My family just loves these chewy chocolate and peanutty bars. They're perfect for dessert and snacks. I make them whenever I get a craving for something sweet and special. -Diane Bradley, Sparta, Michigan

1-1/4 cups all-purpose flour
2/3 cup sugar
1/3 cup baking cocoa
1/4 cup packed brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup cold butter
2 large eggs
TOPPING:
1 package (7 ounces) sweetened shredded coconut
1 can (14 ounces) sweetened condensed milk
2 cups semisweet chocolate chips
1/2 cup creamy peanut butter

Steps:

  • In a large bowl, combine the first six ingredients. Cut in butter until crumbly. Beat in eggs. Spread in a greased 13-in. x 9-in. baking pan. , Bake at 350° for 8 minutes. Sprinkle coconut over crust; drizzle with milk. Bake 20-25 minutes longer or until lightly browned. , Meanwhile in a microwave, melt chocolate chips and peanut butter; stir until smooth. Spread over brownies. Cool on wire rack. Cut into bars.

1/2 cup butter (softened)
1/2 cup smooth peanut butter
1/2 cup light brown sugar
1 tablespoon light brown sugar
1/2 cup white sugar
1 tablespoon white sugar
1 large egg (lightly beaten)
1/4 teaspoon vanilla
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2 1/2 cups semi-sweet chocolate chips
1 cup powdered sugar (sifted)
1/2 cup smooth peanut butter
4 tablespoons milk

Steps:

  • Pre-heat oven to 350 degrees.
  • Cream together butter and peanut butter. Add sugars, vanilla and egg. Mix until combined. In a separate bowl, mix flour, salt and baking soda. Add dry ingredients in small amounts to wet ingredients. Once this mixture is combined, pat into a 9 X 13 in pan and bake for about 20 minutes.
  • Sprinkle chocolate chips over mixture in pan while it's still warm. As they melt, spread the chocolate chips evenly onto cookie mixture with a rubber spatula.
  • Cool in refrigerator for 20 minutes. Meanwhile, beat together powdered sugar, remaining peanut butter and milk until the mixture reaches a smooth consistency. Spread the powdered sugar mixture over cooled cookie and chocolate bars in pan. Cut into bars.

1 pouch (1 lb 1.5 oz) Betty Crocker™ peanut butter cookie mix
3 tablespoons vegetable oil
1 tablespoon water
1 egg
1/2 cup butter, softened
1/2 cup creamy peanut butter
2 cups powdered sugar
2 teaspoons milk
1 cup semisweet chocolate chips
1/4 cup butter

Steps:

  • Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
  • In large bowl, stir all Cookie Base ingredients until soft dough forms. Press dough in bottom of pan using floured fingers. Bake 15 to 18 minutes or until golden brown. Cool completely, about 1 hour.
  • In small bowl, beat all Filling ingredients with electric mixer on medium speed until smooth. Spread mixture evenly over cookie base.
  • In microwavable bowl, microwave all Frosting ingredients on High 30 seconds; stir until smooth. Cool 10 minutes; spread over filling. Refrigerate 30 minutes or until set. For bars, cut into 9 rows by 4 rows.

This is the recipe I posted in the Old Mixing Bowl Site; when I was posting my recipe there- not any more...and it is very good- it is from my first cookbook in 1973...I hope you like the recipe as much as my family and friends.

COOKIE LAYER:
1 c brown sugar, firmly packed
2/3 c butter or margarine
1/4 c corn syrup (karo is the best)
1/4 c creamy peanut butter
1 tsp vanilla extract
3 1/2 c quick cooking rolled oats
CANDY BAR LAYER:
2 c semi-sweet chocolate chips
1 c peanut butter chips
2/3 c creamy peanut butter
1/2 c chopped peanuts
TOPPING:
1/2 c semi-sweet chocolate chips
1/2 c peanut butter chips
1/3 c chopped peanuts

Steps:

  • 1. Preheat oven to 375^. Line a 13x9-inch baking dish with foil; spray foil with non-stick butter spray. Set aside.
  • 2. Cookie Layer: In a medium saucepan, stir brown, sugar, butter and corn syrup over medium heat until combined. Remove from heat and stir in the peanut butter and vanilla; stir until smooth. Place oats in a large bowl. Pour the brown sugar mixture over oats; stir well to combine. Press oat mixture onto the bottom of the prepared dish. Bake for 10-12 minutes, until golden. Let this layer cook for about 15 minutes on a wire rack.
  • 3. Candy Bar Layer: In the same saucepan; stir all the chips and peanut butter over low heat until melted and smooth. Sprinkle the chopped peanuts over the oatmeal base. Pour the chocolate mixture over the peanuts; spreading evenly. Topping: Sprinkle all the chips and peanuts evenly over the top; press lightly into the chocolate layer.Chill until firm; cut in pieces.Very rich so cut them small. Enjoy all you peanut butter lovers!

