Categories     dessert

Time 3h10m

Yield 6 servings

Number Of Ingredients 20

4 extra-large egg whites, at room temperature
Pinch of kosher salt
1 cup sugar
2 teaspoons cornstarch
1 teaspoon white wine vinegar
1/2 teaspoon pure vanilla extract
Sweetened Whipped Cream (recipe follows)
1/2 pint fresh strawberries, hulled and sliced
1/2 pint fresh blueberries
1/2 pint fresh raspberries
Small bunch of red grapes
Triple Raspberry Sauce (recipe follows)
Mint leaves, for garnish
1 cup cold heavy cream
1 tablespoon sugar
1 teaspoon pure vanilla extract
1/2 pint fresh raspberries
1/2 cup sugar
1 cup seedless raspberry jam (12-ounce jar)
1 tablespoon framboise liqueur

Steps:

  • Preheat the oven to 180 degrees F. Place a sheet of parchment paper on a sheet pan. Draw a 9-inch circle on the paper, using a 9-inch plate as a guide, then turn the paper over so the circle is on the reverse side. (This way you won't get a pencil mark on the meringue.)
  • Place the egg whites and salt in the bowl of an electric mixer fitted with the whisk attachment. Beat the egg whites on high speed until firm, about 1 minute. With the mixer still on high, slowly add the sugar and beat until it makes firm, shiny peaks, about 2 minutes.
  • Remove the bowl from the mixer, sift the cornstarch onto the beaten egg whites, add the vinegar and vanilla, and fold in lightly with a rubber spatula. Place about half of the meringue into the circle on the parchment paper and smooth it within the circle, making a disk. Place the remaining meringue in a pastry bag fitted with a star tip and pipe the edge with kisses. If you have any meringue left over, pipe it into the middle of the disk and smooth it with a rubber spatula. Bake for 1 1/2 hours. Turn off the oven, keep the door closed, and allow the meringue to cool completely in the oven, about 1 hour. It will be crisp on the outside and soft inside.
  • Using a large metal spatula, carefully transfer the shell to a flat serving plate or cake stand. Fill the center of the shell with the whipped cream. Combine the strawberries, blueberries, raspberries and grapes in a bowl and toss with about 1/2 cup of raspberry sauce, or enough to coat the fruit lightly. Spoon the fruit carefully into the middle of the Pavlova and garnish with mint leaves. Serve immediately in large scoops with extra raspberry sauce.
  • Whip the cream in the bowl of an electric mixer fitted with a whisk attachment (you can also use a hand mixer). When it starts to thicken, add the sugar and vanilla and continue to beat until firm. Don't overbeat!

  • Place the raspberries, sugar and 1/4 cup water in a small saucepan. Bring to a boil, lower the heat, and simmer for 4 minutes. Pour the cooked raspberries, the jam, and framboise into the bowl of a food processor fitted with the steel blade and process until smooth. Chill.

Time 6h30m

Yield Serves 8 to 10

Number Of Ingredients 16

1 1/4 cups sugar
4 teaspoons cornstarch
5 large egg whites, room temperature (2 yolks reserved for curd)
1 teaspoon fresh lemon juice
1/4 teaspoon kosher salt
12 ounces fresh or frozen cranberries (3 cups)
3/4 cup sugar
2/3 cup fresh orange juice (from 2 large oranges)
1/4 teaspoon kosher salt
6 tablespoons unsalted butter, room temperature
1 large egg, plus 2 large egg yolks
1 1/4 cups heavy cream
3/4 teaspoon pure vanilla paste or extract
1/4 teaspoon orange-blossom water (optional)
2 1/2 cups mixed sweet-citrus supremes, such as clementine; mandarin; navel, Cara Cara, and blood orange; and small ruby-red grapefruit (from 5 to 8 total)
1/2 cup husked cape gooseberries (optional)

Steps:

  • Preheat oven to 250 degrees. Trace a 9-inch circle on a piece of parchment. Transfer, traced-side down, to a baking sheet.
  • Pavlova: Stir together sugar and cornstarch. In the bowl of a mixer, beat egg whites with lemon juice and salt on low speed until frothy. Increase speed to medium-high and gradually add sugar mixture, beating until stiff, glossy peaks form, 10 to 12 minutes. Adhere corners of parchment to sheet with tiny dollops of meringue, then mound rest of meringue in center of circle on parchment. Using a large spoon, spread to edges of circle, leaving a well approximately 5 inches wide and 1 inch deep in center.
  • Bake until crisp and dry on outside but not developing any color, 1 hour, 10 minutes to 1 hour, 20 minutes. Turn oven off (do not open door); let cool in oven until dry and crisp on outside, at least 2 hours and up to 1 day.
  • Curd: Combine cranberries, sugar, orange juice, and salt in a saucepan over medium heat. Simmer until cranberries burst and collapse, about 10 minutes. Remove from heat; stir in butter until melted. Strain mixture through a medium-mesh sieve into a bowl, pressing on solids to remove as much liquid as possible; discard solids. In another bowl, whisk together egg and yolks. Slowly whisk 1 cup of cranberry mixture into egg mixture; return to pot with remaining cranberry mixture and cook over medium-low heat, stirring occasionally, until thickened and beginning to sputter, about 6 minutes. Let cool completely, then press plastic wrap directly on surface and refrigerate in an airtight container until cold, at least 2 hours and up to 5 days.
  • Serving: Whisk cream, vanilla, and orange-blossom water to soft peaks. Fill well of meringue with curd. Dollop cream over curd; top with citrus supremes and gooseberries. Serve immediately.

