Pineapple, banana and macadamia nuts combine to make a very tropical loaf. This is from "A Hundred Years of Island Cooking", an old cookbook from the Hawaiian Electric Company.

2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 (8 1/4 ounce) can crushed pineapple, including liquid
1 cup mashed banana
1/3 cup orange juice
1/2 cup butter
1 cup sugar
2 eggs
2 cups macadamia nuts, chopped

Steps:

  • Preheat oven to 350°F Grease a 9x5x3-inch loaf pan.
  • Sift flour with baking powder, baking soda and salt.
  • Combine pineapple, including liquid, bananas and orange juice.
  • In large bowl of electric mixer, cream butter and sugar; add eggs, one at a time, beating well after each addition. Add flour alternately with pineapple mixture, mixing only enough to moisten flour. Stir in nuts.
  • Pour into prepared pan; bake for 1 hour and 15 minutes, or until done.

In Hawaii. the Pineapple is a symbol of Hospitality, so this "friendly" banana-pineapple bread with macadamia nuts is just the right thing ;) to serve when yo are having guests over or to take with you to give as a nice house warming gift or as a delicious treat for your hosts. I tasted this at a freind's house and it was delicious - she put rum & kahlua in it and was it scrumptious! :) Delightful. 3 cups all-purpose flour
3/4 teaspoon salt
1 teaspoon baking soda
2 cups granulated sugar
1 teaspoon ground cinnamon
1 cup walnuts or 1 cup toasted coconut flakes
3 eggs, beaten
1 cup vegetable oil or 1 cup canola oil
2 cups mashed ripe bananas (about 4 to 6 medium bananas)
8 ounces crushed pineapple, well drained (canned)
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (180 C).
  • Line bottoms of two (8 x 4 x 2 1/2-inch) loaf pans with parchment paper.
  • Spray parchment paper with cooking spray; set aside.
  • In a large mixing bowl combine the first 5 ingredients (the flour through the cinnamon) and stir with a wire wisk to blend well.
  • Stir in nuts to combine and set aside.
  • In a medium mixing bowl, combine the eggs, oil, mashed bananas, drained crushed pineapple and the vanilla; mix well.
  • Add the wet ingredients to the dry ingredient mixture and mix only enough to moisten the dry ingredients.
  • Spoon the batter into the two prepared loaf pans, dividing equally between the two pans and level tops with a rubber spatula.
  • Bake in preheated 350 degree F (180 C) oven for 60 to 70 minutes, checking for doneness at 60 minutes with a toothpick or cake tester inserted into the center of breads.
  • If toothpick or cake tester comes out with moist crumbs, continue to bake for 5 to 10 more minutes.
  • The breads are done when they spring back when gently touched.
  • Remove to wire racks and let cool in pans for 20 minutes, then invert breads onto wire racks, remove parchment paper and let cool completely.
  • Serve warm or at room temperature.
  • *These loaves keep quite well wraped tightly in plastic wrap or aluminum foil for up to 5 days at room temperature or 3 months in the freezer.
  • Loaves can also be wraped in plastic wrap and kept in the refrigerator, if needed.
  • ++HOW TO TOAST NUTS OR COCONUT:
  • Heat oven to 350°F (180 C).
  • Spread nuts in a single layer on a cookie sheet.
  • Bake for 5 to 10 minutes or until light golden brown to golden brown, stirring occasionally. (The baking time will vary, depending on the type of nut.)
  • Watch them closely to avoid over-browning.
  • ***To toast in the microwave oven, spread nuts in a microwave-safe pan.
  • Microwave on HIGH for 4 to 8 minutes or until light golden brown, stirring frequently.
  • TO TOAST COCONUT FLAKES::
  • ****Heat the oven to 350°F (180 C).
  • Spread coconut flakes evenly on a cookie sheet.
  • Bake for 7 to 8 minutes or until light golden brown.
  • Stir the coconut or shake the pan frequently so it will brown evenly.
  • Watch closely to avoid over-browning.
  • To toast in the microwave oven, spread coconut flakes in a microwave-safe pan.
  • Microwave on HIGH for 4 1/2 to 8 minutes, tossing the coconut with a fork after each minute.
  • To avoid over browning remove toasted nuts or coconut flakes from baking pan immediately after baking or microwaving.

