MILD TOMATO SALSA



Mild Tomato Salsa image

I got this salsa recipe from my sister, and my children and I have been making batches of it ever since. We pair pint jars with packages of tortilla chips for zesty Christmas gifts. When the kids give this present to their teachers, they can truthfully say they helped make it. -Pamela Lundstrum, Bird Island, Minnesota

Number Of Ingredients 12

10-1/2 pounds tomatoes (about 35 medium), peeled and quartered
4 medium green peppers, chopped
3 large onions, chopped
2 cans (12 ounces each) tomato paste
1-3/4 cups white vinegar
1/2 cup sugar
1 medium sweet red pepper, chopped
1 celery rib, chopped
15 garlic cloves, minced
4 to 5 jalapeno peppers, seeded and chopped
1/4 cup canning salt
1/4 to 1/2 teaspoon hot pepper sauce

Steps:

  • In a large stockpot, cook tomatoes, uncovered, over medium heat 20 minutes. Drain, reserving 2 cups liquid. Return tomatoes to the pot. , Stir in green peppers, onions, tomato paste, vinegar, sugar, red pepper, celery, garlic, jalapenos, canning salt, hot pepper sauce and reserved tomato liquid. Bring to a boil. Reduce heat; simmer, uncovered, 1 hour, stirring frequently., Ladle hot mixture into 10 hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 20 minutes. Remove jars and cool.

Fresh tomato salsa is excellent with just chips and salsa for an appetizer or a perfect compliment to any Mexican dish. Adjust to personal taste with salt, pepper, and ground cumin. Add 1 additional serrano pepper to make hot salsa, and 2 serrano peppers for 'fire' salsa.

4 ripe tomatoes, chopped
4 cloves garlic, minced
1 serrano pepper, seeded and chopped
1 jalapeno pepper, seeded and chopped
¾ white onion, finely chopped
¼ green bell pepper, finely chopped
2 tablespoons chopped fresh cilantro
1 tablespoon ground cumin, or to taste
2 ½ teaspoons lemon juice
2 teaspoons salt, or to taste
1 teaspoon ground black pepper, or to taste

Steps:

  • Stir tomatoes, garlic, serrano pepper, jalapeno pepper, white onion, green bell pepper, cilantro, cumin, lemon juice, salt, and black pepper together in a bowl.

This quick-and-easy salsa tastes great as an accompaniment to meat dishes as well as with chips. I teach kindergarten and my husband is a county Extension agent. We've lived down here in the Imperial Valley for 30 years. I say "down here" because Holtville is 15 feet below sea level!

3 fresh tomatoes, peeled, seeded and finely chopped
1/2 cup minced fresh cilantro
2 to 3 garlic cloves, minced
1 can (4 ounces) chopped green chilies

1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large bowl, combine all ingredients. Chill before serving.

Chiltepin Hot Salsa Recipe from the Taste of Tucson Cookbook image

Chiltepin salsa is one of the defining elements of Sonoran food because the bushes that produce the chiles grow wild in parts of Southern Arizona and aren't common to other regions. This is an all-purpose salsa that can be used for dipping, for seasoning, and as a taco sauce. A little goes a long way, so if you prefer a milder salsa, cut the amount of chiles down by a half or a third. Chiltepica is a local Tucson company that sells their chiltepin online. This recipe is from the Taste of Tucson cookbook by Jackie Alpers.

1 cup water
3 garlic cloves, peeled
1 (28 ounce) can crushed tomatoes
1/4 cup chopped white onion
1/4 cup white vinegar
1/4 cup cilantro, roughly chopped
2 tablespoons dried Mexican oregano
2 tablespoons olive oil
1 tablespoon dried chiltepin chile
2 teaspoons sea salt

Steps:

  • Put the 1 cup of water and garlic in a blender and puree.
  • Add the tomatoes, onion, vinegar, cilantro, oregano, olive oil, chiles, and salt. Pulse until well combined.

Since I was a Fire Chief in Tucson, I made this recipe for my wife and girls. It was always well liked at Fire Dept. functions. This is NOT a hot and spicy salsa. Now that I am retired, my girls still request it for their parties. Enjoy!

Number Of Ingredients 10

2 (15 1/2 ounce) cans tomatoes, Diced- Do Not Drain
1 (10 1/2 ounce) can rotel, Mild
1 (5 ounce) can green chilies, Chopped
1 large sweet onion, Chopped
3 tomatillos, Chopped
2 fresh tomatoes, Large, Chopped (If in Season)
3 garlic cloves, Chopped
1/2 cup cilantro, Chopped
1 lime, juice of
1/2 teaspoon salt

Steps:

  • Place 3 Tomatillos, 3 cloves of garlic and whole sweet onion in small baking dish. Drizzle Olive Oil, lightly, over above ingredients. Roast 30 minutes at 375 degrees to bring out sweetness. Let cool. Chop and set aside.
  • Place remaining ingredients into a large bowl. Add above ingredients and stir well. Allow flavors to blend overnight. (At least 2 hours). Serve with your favorite chips or dish.
