GARLIC CHEDDAR BEER BREAD
Whip up a loaf of this Garlic Cheddar Beer Bread in practically no time - and with NO yeast!

Steps:
- Preheat oven to 350°F and lightly spray the sides of a 9x5" loaf pan. Set aside.
- To a mixing bowl, add flour, sugar, baking powder, salt, and garlic powder and stir to combine. Stir in the shredded cheese. Make a little well in the center of the dry ingredients.
- Pour in the beer and stir until no flour streaks remain.
- Add half of the melted butter to the bottom of prepared loaf pan and tilt the pan around so the butter coats the bottom of the pan. Transfer batter to pan, spreading it out into an even layer.
- Pour remaining half of the melted butter over the top of the batter, brushing it around so it evenly coats the top.
- Bake for 45-50 minutes, until golden brown and a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Whisk together garlic butter topping ingredients (melted butter, parsley and garlic powder) and brush over the top of the loaf when it comes out of the oven.
- Let bread cool in the pan for 5-7 minutes, brush again with any leftover garlic butter topping, then turn out carefully onto a wire rack to finish cooling.

- Stir together yeast, 1/2 cup flour and warm water in a large bowl. Cover and let sit in a warm spot for about 30 minutes.
- Stir beer, remaining flour and salt into the bowl. Mix until all the flour is incorporated and forms a thick sticky dough that pulls away from the sides of the bowl. Cover and let rise in a warm spot for 2 hours, until doubled in size.
- Scrape all the dough from the bowl with a rubber spatula, and place on a well-floured surface. Generously flour the top of the dough and form into a loaf shape.
- Sprinkle a baking sheet with cornmeal. Transfer loaf to the baking sheet and sprinkle the top with flour. Cover loosely with a towel and let rise for 30-40 minutes.
- Preheat the oven to 425 degrees F (220 degrees C).
- Place a small loaf pan of warm water on a lower rack to humidify the oven.
- Slash a long slit in the top of the loaf with a sharp knife or razor. Place the baking sheet on the rack above the pan of warm water in the oven. Bake for 35 minutes, until the loaf is golden brown.
- Transfer to a cooling rack. Let cool completely before slicing and serving.

GARLIC BREAD PIZZAS

- Tip all of the base ingredients into a mixing bowl. Pour over 300ml warm water - not too hot. Stir quite hard with a spoon until the mixture comes together.
- Turn out onto a lightly floured surface and knead 2-3 times until the mixture forms a ball. Divide dough into 8 equalsize pieces. Take 1 piece, leaving the remainder loosely covered with oiled cling film. Lightly flour the surface again and use a rolling pin to roll out dough into a round about 15cm diameter or as thin as you can. Put pizza on a baking sheet.
- Mix together the butter and crushed garlic, then spread a little over the pizza. Tear the mozzarella into thin strips and scatter over. Repeat for the remaining pieces of dough. You should be able to fit 2 pizzas per baking sheet; depending on how many baking sheets you have, you may have to cook in batches.
- Heat oven to 240C/fan 220C/gas 9. Bake pizzas for 12-15 mins until crisp and cooked through. Meanwhile, mix together the remaining ingredients, then season well. When the pizza comes out of the oven, top with the tomato mixture and serve straight away.

BEER BATTER BREAD (ALMOST NO FAT)
I can't remember where I got this recipe, but I have had it for a long time, and the bread is especially good for a quick-bread. I normally just do yeast-breads.

Steps:
- Preheat oven to 375 degF.
- Spray a 9"x5"x3" loaf pan with nonstick cooking spray, and set aside.
- Sift all dry ingredients into a bowl.
- Add the beer all at once, and mix by hand until just combined.
- Transfer the batter to the prepared pan.
- Good Luck!
- This stuff can be real gooey; smooth it out as best you can, and slam the pan down on the counter two or three times to smooth out the batter.
- Bake for 35-45 minutes or until a toothpick inserted into the center comes out clean.
- The recipe also says that the top should be light golden, but do not count on this.
- After cooking, this bread may still look kind of anemic, real pale, kinda raw!
- Especially if you are using a light colored beer!
- BUT, if the toothpick says it's done, it's really done!
- Turn out onto a rack to cool.
- Eat it as soon as it is cool enough to touch, or let it cool to room temperature and wrap to eat a little later, or wrap real good and freeze for up to a month.
- If refrigerated or frozen, bring to room temperature or warm before serving.
- It's great fresh from the oven, and it makes wonderful toast.
- Notes& Comments:.
- *This recipe makes an extremely dense, heavy bread with a crunchy crust.
- It's great!
- I like it as is!
- But, as noted above, it does look a little anemic.
- *You might want to replace up to half of the white flour with whole-wheat flour to darken the loaf.
- Also, a darker beer will make a darker loaf.
- Works great with Guinness!
- *You might also want to experiment with other beers, for different flavors and different degrees of richness.
- Obviously, the only ingredient in this recipe that will change the overall flavor is the beer.
- Enjoy!
- *We have also doubled the recipe, using 1 bottle of Guinness and 1 bottle of Bass, with 4 cups unbleached flour and 2 cup whole wheat flour; obviously this makes 2 loaves.

- Grease bottom and sides of 9x5-inch loaf pan with shortening or cooking spray. In large bowl, mix 2 cups of the flour, the sugar, salt and yeast. Add water, parsley, shortening, rosemary and thyme. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently. Stir in remaining 1 cup flour until completely mixed.

BARBECUE OR OVEN BAKED PIZZA BREAD
Easy to make pizza bread starting with a loaf of French bread or you could also use kaiser rolls or other bakery buns. Great for lunch or dinner, or cut into smaller slices for appetizers. You can bake it in the oven, or cook the hamburger first and make it on the barbecue. You can change the seasonings to taste and add other favorite pizza toppings if you like. Times given are for the oven method. Additional time is required to cook the hamburger for the barbecue method.

- FOR THE OVEN:.
- Cut the loaf of French bread in half lengthwise. Place both halves on a greased baking sheet.
- Combine uncooked beef, tomato paste, sugar, olives, Parmesan cheese, chives, salt, oregano and pepper.
- Spread mixture to the edges of the cut surfaces of the bread.

- Preheat the Troops BBQ Pizza Oven to 400 degrees F with the pizza stone in the oven and a cooling rack on the pizza stone.
- In a mixing bowl, combine all the dry ingredients.
- After combining the dry ingredients, stir in the shredded cheese.
- When Pizza Oven is at 400 degrees, add beer all at once, mixing as little as possible. Batter should be lumpy.
- Transfer batter into a non-stick 9x5x3 inch loaf pan and brush the top with the melted butter.
- Bake in the oven for 45-60 minutes or until an inserted toothpick comes out clean. The bread pan should be placed on top of the cooling rack sitting on the pizza stone. This will allow the heat to circulate completely around the bread pan.
- It will take about 30 minutes for the charcoal to heat the Troops BBQ Pizza Oven to 400 degrees F. Plan this into the time it takes to make the recipe. While the recipe will also work in a conventional oven, you won't have the same smoke flavor that the pizza oven gives you. Add beer right before you place the pan in the oven.
