4 salmon fillets (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon white pepper
2 tablespoons white wine or chicken broth
1 tablespoon butter
1 green onion, finely chopped
1 tablespoon all-purpose flour
1 teaspoon Dijon mustard
1/2 teaspoon dried tarragon
2/3 cup 2% milk

Steps:

  • Place salmon in a greased 2-qt. microwave-safe dish; sprinkle with salt and pepper. Pour wine over top. Cover and microwave on high for 4-6 minutes or until fish flakes easily with a fork. Remove salmon and keep warm., Add butter and onion to the pan juices; cover and microwave on high for 1 minute. Stir in the flour, mustard and tarragon until blended; gradually stir in milk. Cook, uncovered for 1-2 minutes or until thickened; stirring every 30 seconds. Serve with salmon.

4 salmon fillets (, skinless (~180g/6oz each) (Note 1))
1/2 tsp black pepper
1/2 tsp salt
1 tbsp olive oil
15g / 1 tbsp butter (, unsalted)
2 garlic cloves (, finely minced)
1/2 cup dry white wine ((or more chicken stock) (Note 2))
1/2 cup chicken or vegetable stock/broth (, low sodium)
1 cup cream (, heavy/thickened )
1/2 cup parmesan (, finely grated (grate your own, Note 3))
2 tsp tarragon leaves* (, finely chopped)
2 tsp chervil* (, finely chopped)
2 tsp parsley* (, finely chopped, plus more for garnish)

Steps:

  • Season: Pat salmon dry, then sprinkle with salt and pepper.
  • Pan-sear: Heat oil in a large non stick skillet over medium high heat. Add salmon, presentation side down, and cook for 3 minutes until golden brown.
  • Flip: Turn salmon and cook the other side for another 2 minutes, until the internal temperature registers 49°C / 120°F (for medium-rare, recommended) or until cooked to your taste (Note 5).
  • Butter baste: When it's almost cooked, add the butter. Melt, then spoon over the salmon a few times.
  • Rest: Remove salmon onto plate, and cover loosely with foil to keep warm.
  • Sauté garlic: Add garlic and stir for 20 seconds or until light golden.
  • Reduce wine: Add white wine, turn up heat to high. Bring to simmer while stirring base of the pan to dissolve all the golden bits into the sauce. Cook 1 minute or until it most evaporates and the wine-y smell is gone.
  • Thicken cream & stock: Add cream and chicken stock, then simmer on medium heat for 2 - 3 minutes until reduced and slightly thickened.
  • Add parmesan & herbs: Stir through parmesan (this will thicken sauce more), then the herbs. Taste sauce and see if more salt and pepper is needed.
  • Serve: Serve salmon with Creamy Sauce, ensuring there's something on the plate to soak up all that amazing sauce! Mashed Potato rates highly. See above video for list of suggestions (including side salads).

From "20-Minute Cookbook" by Steven Wheeler I have only made this with trout and have thouroughly enjoyed the delicate flavour of the sauce. For those who can't imagine cooked cucumber...give it a try you might be pleasantly surprised.

2 tablespoons butter
4 trout fillets, skinless
salt and pepper
2 green onions, large, white parts only, chopped
1/2 cucumber, peeled, deseeded, cut into short batons
1 teaspoon flour
2/3 cup light cream (I have used milk with success)
1/4 cup dry sherry (optional) or 1/4 cup white wine (optional)
2 tablespoons fresh tarragon, chopped
1 tomatoes, deseeded and finely chopped

Steps:

  • Melt butter in a large frying pan, season fillets and cook for 6 minutes, turning once.
  • Transfer to plate, cover and keep warm.
  • To make the sauce, add the green onions and cucumber to the pan, and cook over a gentle heat, stirring until soft but not coloured.
  • Remove pan from heat and stir in flour.
  • Return to heat and pour in cream and sherry/wine (if using).
  • Simmer to thicken, stirring continuously.
  • Add the chopped tarragon and tomato, and season to taste.
  • Spoon the sauce over the fillets.
  • Serve with buttered new potatoes and green beans.

