1-1/2 cups water
16 fresh asparagus spears, trimmed
2 egg whites
1 egg
2 tablespoons fat-free milk
1-1/4 cups seasoned bread crumbs
1 package (17.6 ounces) turkey breast cutlets
1/4 cup butter
8 slices deli ham
8 slices reduced-fat Swiss cheese

Steps:

  • In a large skillet, bring water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and pat dry., In a shallow bowl, beat the egg whites, egg and milk. Place bread crumbs in another shallow bowl. Dip turkey in egg mixture, then coat with crumbs. , In a large skillet, cook turkey in butter in batches for 2-3 minutes on each side or until no longer pink. Layer each cutlet with a ham slice, two asparagus spears and cheese. Cover and cook for 1 minute or until cheese is melted. Transfer to a platter; keep warm.

2 teaspoons cornstarch
1/4 cup chicken broth
1 tablespoon lemon juice
1 teaspoon soy sauce
1 pound turkey breast tenderloins, cut into 1/2-inch strips
1 garlic clove, minced
2 tablespoons canola oil, divided
1 pound fresh asparagus, trimmed and cut into 1-1/2-inch pieces
1 jar (2 ounces) sliced pimientos, drained

Steps:

  • In a small bowl, combine the cornstarch, broth, lemon juice and soy sauce until smooth; set aside. In a large skillet or wok, stir-fry turkey and garlic in 1 tablespoon oil until meat is no longer pink; remove and keep warm., Stir-fry asparagus in remaining oil until crisp-tender. Add pimientos. Stir broth mixture and add to the pan; cook and stir for 1 minute or until thickened. Return turkey to the pan; heat through.

1 package (10 ounces) frozen cut asparagus
2 cups cubed cooked turkey or chicken
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/4 cup water
1 can (2.8 ounces) french-fried onions

Steps:

  • In a small saucepan, cook asparagus in a small amount of water for 2 minutes; drain. Place in a greased 11x7-in. baking dish. Top with turkey. Combine soup and water; spoon over turkey. Bake, uncovered, at 350° for 25-30 minutes. Sprinkle with onions. Bake 5 minutes longer or until golden brown.

4 slices turkey breast
2 slices rye bread
4 stalks fresh asparagus, blanched (not canned!)
1 tablespoon thousand island dressing (or more if desired)
2 slices swiss cheese
alfalfa sprout (optional)

Steps:

  • Toast bread and spread slices with 1000 Island dressing.
  • Place a slice of cheese on each slice of bread.
  • Trim asparagus to width of turkey slices.
  • Roll each asparagus spear in a turkey slice.
  • Line one slice of bread with the asparagus/turkey rolls.
  • Top with alfalfa sprouts& the 2nd slice of bread.
  • Put sandwich on a lightly greased griddle and heat until cheese melts.
  • Slice on the diagonal (just my preference).

3 tablespoons vegetable oil
1 large onion, thinly sliced
1/2 teaspoon kosher salt
Freshly ground black pepper
4 (4-ounce) turkey patties
8 slices multi-grain bread
8 slices Monterey Jack or American cheese
2 to 3 tablespoons unsalted butter, softened
Serving suggestion: Cranberry Sauce

Steps:

  • Heat 1 tablespoon of the oil in a large cast iron skillet over medium heat. Add the onion, season with some salt and pepper, and cook until golden, about 7 minutes. Put in a bowl and set aside. Wipe out the skillet and add another tablespoon of oil. Season the turkey patties with salt and pepper, and cook in the remaining oil until well browned, about 3 minutes per side. Remove from the skillet. Wipe out the pan.
  • Divide the onions among 4 bread slices, and top with a slice of cheese, a patty, another slice of cheese, and a slice of bread. Spread the top and bottom of the sandwiches with some butter. Heat the cast iron skillet over medium heat. Cook the sandwiches, in batches if needed, turning once, until lightly browned and the cheese melts, about 2 minutes per side. Halve the sandwiches and serve with cranberry sauce, if desired.