TRIPLE-CITRUS PAVLOVA

Triple-Citrus Pavlova image

This luscious pavlova is as creamy as it is citrusy, made with softened cream cheese and creamy whipped topping.

Provided by My Food and Family

Categories     Dairy

Time 3h30m

Yield 16 servings

Number Of Ingredients 8

6 egg whites
1/2 tsp. cream of tartar
1-3/4 cups sugar, divided
2 navel oranges
5 clementines
1 grapefruit
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
2 cups thawed COOL WHIP Whipped Topping

Steps:

  • Heat oven to 200ºF.
  • Beat egg whites and cream of tartar in medium bowl with mixer on high speed until soft peaks form. Add 1-1/2 cups sugar, 1 Tbsp. at a time, beating 8 to 10 min. or until stiff peaks form.
  • Cover baking sheet with parchment. Draw 13x9-inch rectangle on parchment; turn over. Spread egg white mixture into rectangle on parchment, using lines as a guide. Bake 2 hours or until edges of meringue are crisp. (Center will still be soft.) Slide meringue and parchment onto wire rack; cool completely.
  • Meanwhile, zest 1 orange. Place colander in bowl. Section zested orange and remaining fruit over colander, placing sectioned fruit in colander and reserving juice in bowl. Whisk cream cheese, 1/4 cup reserved juice and remaining sugar in separate medium bowl until blended. Gently stir in COOL WHIP and 2 Tbsp. zest. Refrigerate until ready to use.
  • Transfer meringue to platter just before serving. Spread with cream cheese mixture to within 1/2 inch of edges; top with fruit.

CITRUS PAVLOVA

Citrus Pavlova image

Provided by Valerie Bertinelli

Categories     dessert

Time 6h40m

Yield 6 to 8 servings

Number Of Ingredients 16

6 large egg yolks, at room temperature
1 cup granulated sugar
1/2 cup fresh orange juice (2 oranges)
1 tablespoon orange zest
4 tablespoons unsalted butter
1 tablespoon cornstarch
1 tablespoon fresh lemon juice (1 lemon)
6 large egg whites, at room temperature
Pinch kosher salt
1 1/4 cups granulated sugar
1 1/2 cups cold heavy cream
1/2 cup confectioners' sugar
1 teaspoon vanilla bean paste
4 clementines, peeled and cut into wheels
2 ruby red grapefruit, cut into wheels
1 lime, zested

Steps:

  • For the orange curd: In a medium saucepot, whisk the egg yolks and granulated sugar together until pale yellow and slightly thickened and the whisk leaves lines behind it. Next, whisk in the orange juice and zest. Set the pot over medium heat and cook, stirring constantly with a rubber spatula, just until the mixture is thick enough to coat the back of a spoon and holds its shape when you drag your finger through it, 8 to 10 minutes.
  • Remove the pot from the heat and stir in the butter until completely combined. Pour the curd into a bowl and let cool to room temperature. If any of the curd got slightly overcooked, put it through a fine-mesh strainer to remove any set egg yolk.
  • Cover the curd with plastic wrap pressed directly to the surface and refrigerate for at least 4 hours. (The curd will hold well for up to 4 days.)
  • For the meringue: Position a rack in the middle of the oven; preheat to 300 degrees F. Line a large rimmed baking sheet with a silicone baking mat.
  • Stir together the cornstarch and lemon juice in a small bowl until the cornstarch completely dissolves. Set aside.
  • Place the egg whites and salt in the bowl of a stand mixer fitted with the whisk attachment. Whip on medium-high speed until the egg whites are frothy. With the machine running, slowly stream in the granulated sugar. Increase the speed to high and whip the egg whites until you see ribbons left in the meringue by the whip attachment. Pour in the cornstarch mixture and whip a few seconds more, until stiff peaks form and the meringue becomes very glossy.
  • Mound the meringue in the middle of the baking mat and spread it into a 10-inch round using a small offset spatula -- the shape needn't be perfect, but make sure to spread the meringue in an even layer.
  • Bake for 10 minutes, then drop the oven temperature down to 200 degrees F. Bake for an additional 45 to 50 minutes. The meringue is done when the top is set and not tacky to the touch, and when a small offset spatula can be slid underneath and come out clean or with very little meringue attached. Turn off the oven, crack the door, and let the meringue sit for an additional 30 minutes.
  • Remove the meringue from the oven; run a large offset spatula around the circumference to release it from the baking mat. Set a serving platter beside the baking sheet and gently slide the meringue onto the platter. Let sit at room temperature until ready to assemble.
  • For the vanilla whipped cream: Combine the cream, confectioners' sugar and vanilla paste in the bowl of a stand mixer fitted with the whip attachment. Beat on high speed until soft peaks form. Refrigerate for up to 30 minutes before serving.
  • To assemble: Spoon the curd into the center of the meringue and spread it in an even layer, leaving a 1-inch border. Spread the whipped cream over the curd. Top decoratively with the clementine and grapefruit wheels. Garnish the entire pavlova with the lime zest and serve immediately.

