrooms and reserved asparagus. Reduce heat; add cream. Heat through but do not boil. Add salt and pepper. Garnish with Parmesan cheese and parsley if desired.

1 lb diced cooked turkey
2 teaspoons sage
1 teaspoon black pepper
1/8 teaspoon cayenne pepper (omit for no heat)
1/4 teaspoon garlic powder
1 teaspoon parsley
1/2 teaspoon oregano
1/4 ounce red pepper, minced
3 potatoes, diced
4 asparagus spears
2 cups potato flakes
2 1/2 cups nonfat milk, more maybe necessary to get right consistency
1/2 cup half-and-half (beat on high for several minutes till froth)
1 teaspoon dehydrated onion
1 tablespoon butter
3 teaspoons chicken bouillon or 3 teaspoons chicken broth, for flavor

Steps:

  • Dice the potatoes and microwave for 2-3 minutes with a little water just enough that fork can slide out.
  • Combine first 7 ingredients and mix well.
  • If using fresh onion saute in butter and then add turkey mixture. Stir on medium high for 1 minute and then add asparagus till color begins to change.
  • In sauce pan add milk, potato flakes,half and half, and the chicken soup granules, stir in turkey mixture and simmer on low till soup thickens.
  • If soup mixture is not thick enough add a bit more flakes or less depending on your taste.

With its fabulous flavor delivered up in a wonderfully rich and creamy potato base, this tasty soup is pure creamy comfort in a bowl.

6 slices bacon
1 medium onion, finely chopped
2 cloves garlic, minced
3 c. chicken broth
2 c. leftover mashed potatoes
2 c. shredded or chopped leftover turkey
1/2 tsp. ground sage
1/4 tsp. pepper
1 c. whipping or heavy cream
salt, to taste

Steps:

  • In a Dutch oven or large saucepan, fry bacon until crisp. Drain on paper towels. Crumble and set aside.
  • Drain all but 3 tablespoons bacon drippings from pan.
  • Over medium to medium-low heat, saute onion and garlic in bacon drippings until tender, about 5-6 minutes.
  • Add chicken broth and mashed potatoes to the pan, stirring until potatoes are fully incorporated and no chunks remain. Stir in turkey, sage, and pepper.
  • Bring to a boil over medium-high heat. Reduce heat and simmer for 15 minutes.
  • Add whipping cream. Cook about 3 minutes until heated through; do not allow to boil.
  • Stir in crumbled bacon. Taste, and add up to 1/2 teaspoon salt to taste.
  • Top individual servings with additional crumbled bacon, chopped fresh parsley, and/or chopped green onions, as desired.
  • If you don't have leftover mashed potatoes, cook 3 medium-sized potatoes (about 1 pound in total) to use as the base of the soup. OPTION 1: BAKE - Wash potatoes and pierce several times with a fork. Bake at 400℉ for about 1 hour, or until fork-tender. OPTION 2: MICROWAVE - Place potatoes on a microwave-safe plate and cook for 7 minutes, turning over halfway through cooking. If they're not fork-tender after 7 minutes, microwave in 1 minute increments until done. Let baked or microwaved potatoes stand until cool enough to handle. Then cut in half lengthwise, scoop out the pulp, and use a fork to mash the pulp together with a tablespoon of butter, a pinch of salt and pepper, and a splash of milk. OPTION 3: BOIL - Peel and dice potatoes. Place in a saucepan and add water (or chicken broth) to just cover; add a couple pinches of salt to the water. Cook until fork-tender, about 15 minutes. Drain and mash together with a tablespoon of butter, a pinch of salt and pepper, and a splash of milk.
  • The onions will turn brownish from the bacon drippings when sauteeing, which is fine. Just take care to not burn the onion in the hot drippings.
  • The amount of salt needed will depend a lot on the saltiness of the bacon. There are times I've made this and not added any salt at all, and other times salting at the end of cooking is needed to brighten the flavors.

1 tablespoon cooked turkey, very finely chopped
1 tablespoon turkey skin, very finely chopped
2 tablespoons bacon fat
1 cup onion, coarsely chopped
1 cup mushroom, sliced
1/2 cup marsala wine
2 cups cream
14 ounces chicken broth (one can)

Steps:

  • Preheat a skillet over med-high heat, add bacon fat, when melted add turkey bits and skin.
  • When browned, add mushrooms and onions and saute till lightly browned (keep and eye on it here).
  • Add marsala and scrape up the "brown bits" as its reducing. Cook about 2 minutes.
  • Add cream and broth, continue to simmer until thickened, add turkey and heat through.
  • Serve over noodles or rice or even leftover mashed potatoes, garnish with nutmeg or parsley as desire.

4 tablespoons butter
4 tablespoons flour
1 cup milk, combined with broth
1 cup chicken broth, combined with milk
1/2 cup cheddar cheese (or whatever cheese you like) or 1/2 cup fiesta blend cheese cheese (or whatever cheese you like)
1/2 cup leftover turkey
1 dash marjoram
1 dash garlic powder
1 dash salt
1/2 medium tortilla, sliced

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter in sauce pan over medium heat.
  • Gradually stir in flour. Cook 2-4 minutes.
  • While cooking, place tortilla slices on a cooking sheet. Sprinkle salt on the slices. Bake for 6 minutes.
  • VERY GRADUALLY add milk/broth mixture to the butter and flour roux, stirring constantly until thick.

1 turkey carcass
8 cups water

1 cup sliced carrot
1/2 cup sliced celery (with leaves)
1/2 small peeled cubed rutabaga
1/3 cup pearl barley
4 cups cubed cooked turkey
1/2 cup corn kernel
1/2 cup canned red kidney beans, washed
salt and pepper
2 tablespoons chopped fresh parsley

Steps:

  • Broth---------.
  • Combine onion carrots, bay leaf, peppercorns,parsley stocks, turkey carcass, water, chicken stock and tomatoes, in a stock pot.