⅔ cup canola oil
⅔ cup crushed pineapple, drained
⅔ cup flaked coconut
¼ cup chopped walnuts
¼ cup chopped macadamia nuts
2 eggs, well beaten
4 teaspoons applesauce
1 ½ teaspoons vanilla extract
1 teaspoon lemon extract
½ teaspoon coconut extract
2 tablespoons butter, at room temperature
¼ cup white sugar
¼ cup chopped walnuts
¼ cup chopped macadamia nuts
1 teaspoon milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Mix flour, 1 1/4 cup white sugar, brown sugar, baking soda, cinnamon, baking powder, and salt in a large bowl. Stir mashed banana, canola oil, pineapple, flaked coconut, 1/4 cup walnuts, 1/4 cup macadamia nuts, eggs, applesauce, vanilla extract, lemon extract, and coconut extract into flour mixture until blended. Pour batter into prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, 70 to 80 minutes. Cool bread in the pan for 10 minutes; remove and transfer to a wire rack to cool, 20 to 30 minutes.
  • Mix butter, 1/4 cup white sugar, 1/4 cup walnuts, 1/4 cup macadamia nuts, and milk together in a bowl. Spread on top of bread once it has been transferred to the wire rack.

1 cup pitted dates, chopped
1/2 cup Kahlua
1 teaspoon grated orange rind
2/3 cup firmly packed brown sugar
2 tablespoons margarine
1 large egg

Steps:

  • Preheat the oven to 350°F.

3/4 cup granulated sugar
1/2 cup unsalted butter, softened
3 very ripe bananas (about 1 1/2 cups smashed)
2 large eggs
2 cups all purpose flour
1 1/2 teaspoons salt
1 teaspoon baking powder
1 teaspoon baking soda
3/4 cup shredded sweetened coconut
1 1/4 cups powdered sugar
1/2 cup Kahlua coffee liqueur

Steps:

  • Preheat the oven to 350 degrees F. Spray a standard 9X5 inch loaf pan with nonstick baking spray. Set aside. Place the granulated sugar and softened butter in the bowl of an electric mixer. Beat on high to cream, until the mixture is light and fluffy. Then scrape the bowl and mix in the bananas and eggs. With the mixer on low, slowly add the flour, salt, baking soda, and baking powder. Then scrape the bowl again and mix in the shredded coconut. Scoop the batter into the loaf pan. Bake for 45-60 minutes, until a wooden skewer inserted deep into the center comes out clean. Allow the banana bread loaf to cool in the pan for 10 minutes. Then flip it out onto a cooling rack set over a piece of wax paper. While the loaf is cooling in the pan, whisk the powdered sugar and Kahlua together until very smooth. Once you've flipped the loaf out of the pan, poke holes in the the top of the loaf with a wooden skewer to let the Kahlua glaze seep down inside. Then pour the glaze over the top of the loaf. You can use the wax paper to pour the drippings back over the loaf for an extra glaze coating, if you like. Allow the glaze to dry before cutting.

1/2 c butter flavor shortening (Crisco)
1 c granulated sugar
1/2 c dark brown sugar; packed
2 large eggs
1 large ripe banana; mashed
8 oz can crushed pineapple with juice
1/3 c Kahlua and Cream or 1/4 c heavy cream and 3 Tbsp Kahlua
2 c all-purpose flour
1/2 tsp baking powder
1 tsp baking soda
2 tsp vanilla extract
1 Tbsp coconut extract
1 c sweetened coconut flakes
1/2 c chopped walnuts
GLAZE
1 c powdered sugar
2 Tbsp orange juice

Steps:

  • 1. Preheat oven to 375^. Grease well bottoms and corners (not sides) of 2 loaf pans (5x8-inches). Set aside.
  • 2. Using an electric mixer, cream shortening and sugars. Add eggs, one at a time beating well after each addition.
  • 3. Add pineapple and juice, and mashed banana, mix well.
  • 4. Next, add the Kahlua and cream; mix well to combine.
  • 5. Add 1 cup of the flour and mix to blend. In the second cup of flour add the baking powder and baking soda, stir to blend slightly. Add to batter; mix to blend well.
  • 6. Mix in the vanilla and coconut extracts; blend.
  • 7. Remove bowl from mixer and fold in the coconut and the nuts until combined.
  • 8. Pour evenly into the prepared pans.
  • 9. Bake in 375^ oven for 25 minutes. Turn pans around.
  • 10. Then turn oven to 350^ and bake for 20 more minutes or until tested done with a wooden toothpick. Let cool in pan for 5 minutes.
  • 11. Then remove by running a table knife around edges and turn oven in your oven mitt hand and tap bottom of loaf out and place on wire rack to cool.
  • 12. If desired, make a drizzle of orange juice and powdered sugar for the top and decorate with maraschino cherry halves.
