1 (15 ounce) can garbanzo beans
1/3 cup tahini paste
2 tablespoons harissa
2 tablespoons lemon juice
1/4 teaspoon lemon zest

Steps:

  • Rinse and drain garbanzo beans.
  • Combine all ingredients in a food processor or blender and puree to desired consistency.
  • To thin, add 1 tsp water at a time.

2 medium heads cauliflower, trimmed of leaves, bottom of the stem trimmed away (about 1 1/4 pounds)
2 tablespoons extra virgin olive oil
1 small onion, finely chopped
2 garlic cloves, minced
8 eggs
salt & freshly ground black pepper
1/2 cup parsley, finely chopped
2 teaspoons ground caraway seeds
2 tablespoons parmesan cheese, freshly grated
1/2 teaspoon harissa dissolved in 1 teaspoon water or 1/4 teaspoon cayenne
fresh ground pepper

Steps:

  • Preheat the oven to 350 degrees. Place 1 tablespoon of the olive oil in a 2-quart casserole, preferably earthenware or in a 9-inch cast iron skillet, and brush the bottom and sides of the dish with the oil.
  • 2. Bring a large pot of water to a boil and salt generously. Add the cauliflower and boil gently until very tender, about 15 minutes. If you prefer, you can cut up the cauliflower and steam it for 15 minutes. Using slotted spoons or tongs remove the cauliflower from the water (or from the steamer), transfer to a bowl of cold water and drain. Cut the florets from the stem and mash into little pieces with a fork. You should have about 3 cups.
  • 3. Heat 1 tablespoon of the oil over medium heat in a large, heavy skillet and add the onion. Cook, stirring, until the onion softens, about 5 minutes. Stir in the garlic, stir together for about 30 seconds and remove from the heat.
  • 4. Whisk the eggs in a large bowl. Season with salt and freshly ground pepper to taste. Stir in the cauliflower, onion and garlic, parsley, ground caraway and Parmesan. Make sure the harissa is dissolved in the water if using, and stir in; otherwise stir in the cayenne. Scrape into the casserole dish.
  • 5. Place in the oven and bake 40 minutes, or until set. Allow to cool for at least 10 minutes before serving. In Tunisia these frittatas are served at room temperature, but you can also serve it hot.

EASY ITALIAN-STYLE HUMMUS



Easy Italian-Style Hummus image

I actually like this much better than regular humus/hummus. It doesn't take long to put together, but tastes best if it has sat for at least 6-8 hours or overnight before serving. Cooking time is the time for the food processor.

2 (15 ounce) cans white beans
1 cup grated parmesan cheese
6 tablespoons extra virgin olive oil
2 garlic cloves
1/2 lemon, juice of
cayenne powder, as needed
paprika, as needed
ground black pepper, as needed
salt, as needed
prepared pesto sauce, as desired
toasted pine nuts, as desired
roasted red pepper, as desired
sliced olive, as desired

Steps:

  • Drain 3/4 of the liquid in the cans of beans. Put the beans, cheese, olive oil, garlic and lemon juice in a food processor. Puree.
  • Add cayenne powder, paprika and ground black pepper as desired. Check for salt. Puree again. I usually add at least 1/4 teaspoon cayenne so that it has some kick to it.
  • Remove and let the flavors marry for at least 6-8 hours or overnight in the fridge.
  • Take the dip out of the fridge around 2 hours before serving. I usually spoon it into a pie plate or onto a large plate. Smooth the top of the hummus with the back of a spoon or use a knife.
  • About 30 minutes before serving, garnish the hummus. First I spread prepared pesto sauce on top. You can spread it all over, in an outer circle pattern, spread it on half the hummus, or however you wish.
  • Sprinkle at least 1/2 cup toasted pine nuts on top, or place in the center, or in whatever design you desire.
  • Sliver around 1/4 of a roasted red bell pepper and arrange in a design of your own choosing.
  • Arrange sliced olives around the edge of the plate.
  • All of these garnishes are optional, but the pesto sauce and the toasted pine nuts taste especially good with this.
  • Good served with pita chips or as a sandwich spread.

INDIAN STYLE HUMMUS

A really tasty and exotic party dip. Seriously this dip has so many applications. I like it with pita chips and of course crudites, but I have also used in place of the yolk in a deviled egg or slathered on toast with a slice of avocado...really the possibilities of this hummus are endless. This could be made vegan with olive oil and or firm tofu in place of the dairy. The consistency is a preference, I like it a bit thicker so just keep that in mind if you are altering ingredients.

2 large lemons
1/2 inch fresh ginger, peeled and sliced
1 jalapeno pepper, seeded and sliced (optional)
2 ounces cream cheese or 2 ounces firm tofu
1 cup chickpeas, drained
2 tablespoons toasted sesame seeds
3 tablespoons sour cream
2 tablespoons olive oil
1/2 teaspoon onion powder
1 teaspoon cumin powder, roasted
1 teaspoon salt (to taste)

Steps:

  • Cut the tops of the lemons off and a little off the bottom so the lemons can sit upright. Hollow out the lemons and do this is a bowl to reserve the lemon juice. Place the hollowed out lemons in a plastic Ziploc bag and place in the refrigerator.
  • Toast sesame seeds and set aside. Do the same with the cumin seeds or cumin powder and set aside. To toast cumin powder just place in a small frying pan on medium low heat. When it becomes fragrant, add cumin powder to food processor. I used cumin powder and ended using 1 tablespoon, but I really like cumin flavor.
  • In a food processor,place ginger, jalapeno chilies (optional), cream cheese or tofu, and cooked chickpeas. Blend until smooth. If you are using canned chickpeas, make sure to drain well.
  • Stop food processor and add toasted spices, sour cream (omit if making vegan) oil, onion powder and salt. Blend well. If sour cream was omitted, test consistency and add more oil if it is too thick. The consistency is up to your preference.
  • Once incorporated, add desired amount of lemon juice, but be careful as the mixture can get too runny. Add salt to season.
  • Remove hollowed out lemons from fridge and pipe in the mixture and place filled lemons on a plate.
  • Add garnishes as desired.
