3 cups bottled clam juice or low-sodium chicken broth
1 pound red-skinned potatoes, diced
2 carrots, thinly sliced
2 stalks celery, thinly sliced
1/2 white onion, diced
2 cloves garlic, minced
12 sprigs dill, plus chopped leaves for topping
12 sprigs parsley
6 sprigs thyme
2 bay leaves
1 wide strip lemon zest
1 pound salmon fillet (preferably wild), skin removed, cut into 4 pieces
Kosher salt and freshly ground pepper
1/2 cup heavy cream
Chopped fresh chives, for topping

Steps:

  • Put the clam juice in a medium microwave-safe bowl and microwave until very hot, about 5 minutes.
  • Meanwhile, scatter the potatoes, carrots, celery, onion and garlic in a 6-quart slow cooker. Tie the dill, parsley, thyme, bay leaves and lemon zest together with twine and add to the slow cooker. Pour in the hot clam juice; cover and cook on high, 3 1/2 hours.
  • Season the salmon with 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Stir the heavy cream into the vegetables in the slow cooker, then partially submerge the salmon in the liquid. Cover and cook 30 more minutes.
  • Discard the herb bundle; season the chowder with salt and pepper. Serve topped with chives and dill.

  • Cook the vegetables: Melt butter in a heavy-bottomed, large pot over medium heat. Add the onions and cook until softened, about 3 minutes. Add the celery and cook, stirring for 8-10 minutes. Add the potatoes. Add enough water to the pot to just cover the vegetables with water. Bring to a boil, then reduce heat and simmer until potatoes are tender but not too soft, about 10-15 minutes (depending on the size of the dice). Remove from heat.
  • Poaching Liquid: In a second pot, heat the 4 cups of water with a bay leaf and the 1/4 onion until just before boiling. Maintain temperature just below boiling and add the sole and scallops. Cover and cook just until seafood is opaque and tender. Remove fish and and scallops to a bowl, reserving the poaching liquid for your stock. Discard the bay leaf and quartered onion.
  • Soup: Melt the butter in a saucepan over medium heat. Add the flour, stirring to make a smooth paste. Cook for about 1 minute. Gradually whisk in the reserved poaching liquid until your have a smooth mixture. Cook until it begins to thicken. Return the pot with the potatoes to medium heat. Slowly add the the butter/flour/poaching liquid mixture to the pot with the potatoes. Add the fish and scallops. Continue cooking and stirring until chowder thickens. Add the cream and stir until heated through, but do not boil. Season with a pinch of nutmeg and a generous amount of salt and pepper, to taste.

  • Melt the butter in a soup pot over medium heat. Add the onions and a pinch of salt and sautee until softened, about 5 minutes. Add the white wine and raise the heat to high to bring to a full boil. Let boil for 3 minutes.
  • Grate one of the potatoes and cut the remaining 4 potatoes into 1 inch chunks. Add both of them to the onions along with the clam juice, bay leaf, and Old Bay seasoning. The liquid should just cover the potatoes. If it doesn't add a little water or vegetable stock to cover. Bring to a boil over high heat, lower the heat to medium low and simmer until the grated potatoes disintegrate and thicken the broth and the potato chunks are just tender. Do not cook until the large potato pieces are completely soft because they will continue to cook as the fish cooks. While that simmers pour the heavy cream into a small saucepan. Place the saucepan over a medium flame and warm it just until steam rises from the top but do not let it simmer or boil.
  • Stir the cod into the potatoes and pour the heavy cream over the top. Lower the heat under the pot to medium low. Keep it on a low simmer (do not boil!) until the fish is cooked through and potatoes are completely tender. Remove the bay leaf and adjust with salt and pepper to taste. Stir in the fresh dill and let cool to a temperature that is comfortable for eating. This additional standing time improves the flavours as well!
