TRADITIONAL PROVENçAL TAPENADE WITH CAPERS, ANCHOVIES, AND TUNA RECIPE

Traditional Provençal Tapenade With Capers, Anchovies, and Tuna Recipe image

Unlike the modern version of tapenade, which features the olive more prominently than the other ingredients, this recipe is based on the original, created by a chef named Meynier at the Marseilles restaurant La Maison Dorée in 1880. It's made with equal parts olive, caper, and briny fish, like anchovies and oil-packed tuna-hence the fact that tapenade takes its name from capers (tapeno in Provençal) and not olives.

Provided by Daniel Gritzer

Categories     Appetizers and Hors d'Oeuvres     Condiments and Sauces     Snacks     Condiment

Number Of Ingredients 8

2 ounces pitted black olives (about 3/4 cup), such as Niçoise or oil-cured olives
2 ounces drained capers (about 1/3 cup)
1 ounce drained oil-packed anchovy fillets (about 8 fillets)
1 ounce drained oil-packed tuna (about 3 tablespoons)
2 loosely packed teaspoons fresh oregano, marjoram, or thyme leaves (optional; see note)
1/2 teaspoon Dijon mustard (optional; see note)
Extra-virgin olive oil, as needed
1 teaspoon Cognac (optional; see note)

Steps:

  • If using a food processor: In the processor work bowl, combine olives, capers, anchovies, and tuna; add herbs and mustard, if using. Process, scraping down the sides, until a finely chopped paste forms. With the processor running, drizzle in just enough olive oil to loosen to a spreadable paste, about 2 tablespoons. Process in Cognac, if using. Serve.
  • If using a mortar and pestle: Roughly chop olives, capers, and anchovies, then add to mortar with tuna. Add herbs and mustard, if using. Tap, crush, and smash with pestle until ingredients have been reduced to a thick paste (a little chunkiness is okay). Using pestle to blend, drizzle in just enough olive oil to form a spreadable paste, about 2 tablespoons. Work in Cognac, if using. Serve.

TUNA NICOISE SANDWICHES

Tuna Nicoise Sandwiches image

Imagine the classic French salad but in a fun, portable sandwich! This specialty of Nice is known as pan bagnat ("bathed bread"). In this version, tuna is tossed in a creamy dressing with Dijon mustard and fresh thyme, then piled onto a demi baguette with some fresh vegetables and olive tapenade. Et voila! It's like you're in the south of France.

Categories     main-dish

Time 20m

Yield 2 servings

Number Of Ingredients 13

2 large eggs
1/4 small red onion, thinly sliced
2 tablespoons mayonnaise
2 teaspoons Dijon mustard
2 teaspoons champagne vinegar
1 teaspoon finely chopped fresh thyme leaves
Kosher salt and freshly ground black pepper
One 6.7-ounce jar tuna fillets packed in olive oil
1 demi baguette (about 6 ounces)
3 tablespoons olive tapenade
1 small vine-ripened tomato, thinly sliced
1/4 English cucumber, thinly sliced
1 cup mixed spring greens

Steps:

  • Bring a small saucepan of water to a boil over high heat. Gently lower the eggs into the boiling water with a slotted spoon. Reduce the heat to medium-high and cook for 10 minutes, until both the whites and yolks are fully set (hard-boiled). Transfer to a large bowl filled with ice water to stop the cooking. Peel the eggs, then thinly slice.
  • Meanwhile, place the red onion in a small bowl and cover with ice water. Soak for 5 to 15 minutes (this will remove some of the sharp, raw onion flavor). Whisk together the mayonnaise, mustard, vinegar, thyme, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl until smooth. Drain all of the oil from the tuna fillets, then break up into bite-size pieces. Fold the tuna into the dressing until evenly coated.
  • Cut the demi baguette in half crosswise, then halve each piece lengthwise to create 2 sandwiches. Spread the tapenade on the inside of the sandwich tops. Layer the tomato, red onion, egg and tuna on each sandwich bottom, dividing evenly. Top with the cucumber and spring greens, then close the sandwiches. Wrap each sandwich in parchment and refrigerate until ready to serve, up to 4 hours. Alternatively, cut each sandwich in half and serve immediately.

TUNA TAPENADE

Tuna Tapenade image

This is a wonderful version of tapenade, the Provençal olive paste. Serve it with croutons or raw vegetables, or use it as a filling for deviled eggs. Mash the hard-cooked yolks with the tapenade and spoon or pipe into the hard-cooked whites.

Provided by Martha Rose Shulman

Time 10m

Yield Makes about 1 1/4 cups

Number Of Ingredients 10

1/4 pound imported black olives, pitted
2 garlic cloves, halved, green shoots removed
1 1/2 tablespoons capers, drained and rinsed thoroughly with cold waterrinsed
2-4 anchovy fillets (optional)
1 teaspoon fresh thyme leaves
1 teaspoon chopped fresh rosemary

1 can olive-oil packed light (not albacore) tuna
Freshly ground pepper

Steps:

  • Make sure that there are no pits mixed in with your olives.

Add the remaining ingredients except the tuna and puree to a smooth paste. Scrape down the sides of the bowl and add the tuna. Process until you have a smooth paste. Add freshly ground pepper to taste. Transfer to a bowl and refrigerate, covered, until ready to use.

  • Cut the ends off of the bread, then cut in half lengthwise. Rip out some of the bread from the top and bottom slices. This will hollow out the bread a little, making more room for the fillings. Keep the ripped out bread pieces for snacks, breadcrumbs, or croutons.
  • Brush both halves of the bread with olive oil, then spread the pieces evenly with olive tapenade.
  • Lay the strips of roasted red pepper in rows on top of the tuna salad. Blot the peppers with a paper towel to get rid of extra moisture, then top with the arugula.