LEMON BLUEBERRY PAVLOVA

Lemon Blueberry Pavlova image

My favorite way to enjoy lemon meringue is with pavlova. The meringue base cools and dries out slowly, creating a crispy, crunchy crust on the outside which contrasts beautifully with a soft, sticky center. Topped with an intense lemon curd filling, fresh blueberries, and a homemade blueberry sauce, this dessert takes a little bit of time to make but is also simple and easy to pull off!

Provided by Chef John

Time 5h

Yield 6

Number Of Ingredients 17

½ cup unsalted butter
4 large eggs
2 tablespoons lemon zest
1 pinch salt
½ cup white sugar
¼ cup lemon juice
cooking spray
1 tablespoon cornstarch
1 cup white sugar
1 pinch cream of tartar
2 teaspoons lemon juice
¼ teaspoon pure vanilla extract
1 cup blueberries
2 tablespoons white sugar
½ cup cold water
½ cup fresh blueberries, or more to taste
1 sprig fresh mint

Steps:

  • Prepare lemon curd filling: Cut butter into small pieces and set aside.
  • Separate eggs, placing yolks in a heat-proof bowl and whites in glass, metal, or ceramic bowl. Cover egg whites and leave on the counter to come to room temperature for the meringue.
  • Add lemon zest, salt, sugar, and lemon juice to egg yolks. Whisk until thoroughly combined.
  • Add 1 to 2 inches water to a saucepan over low heat; bring to a simmer. Place bowl of filling over the simmering water. Cook, stirring constantly with a spatula, until mixture is very hot to the touch and thick enough to coat the back of a spoon, 10 to 15 minutes.
  • Stir in butter, 3 or 4 pieces at a time, waiting until butter has melted before each addition. Remove from the heat and pour filling into a bowl to cool, about 15 minutes. Lay plastic wrap on top of the filling, pressing down so it doesn't develop a skin, and place in the refrigerator until well chilled, 2 to 3 hours.
  • Preheat the oven to 250 degrees F (120 degrees C). Line a baking sheet with a silicone liner, such as Silpat®. Lightly spray with cooking spray.
  • Begin meringue: Mix cornstarch into sugar and set aside.
  • Add cream of tartar, lemon juice, and vanilla to the reserved egg whites. Whisk with a large whisk until very soft peaks form, about 3 minutes. Whisk in sugar mixture, 2 tablespoons at a time, whisking about 1 minute between each addition, until incorporated. When all sugar mixture has been added, continue to whisk until relatively stiff peaks form and whites are firm enough to hold their shape.
  • Use 2 spoons or a piping bag to transfer whites onto the prepared baking sheet, forming a ring of dollops about 8 or 9 inches across. Fill in the middle with meringue, then go back around the edges adding more meringue to build up the outside edge.
  • Bake in the center of the preheated oven for exactly 1 hour. At 1 hour, turn off the oven and crack the door. Let meringue sit in the oven until its cooled completely, about 1 hour.
  • Meanwhile, prepare blueberry sauce: combine 1 cup blueberries, sugar, and water in a saucepan over medium heat; bring to a simmer. Cook, stirring occasionally, until blueberries collapse and liquid thickens, about 10 minutes.
  • Remove from the heat and pass through a fine mesh strainer. Place in the refrigerator until fully chilled, about 45 minutes.
  • Very carefully transfer cooled meringue to a serving platter using 2 large spatulas if necessary; you may get some cracks but that's okay. Use a spoon to crack the center a bit to make room for the filling.
  • Fill the center with chilled lemon curd filling. Place remaining blueberries over top and drizzle with blueberry sauce. Garnish with mint.
