TUNA AND VEGETABLE CASSEROLE

In an attempt to eat healthier, my husband and I have been eating more vegetables and less meats. As a result, I have become more creative coming up with dinner meals. This casserole was delicious, used fresh vegetables I had on hand, and went together very quickly. I topped the casserole with French fried onions. Another option would be more grated cheese or crushed potato chips.

½ (12 ounce) package egg noodles
1 cup 1-inch pieces fresh-cut green beans
1 cup bite-size summer squash pieces
1 cup frozen peas
1 cup sliced carrots
1 teaspoon olive oil
1 cup sliced fresh mushrooms
1 (10.75 ounce) can condensed cream of mushroom soup
⅓ cup 2% milk
1 (7 ounce) can albacore tuna, drained and broken into chunks
½ onion, chopped
½ cup shredded Cheddar cheese
1 tablespoon Worcestershire sauce
salt and ground black pepper to taste
1 cup French-fried onions (such as French's®)

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Combine green beans, squash, peas, and carrots in a microwave-safe glass or ceramic bowl; cook until tender, 3 to 10 minutes. Rinse vegetables with cold water and drain.
  • Heat olive oil in a skillet over medium-high heat; saute mushrooms in hot oil until tender, 5 to 7 minutes.
  • Whisk mushroom soup and milk together in a large bowl; add vegetables, mushrooms, tuna, onion, and Cheddar cheese. Mix in Worcestershire sauce, salt, and black pepper. Pour mixture into a casserole dish and top with French fried onions.
  • Bake in the preheated oven until bubbling, about 20 minutes.

12 ounces of whole-wheat pasta shells (or the pasta of your choice but try to get whole-wheat)
3 (7 ounce) cans albacore tuna, packed in water
1 1/4 cups fresh peas (frozen are also okay but fresh peas are much better)
8 ounces fresh sliced cremini mushrooms (also called Baby Bellas)
1 1/2 cups sharp cheddar cheese
2 (10 3/4 ounce) cans condensed mushroom soup
1 cup milk
1/2 cup olive oil mayonnaise (It's usually called Olive Oil Mayo)
1 medium red onion, chopped
1 cup roasted red pepper, chopped
1 tablespoon salt
3 tablespoons dried herbes de provence
3 tablespoons minced garlic (garlic powder will also suffice if that's all you have)
1 tablespoon mccormick crushed chipotle pepper
1/2 cup grated parmesan cheese
1/2 cup Italian seasoned breadcrumbs

Steps:

  • Preheat oven to 375°F.
  • Cook the pasta in boiling water for 8 minutes. Drain and set aside.
  • In a small bowl, combine the parmesan cheese and Italian bread crumbs and set aside.
  • In a large bowl, combine all of the other ingredients and then stir in the pasta.
  • Pour the mixture into a lightly oiled baking dish (9 x 12 inches) and then spread it evenly.
  • Sprinkle the parmesan and breadcrumb mixture over the casserole.
  • Bake for 45-50 minutes.

1 can cream of mushroom soup
2 cans tuna
1 cup peas
1 cup carrots (diced)
½ onion (diced)
1 stalk celery
2 tbsp oregano or dill
1 garlic clove
1 tsp black pepper
2 tbsp butter or margarine
1 cup whole grain bread - dried and crumbled into breadcrumbs*
Salt to taste

Steps:

  • Preheat oven to 350 degrees
  • Boil whole grain pasta to desired texture and drain
  • Stir in: mushroom soup, tuna, peas, carrots, onion, celery, oregano or dill, garlic and black pepper
  • Mix in: ½ cup breadcrumbs and butter or margarine
  • Pour mixture into casserole dish
  • Top mixture with remaining breadcrumbs
  • Cook until topping starts to brown - about 10 minutes
  • Let sit for 5 - 10 minutes
  • Salt to taste
  • Serve!

1 pkg. (16 oz.) frozen mixed vegetables, thawed, drained
1/2 lb. (8 oz.) VELVEETA, cut into 1/2-inch cubes
2 cans (5 oz. each) tuna in water, drained, flaked
1/2 cup milk

Steps:

  • Heat oven to 350ºF.
  • Cook pasta in large saucepan as directed on package, adding vegetables to the boiling water the last minute. Drain; return to pan.
  • Stir in VELVEETA, tuna and milk. Spoon into 1-1/2-qt. casserole; cover.
  • Bake 15 to 20 min. or until heated through. Stir before serving.

1 ½ cups milk
1 (10.5 ounce) can condensed cream of celery soup
1 (10.5 ounce) can condensed cream of mushroom soup
2 (5 ounce) cans tuna, drained
1 ¼ cups uncooked rice
½ cup chopped celery
⅓ cup diced onion
⅓ cup diced bell pepper
1 tablespoon minced garlic
1 teaspoon dried oregano
1 teaspoon dried parsley
½ teaspoon ground black pepper
¼ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 2-quart casserole dish with cooking spray.

8 ounces whole wheat spaghetti
2 tablespoons extra virgin olive oil
1 small bell pepper, finely diced
1 small onion, finely diced
2 -3 garlic cloves, minced
1 cup mushroom, chopped
1 (14 1/2 ounce) can diced tomatoes (I use the petite diced tomatoes with mild green chilies)
1 (15 ounce) can black beans, drained and rinsed
1 (5 ounce) can tuna, drained
1/2 cup chicken broth
2 tablespoons lemon juice
1/4 teaspoon cayenne pepper (optional)
1/2 teaspoon cumin
1/2 teaspoon basil
1/2 teaspoon coriander
1/2 teaspoon oregano
1/2 teaspoon marjoram
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup parmesan cheese, grated

Steps:

  • Cook spaghetti according to package directions.
  • While pasta is cooking, in a separate skillet heat up the olive oil over medium heat. Add the onion and bell pepper and saute for approximately 5-10 minutes.
  • Add the garlic, mushrooms, tomatoes, beans, tuna, chicken broth, lemon juice, and spices and simmer over medium heat for about 10 minutes, stirring occasionally.
  • When pasta is finished, drain and add to the vegetable mixture.
  • Add Parmesan cheese, stir and serve.