1 ½ cups graham cracker crumbs
7 ounces flaked coconut
14 ounces sweetened condensed milk
12 ounces semisweet chocolate chips
½ cup creamy peanut butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In one 13x9 inch baking dish, melt the butter. Sprinkle the graham cracker crumbs over the melted butter . Top with the coconut, then the sweetened condensed milk and bake for 25 minutes or until golden brown.
  • In a saucepan over low heat melt the chocolate chips and peanut butter together. Stir until creamy and pour over the baked bars. Let cool thoroughly then cut into bars. Garnish with more flaked coconut. Store bars in an airtight container.

1 (20 ounce) box Betty Crocker fudge brownie mix, Dark Chocolate, prepared
1/4 cup water
1/2 cup vegetable oil
2 eggs
1 cup milk, cold
1 (3 1/2 ounce) package instant vanilla flavor pudding and pie filling
1 cup creamy peanut butter
1/2 cup powdered sugar
1 1/2 cups whipped topping, Cool Whip, DO NOT THAW
3 semi-sweet chocolate baking squares, Baker's
1/2 cup peanuts, Planters Dry Roasted, coarsely chopped

Steps:

  • Prepare the brownies as directed on the package (brownie mix, water, oil and eggs) using a 13 x 9-inch pan.
  • Whisk milk and pudding mix 2 minutes while brownies are cooling. Add peanut butter and sugar; mix well. Cover and refrigerate pudding mixture until brownies are completely cooled.
  • Spread pudding mixture over brownies.
  • Microwave whipped topping and chocolate on high for 1 minute, stirring every 30 seconds. Spread over pudding; sprinkle with nuts. Refrigerate 1 hour. Refrigerate leftovers -- yeah right, leftovers!

2 tablespoons butter, softened
3 tablespoons brown sugar
1 tablespoon peanut butter
1/4 teaspoon vanilla extract
1/2 cup all-purpose flour
2/3 cup sweetened condensed milk
1 tablespoon butter
1/4 cup dry roasted salted peanut, chopped
1 teaspoon vanilla extract
2 tablespoons milk chocolate chips
1/4 cup dry roasted salted peanut, chopped

Steps:

  • In a small mixing bowl, cream the butter, brown sugar, peanut butter and vanilla.
  • Gradually add flour; mix well (mixture will be crumbly).
  • Press onto the bottom and 1/2 inch up the sides of an 8-in. x 4-in. x 2-in loaf pan coated with nonstick cooking spray.
  • Bake at 350 degrees for 12-15 minutes or until set and lightly browned.
  • Cool.
  • For filling, in a small saucepan, cook and stir the milk and butter over low heat until mixture comes to a boil and thickens.
  • Remove from the heat; stir in peanuts and vanilla.
  • Spread evenly over crust.
  • Bake at 350 degrees for 15-17 minutes or until set.
  • Immediately sprinkle with chocolate chips; let stand for a few minutes to soften, then spread over filling.
  • Sprinkle with peanuts.
  • Cool completely on a wire rack.
  • Cut into bars.

7 (1 ounce) semisweet baking chocolate squares, divided and chopped
2 cups sugar
4 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
3/4 cup dry roasted peanuts, chopped
1 cup creamy peanut butter
1/2 cup butter, softened
1 cup powdered sugar
8 (1 ounce) semisweet baking chocolate squares
1 tablespoon light corn syrup
1/3 cup dry roasted peanuts, chopped (optional)

Steps:

  • Preheat oven to 350°; line a lightly greased 13 x 9 inch pan with aluminum foil, allowing foil to extend over ends of pan; set aside.
  • Melt 1 cup butter in a saucepan over medium heat; remove pan from heat.
  • Add in 6 ounces chopped chocolate, and let stand 5 minutes; stir until smooth; transfer to a large mixing bowl.
  • Add 2 cups sugar to melted chocolate mixture; beat at medium speed with an electric mixer until blended.
  • Add eggs, 1 at a time, beating just until blended; add vanilla.
  • Add flour; beat on low speed just until blended; stir in 3/4 cup peanuts.
  • Spread batter into prepared pan; bake for 30-34 minutes (wooden pick will not test clean).
  • Remove to a wire rack, and cool completely.
  • Meanwhile, beat peanut butter and 1/2 cup butter in a bowl at medium speed until blended.
  • Add powdered sugar; beat until blended.
  • Spread over cooled brownies.
  • Melt 8 ounces chocolate squares and remaining 1 ounce chopped chocolate in a small glass bowl according to microwave package directions; stir in corn syrup.
  • Spoon dollops of melted chocolate over peanut butter layer; spread gently to cover peanut butter layer.
  • Sprinkle with 1/3 cup peanuts, if desired.
  • Cover and chill 2 hours or until set.
  • Use foil to lift brownies out of pan; peel foil away from sides of uncut brownies; cut into bars.