1 tbsp olive oil
1 tbsp butter
85g/3oz salmon fillet
salt and freshly ground black pepper
150ml/5fl oz double cream
150ml/5fl oz fish stock
2 tbsp chopped fresh tarragon
1 tbsp chopped fresh dill
3 asparagus spears, blanched
1 handful carrot batons, blanched

Steps:

  • For the salmon, heat the olive oil and butter in a pan and season the fish with salt and freshly ground black pepper. Lay the fish skin-side down into the pan and fry for 4-5 minutes, then flip over and cook for a further 3-4 minutes, or until golden-brown all over and cooked to your liking. Set aside on a warm plate.
  • For the sauce, place the cream and fish stock into a pan and bring to a gentle simmer. Reduce the mixture for 4-5 minutes, or until thickened slightly, then stir in the fresh herbs.
  • To serve, place the salmon onto a serving plate and arrange the blanched vegetables alongside. Pour the cream sauce around the edge of the plate.

1 steelhead fillet, skin on
1/2 cup Hellmann's mayonnaise
1/4 cup creole mustard
3 -4 tablespoons tarragon, minced
1 -2 tablespoon fresh lemon juice
fresh ground black pepper
canola oil

Steps:

  • Preheat the oven to 450 degrees.
  • Place a large broiler pan in the oven and let that heat.
  • Lightly oil the skin of the trout.
  • Mix the Mayo, mustard, tarragon, lemon juice and season with pepper.
  • Taste the sauce, I thought it was salty enough and did not add any but you may want a saltier taste.
  • Spread on the meat of the trout.
  • Place the trout on the hot pan and bake for about 10 minutes, or until you like your fish cooked.
  • Serve!

I bought some thick steak fillets the other night and was going to serve them with a peppered sauce and creamed spinach. I still made the creamed spinach as we have not had it in a while and I knew my hubby would like it as it is a favorite of his. I noticed I had some tarragon to use up and new I would not be making anything to use it in over the next few days, so I came up with this sauce, to utilize it. The sauce turned out surprisingly well and we both enjoyed it very much, instead of cooking the onions I was using up in the sauce. I sliced 2 onions thinly and fried them separately and placed them on top of the steak.

4 steak fillets (nice thick cut ones.)
2 onions, sliced thinly
3 tablespoons brandy
1 teaspoon beef stock granules
3 teaspoons french creamy mustard
1/2 teaspoon garlic powder
180 ml double cream
120 ml light cream
2 teaspoons cornflour
1 1/4 teaspoons pepper
1 tablespoon fresh tarragon, chopped finely (I did a generous tablespoon it was not quite 11/2 but a little over 1.)
2 teaspoons lemon juice

Steps:

  • Add sliced onion to a small pan with a little olive oil and cook until onion is soft and browned, can either be kept warm on stove or reheated in a microwave later.
  • Sauce.
  • Add brandy, beef stock and mustard to a pan bring to the boil, whisk to blend mustard.
  • Add garlic and both creams, mix a little water with cornflour, add to sauce stir until mixture boils and thickens, turn down heat.
  • Add pepper, tarragon and juice stir to combine, keep sauce warm on a low heat, on the stove, stirring occasionally to prevent a skin forming over the top.
  • Steaks.
  • Season steaks on both sides with salt and pepper, BBQ, Grill or pan fry until browned and cooked as desired.
  • I like mine medium rare so when I have thick steaks like these, I sear each side for 2 minutes and then place in the oven for 15 minutes at 180°C.
  • To Serve: Top each steak with some onion, pour sauce over and serve with whatever veg and starch you want. I served mine with creamed spinach.

1 lemon
200g half-fat crème fraîche
small pack tarragon , leaves only, chopped
1 garlic clove , crushed to a paste
400g green beans , trimmed and halved
4 salmon fillets
cooked baby new potatoes , to serve

Steps:

  • Zest the lemon and cut into wedges. Mix together the crème fraîche, tarragon, garlic, lemon zest and a squeeze of juice, season to taste and set aside.
  • Bring a large shallow pan of salted water to the bowl and cook the green beans for 3 mins until just done. Remove with a slotted spoon, drain and cool under cold running water before tossing with the crème fraîche mixture.
  • Bring the pan back to the boil, then turn the heat down to a very gentle simmer and slide in the salmon pieces. Poach for 8-10 mins or until cooked to your liking. Remove from the pan and put on kitchen paper before plating up. Serve with the green beans and baby new potatoes.

1 1/2 lbs salmon fillets
salt, to taste
1/4 cup white wine
1/2 teaspoon dried tarragon
4 teaspoons Dijon mustard

  • Preheat oven to 400 degrees.
  • Melt 2 T. of the butter in a roasting pan large enough to hold the fish.
  • Put the fish in the butter and turn to coat. Sprinkle with salt.

2 shallots, finely chopped
