SLOW-COOKER GEORGIA PULLED PORK BARBECUE

Barbecue is serious business in a lot of Southern families, and Trisha Yearwood's is no exception. Throughout her childhood in Georgia, her father's pulled pork-an all-day project-was a must on the Fourth of July and at other summer get-togethers. "He would slow-cook it on a covered grill and have to keep going back to baste it all day long." Now that Trisha throws the family's annual Fourth of July party, she has figured out a way to adapt her dad's recipe for the slow cooker, so she won't have to keep disappearing to tend to the meat.

Number Of Ingredients 14

2 medium sweet onions, such as Vidalia, quartered
4 teaspoons light brown sugar
2 teaspoons smoked paprika
Salt and freshly ground black pepper
1 4- to 6-pound Boston butt pork roast, bone-in, trimmed of excess fat
1 cup finely chopped onion
2 cups apple cider vinegar
3/4 cup tomato juice
Freshly ground black pepper
1 teaspoon garlic powder
Pinch of cayenne pepper
Dash of hot sauce, such as Tabasco
1 teaspoon sugar
Buns, mustard and coleslaw, for serving

Steps:

  • Prepare the roast: Put the quartered onions in the bottom of a 5- to 6-quart slow cooker. Mix the brown sugar, smoked paprika, 2 teaspoons salt and a pinch of black pepper and rub it all over the pork roast. Add the roast to the slow cooker on top of the onions.
  • Make the sauce: Chop the onion and puree in a blender. You may need to add a drop of water to the blender to help the onions completely puree. Place the pureed onion in a 2-quart saucepan with 1/4 cup water. Bring to a boil, then reduce the heat to medium low. Cook, stirring constantly, until the water has almost evaporated, about 5 minutes. Add the vinegar, tomato juice, 1/2 tablespoon black pepper, the garlic powder, cayenne and hot sauce and mix well. Increase the heat to medium high, return to a boil, then stir in the sugar. Remove from the heat.
  • Drizzle 1 cup sauce over the roast in the slow cooker. Continue to cook the remaining sauce over low heat for 30 to 40 minutes, allowing it to reduce by half. Then remove the sauce from the heat, allow it to cool completely and refrigerate for later use.
  • Meanwhile, cook the roast in the slow cooker on low for 8 to 12 hours, checking after 8 hours for tenderness. Remove the meat and onions from the slow cooker. Discard the onions and finely shred the pork, using two forks. Reserve the juices from the slow cooker to add to the meat for desired juiciness. Season with salt and pepper to taste. Serve on buns with a little mustard and coleslaw.

3 pounds boneless pork shoulder, cut into large chunks
3 teaspoons kosher salt
2 teaspoons freshly cracked black pepper
2 teaspoons garlic powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 cup apple juice
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
Chopped fresh parsley, for serving
Dinner rolls, for serving

Steps:

  • Add the pork, salt, pepper, garlic powder, cumin and paprika to a 6-quart slow cooker. Toss to combine, then pour in the apple juice. Cover with the lid and let cook for 8 hours on low, or until the pork is easily shreddable.
  • Remove the pork from the juices to a serving dish and shred with forks or fingers.
  • Add the butter to a small skillet over medium heat and let melt. Whisk in the flour until combined, about 1 minute. Add 1 cup drippings from the slow cooker and whisk until thickened. Taste for seasoning. Drizzle over the pork or transfer to a serving dish. Serve the pork warm with warm gravy and a sprinkle of chopped parsley. Eat with the dinner rolls.

PEACH AND BROWN BUTTER SKILLET PIE

The brown butter is really what makes this skillet pie so inviting. After scooping out a warm piece of pie, be sure to spoon the brown butter sauce over the ice cream.

