Categories     dessert

Time 2h

Yield 4 servings

Number Of Ingredients 18

1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk, plus more if needed
1 egg
1 tablespoon sugar
3 tablespoons small diced papayas
3 tablespoons small diced mango
3 tablespoons small diced pineapple
3 tablespoons small diced quava
Oil for frying
2 whole mango, peeled, seeded, and chopped
Juice of one lemon
2/3 cup water
1/2 sugar
4 quenelle scoops of coconut ice cream (If coconut ice cream is not available, fold toasted coconut, 1 tablespoon Malabu Rum, with softened vanilla ice cream)
Powdered sugar in shaker
2 tablespoons chiffonade mint

Steps:

  • Preheat the fryer. In a mixing bowl, combine the flour, baking powder, salt and sugar together. Beat in the egg and milk, adjusting the amount of milk to make a thick batter. Fold in the small diced fruit. Refrigerate for 1 hour. In a saucepot, combine the chopped mango, lemon juice, water and sugar together. Bring the mixture up to a boil. Reduce to a simmer and cook for 5 minutes or until the fruit is very tender. Pour the mixture into a food processor and puree until smooth. Remove and allow to chill for 30 minutes. In the hot grease, drop a heaping tablespoon of the beignet. Fry 5 to 6 at a time and stir constantly for even browning. Fry the beignets for 2 to 3 minutes, or until golden brown. Remove from the fryer and drain on a paper-lined plate. Powder the beignets with powdered sugar. Spoon the coulis in the center of the plate. Place the quenelle of ice cream in the center of the coulis. Arrange the beignets around the ice cream. Garnish with powdered sugar and chiffonade of mint.

Yield 6 Servings

Number Of Ingredients 11

3 small pineapples
1 passion fruit
1 pawpaw
1 banana
Lime or lemon juice
4 oz (100 g) cranberries or raspberries
Note: You can substitute other fruits for your own custom recipe.
Mango Sauce:
2 ripe mangoes
2 tbsp sugar substitute
2 tbsp (30 ml) rum

Steps:

  • 1. Cut each pineapple in half lengthwise. (Leave the green tops on.) Using a serrated-edged knife, cut out the flesh, leaving a thin border all round. 2. Cut the flesh into small pieces. Discard any woody central core. Place it in a bowl with a lid. 3. Cut the passion fruit in half. Scoop the seeds into the bowl. 4. Peel and dice the pawpaw. Discard the black seeds. Add it to the bowl. 5. Cut the banana into l/2 in (1 cm) chunks. Toss in a little lime or lemon juice. Add to the bowl with the grapes. Toss gently and cover with the lid. Chill until ready to serve. 6. Peel the skin off the mango. Now cut all the mango flesh off the seed (pits). Add it into a blender or food processor. Add the sugar and rum. Run the machine until smooth. Add lime or lemon juice to taste. Pour into a small container with a lid. 7. To serve, pile the fruits back into the pineapple shells. Place on serving plates. Pour the mango sauce into six dishes. Using a fork, remove a piece of the fruit from the pineapple shell. Dip the fruit in the mango sauce before eating.

1 large mango, peeled, pitted, sliced
2 1/2-pint containers blackberries
1/4 cup sugar
1 vanilla bean, split lengthwise

Steps:

  • Line 9x5x2 3/4-inch metal loaf pan with 2 layers of plastic wrap in each direction, leaving overhang. Sprinkle 1 1/4 cups toasted coconut over bottom of pan. Crepes:
1 cup whole milk
1/2 cup cornstarch
1/4 cup all purpose flour
3 large eggs
3 tablespoons unsalted butter, melted
2 tablespoons sugar
1 tablespoon dark rum
1 teaspoon vanilla extract
1/4 teaspoon coarse kosher salt
Rum butter sauce:
1/2 cup sugar
6 tablespoons (3/4 stick) unsalted butter, room temperature
1/4 teaspoon coarse kosher salt
3 tablespoons dark rum
Tropical fruit:
2 tablespoons (1/4 stick) unsalted butter
1 cup 3/4-inch cubes peeled fresh pineapple
1/2 vanilla bean, split lengthwise
1/4 cup sugar
1/4 teaspoon coarse kosher salt
2 tablespoons fresh lime juice
1 cup 3/4-inch cubes peeled seeded papaya (from about 1 large)
1 cup 3/4-inch cubes peeled pitted mango (from about 1 large)

Steps:

  • For crepes:
  • Combine all ingredients in blender. Blend until smooth. DO AHEAD: Crepe batter can be made 4 hours ahead. Cover and refrigerate. Reblend before using.
  • Line plate with paper towel or parchment paper. Heat 9-inch-diameter nonstick skillet with 7-inch-diameter bottom over medium heat. Add 2 tablespoons crepe batter to skillet; tilt and swirl skillet to spread batter evenly over bottom. Cook until center of crepe is cooked through and edges are lightly browned, about 1 minute. Run spatula around crepe and invert onto prepared paper-towel-lined plate. Repeat with remaining batter, placing paper towels or parchment paper between crepes. DO AHEAD: Can be made 1 day ahead. Cover and refrigerate.
  • For rum butter sauce:
  • Using electric mixer, beat sugar, butter, and salt in medium bowl until fluffy, about 2 minutes. Gradually add rum and beat until well blended. DO AHEAD: Can be made 1 day ahead. Cover and refrigerate.
  • For tropical fruit:
  • Melt butter in large nonstick skillet over medium-high heat. Add pineapple to skillet and scrape in seeds from vanilla bean; add bean. Add sugar and salt; stir until sugar dissolves and pineapple and pan juices are lightly browned, about 4 minutes. Stir in lime juice. Remove from heat. DO AHEAD: Can be made 2 hours ahead. Let stand at room temperature.
  • Preheat oven to 300°F. Place crepe stack (with paper towels between crepes) on rimmed baking sheet. Cover baking sheet with foil; warm crepes in oven until heated through, about 15 minutes. Place rum butter sauce mixture in small saucepan; heat over medium heat until melted and smooth, stirring occasionally. Rewarm tropical fruit mixture over medium heat, stirring occasionally, about 3 minutes. Stir in papaya and mango.
  • Place 1 crepe on plate, browned side down. Spoon 2 teaspoons rum butter sauce over crepe, then fold crepe into quarters. Repeat with 2 more crepes on same plate. Spoon tropical fruit over. Repeat with remaining crepes, rum butter sauce, and tropical fruit, placing 3 crepes on each of 6 plates. Spoon any remaining rum butter sauce over crepes and serve.
