TUNA EGG SALAD SANDWICH

Tuna Egg Salad Sandwich image

Anything that saves time and yields something as yummy as this egg tuna sandwich recipe is on my always list. All the ingredients melded perfectly, without any one flavor dominating.

Categories     lunch

Time 10m

Number Of Ingredients 9

2 cans Chunk Tuna fish (5 oz each (water-packed, drained))
3 tbsp mayonnaise
3 pieces eggs ((boiled, chopped))
2 tbsp onion ((minced))
1 tbsp lemon juice ((from 1/2 halve of lemon))
2 tbsp pickle relish ((optional))
½ tsp garlic powder
½ tsp adobo seasoning ((or other savory spices))
1 rib celery ([diced small (optional)])

Steps:

  • After opening the tuna, drain it using a mesh strainer to drain the liquid while chopping onions or celery (optional) and then squeeze off the extra liquid using a spoon. Then toss the lemon in first and allow the lemon to penetrate into the drained tuna.
  • Add the mayonnaise, chopped eggs, celery (if using), shallot, pickle relish (if using), the seasoning to the tuna fish.
  • Mix all ingredients to combine, breaking up any large chunks of tuna fish as you go. Add more mayo if you'd like smoother, creamier tuna salad. Taste and add more of any of the ingredients to taste.
  • Serve on bread or croissant with lettuce leaves or store in a covered container in the refrigerator for up to 5 days.
  • If you're feeling indulgent, add some pastrami or bacon (this is optional).

Categories     main-dish

Time 34m

Yield 6 servings

Number Of Ingredients 25

1/2 cup extra-virgin olive oil, divided
1 tablespoon fresh ginger, peeled and sliced
6 cloves garlic
1/4 cup diced shallots
1/2 cup sherry vinegar
1 1/2 cups orange juice
1/4 cup orange-flavored liqueur (recommended: Cointreau)
1/4 cup soy sauce
1 sprig fresh rosemary
1/2 teaspoon salt
1/2 teaspoon pepper
6 (7-ounce) tuna steaks
3 1/2 tablespoons fennel seeds
3 teaspoons coriander seeds
2 tablespoons white peppercorns
3 egg whites
1 teaspoon salt
1/4 cup extra-virgin olive oil
1/4 cup extra-virgin olive oil
3 cups shredded green cabbage
1/2 cup julienned red bell pepper
1/2 cup julienned jicama
1 cup snow peas, cut on bias
1/2 cup thinly sliced carrot
2 tablespoons sesame seeds, toasted

Steps:

  • For vinaigrette, heat 1 tablespoon olive oil in a saucepan over medium heat. Add ginger and cook for 1 minute. Add garlic and shallots and cook for 3 minutes. Pour in the sherry vinegar. Stir to remove any browned bits on the saucepan. Add orange juice, liqueur, soy sauce, and rosemary; cook and stir until mixture has thickened and reduced by half. Remove rosemary sprig and puree mixture in a food processor. Slowly add remaining olive oil in a stream. Season with salt and pepper. Keep warm.
  • Rinse tuna steaks and pat dry. Grind fennel seeds, coriander seeds, and peppercorns. Transfer spices to a flat plate. Beat egg whites until slightly frothy. Season tuna with salt; dip in egg whites and then in spice mixture. Heat 1/4 cup olive oil in a heavy skillet. When smoking hot sear tuna steaks, 2 minutes per side, and set aside.
  • For the vegetables, heat 1/4 cup olive oil in a heavy skillet and add all vegetables to mixture. Cook for about 3 minutes. Vegetables should be coated with oil and still crisp. Toss in sesame seeds.
  • To serve, spoon Gilroy Garlic Vinaigrette onto the center of 6 serving plates, arrange vegetables on the plates, and top with tuna steak. Drizzle with a little more vinaigrette and serve.

ITALIAN-STYLE TUNA SANDWICH

Italian-Style Tuna Sandwich image

Though an American cook (or even a French one) usually adds mayonnaise to the bowl when dressing canned tuna for a sandwich, Italian cooks invariably anoint theirs with olive oil instead. Capers, olives and anchovy often join the festivities; here they are combined with garlic and parsley to make a zesty salsa verde. Choose the best quality Italian or Spanish canned tuna-the extra cost is well worth it. The other essential ingredient is freshly baked bread, like a good crisp baguette or crusty ciabatta roll.

Provided by David Tanis

Categories     dinner, lunch, quick, sandwiches, main course

Time 15m

Yield 4 servings

Number Of Ingredients 15

1 cup Italian parsley leaves, washed and dried
1/2 cup extra-virgin olive oil, plus more as needed
2 garlic cloves, minced
1/4 cup roughly chopped green olives, such as Castelvetrano
3 or 4 anchovy fillets, chopped
1 tablespoon chopped capers
Zest of 1 lemon
Pinch of crushed red pepper
Salt and pepper
1 baguette or 4 ciabatta rolls
Handful of lettuce leaves, arugula or watercress
8 ounces best quality oil packed tuna, drained, in large chunks
4 hard-boiled eggs
Salt and pepper
1 serrano chile, thinly sliced, optional

Steps:

  • Make the salsa verde: Whiz parsley leaves and 1/2 cup oil in a food processor or blender to a pesto-like consistency, then transfer to a small bowl. (Alternatively, chop parsley by hand and combine with oil.) Add garlic, chopped olives, anchovies, capers, lemon zest and red pepper to parsley mixture and stir well. Season with salt if necessary and freshly ground black pepper to taste. Thin with more oil as desired.
  • Cut baguette crosswise into 4 equal pieces, then split each lengthwise with a serrated knife. (If using rolls, split each lengthwise.) For each sandwich, lay bread flat, crust side down. Spread cut sides with 2 tablespoons salsa verde. Put a few lettuce leaves on 1 piece of bread and arrange 2 ounces of tuna over lettuce. Top tuna with 1 egg, quartered. Season egg lightly with salt and pepper. Add sliced serrano chile, if using. Drizzle with a little more salsa verde, then press sandwich closed.