1 1/2 cups all-purpose flour, plus additional for rolling out the dough
1 tablespoon granulated sugar
1/4 cup (4 tablespoons) cold unsalted butter, cubed
1/4 cup (4 tablespoons) cold vegetable shortening stick, cubed
1/4 cup (4 tablespoons) unsalted butter
3/4 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 tablespoons spiced rum
1 tablespoon honey
3 pounds fresh peaches, each peach cut into 8 slices (about 5 large peaches)
1 tablespoon cornstarch
1 large egg, beaten
2 tablespoons demerara sugar
Vanilla ice cream, for serving

Steps:

  • For the pie dough: Pour 1/4 cup water into a small container with 2 ice cubes.
  • Put the flour in a large mixing bowl. Add the granulated sugar and whisk to combine. Add the butter and shortening to the bowl and use a pastry cutter to work the fats into the flour mixture until pea-size lumps form. Sprinkle the ice water onto the mixture 1 tablespoon at a time, using your hands to pull the dough together, until the dough becomes just sticky enough to form a ball; you may not need all the ice water. Press the dough into a disc and wrap in plastic wrap. Refrigerate the dough to chill for a minimum of 1 hour. This step can be done several days in advance.
  • When ready to bake the pie, pull the dough out of the refrigerator and rest at room temperature for 15 minutes. Sprinkle the counter and rolling pin with additional flour. Preheat the oven to 350 degrees F.
  • For the filling: Set a 10-inch cast-iron skillet over medium-high heat. Add the butter and heat until melted. Cook until the bubbles subside and the butter is light brown and smells like toasted nuts, 5 to 7 minutes. Reduce the heat to medium and sprinkle the brown sugar over the butter. Add the cinnamon and salt and stir to combine. Cook until the sugar is dissolved, about 2 minutes more. Pour in the spiced rum and honey and stir until incorporated. Add the peaches to the sauce and sprinkle with the cornstarch. Carefully stir the peaches to coat in the brown butter sauce. Let cool for 5 minutes.
  • While the filling is cooling, roll the dough into a 12-inch circle that is about 1/8 inch thick. Gently lay the pie dough circle over the peaches, working carefully as the skillet will still be warm. If the dough is hanging over the edge, trim it with kitchen shears. Moving around the rim of the dough circle, tuck the edge of the dough into the skillet. Using a paring knife, vent the top of the pie by cutting a few small slits in the dough.
  • For the topping: Gently brush the dough with the beaten egg and sprinkle evenly with the demerara sugar. Bake until the crust is golden brown and the filling is hot and bubbly, 40 to 45 minutes. Let cool for 5 minutes. Serve warm with vanilla ice cream.

2 cold-brew ice tea bags
2 cups water
1/2 cup freshly squeezed lemon juice
1/2 cup Mint Simple Syrup, recipe follows
8 ounces vodka
Fresh mint leaves, for serving
Lemon slices, for serving
2 cups water
2 cups sugar
1 bunch fresh mint

Steps:

  • Add the tea bags to the water; steep for 10 minutes. Remove and discard the tea bags.
  • In a large pitcher, combine the tea, lemon juice, simple syrup and vodka. Stir until well combined.
  • Serve over ice, garnished with mint leaves and lemon slices.
  • Bring the water and sugar to a boil in a small saucepan; cook about 10 minutes. Add the mint and let steep for 5 minutes. Strain and cool. Use immediately or store, covered, in a refrigerator.

SHREDDED PORK WITH BLACK PEPPER-PEACH GLAZE

3 to 4 pounds boneless pork shoulder
1/4 cup freshly cracked black pepper
1/4 cup packed brown sugar
2 tablespoons kosher salt
2 cups sliced fresh or frozen peaches (about 3 peaches)
1 cup sweet peach tea
Texas toast, for serving, optional

Steps:

  • Position an oven rack in the lowest position and preheat the oven to 300 degrees F.
  • Cut the pork shoulder fat-side up into 4 quarters, making sure each quarter has some of the fat cap. Mix together the pepper, sugar and salt in a small bowl, then rub all over the pork.
  • Put the peaches in the bottom of a large Dutch oven. Rest the pork fat-side up on top of the peaches. Bake until the pork is very tender and shreds easily, 3 1/2 to 4 hours. Transfer to a large bowl and let rest until cool enough to shred, keeping all the juices in the pot. Shred and reserve.
  • While the pork rests, place the pot with the cooking juices over medium-high heat. Once it starts to bubble, pour in the peach tea and use a wooden spoon to scrape up any browned bits from the bottom and sides of the pot. Return to a boil, reduce the heat to medium and let simmer until the sauce is thickened slightly, 2 to 3 minutes. Add the shredded pork back in the pot and toss to combine.
  • Serve the pork with slices of Texas toast if desired.
